Pumpkin Chocolate Chip Bread

Sweet and mild pumpkin flavors marry extremely well with smooth fresh melted chocolate embedded in moist bread that breaths with haunting notes of nutmeg. The seasonal flavors and aromas will let your family know that fall has arrived. What better way to warm the heart and soul this this time of the year than breaking delicious pumpkin bread with those you love. Add a cup of your favorite warm beverage (for me it’s coffee) and you are good to go.

Kickoff the baking season is best done in the company of the little ones that get extremely excited about the sweet reward. This recipe is simple and kid friendly. Check out the video before baking to see just how easy this delight is to make.

I prefer homemade pumpkin puree over store bought. It’s so easy to make and tastes oh so much better than the kind out of a can.

Ingredients
  

Dry

  • 1 ½ cups all-purpose flour
  • 2 tbsp pumpkin pie spice seasoning
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt

Wet

  • 1 cup pumpkin puree homemade or canned
  • ¾ cup brown sugar
  • ½ cup oil canola or vegetable
  • 1 tsp vanilla extract
  • 2 eggs

Chocolate Chip

  • 1 cup Chocolate chips semi-sweet
  • 1 tbsp all-purpose flour

Instructions
 

  • Preheat the oven to 350°F / 176°C.
  • Spray the cooking flour spray to the loaf pan.
  • In a large bowl; combine all the sugar, pumpkin puree and oil, mix. Then add one egg at a time and mix.
  • In a separate bowl, combine all the dry ingredients together and whisk.
  • In a small bowl, mix chocolate chips and 1 tbsp flour (this will prevent the chips sinking to the bottom of the pan).
  • Add the dry ingredients to the wet mixture and mix.
  • Gently fold the coated chocolate chips to the batter.
  • Bake for 55 minutes or until a toothpick placed in the center of the cake comes out clean. 
  • Remove from the oven and rest the bread in the pan for 10-15 minutes before transferring it to a cake rack.

    • Instant Pot (IP)

    Ingredients
      

    • 16 oz large macaroni
    • 1 lb ground beef
    • 4 cups beef broth low- sodium or unsalted
    • 2 cups heavy whipping cream
    • 2 cups cheese
    • 2 tbsp tomato paste
    • 1 tsp garlic
    • 1 tsp onion
    • 1 tsp salt
    • 1 tsp paprika
    • 1 tsp worcestershire
    • ½ tsp black pepper

    Instructions
     

    • Press the saute button on the Instant Pot. Place the ground beef in the IP and cook until brown. Drain all the gease out of the IP.
    • Add the seasonings, tomato paste and worcestershire to the IP; mix. Then cancel the saute.
    • Pour beef broth, cream and macaroni in and stir.
    • Pressure cook on high for 3 minutes. Natural release for 5 minutes. Follow the manufactures instructions for quick release.
    • Stir the macaroni and beef. Add ½ cup of the cheese at a time and mix.

    Serve and Enjoy!

      Recommended vegetables: Red and orange bell pepper, red onion, bella mushrooms, cherry tomatoes, zucchini.

      Season generously with olive oil, paprika, salt, pepper, dijon mustard, balsamic vinegar and fresh parsley. When grilling turn and baste again with the sauce.

      Grilled Vegetable Kabobs

      Ingredients
        

      • 1 yellow bell pepper cut into squares
      • 1 orange bell pepper cut into squares
      • 1 zucchini sliced
      • ½ red onion cut into squares
      • 1 cup cherry tomatoes
      • 2 cup bella mushrooms

      Baste

      • ½ cup olive oil
      • 2 tbsp fresh parsley finely chop
      • 1 tbsp balsamic vinegar
      • 1 tbsp dijon mustard
      • ½ tsp salt
      • ½ tsp paprika
      • ¼ tsp black pepper

      Instructions
       

      • Soak the wood skewers in water for at least 30 minutes.
      • Thread the vegetables onto the skewers.
      • In a small bowl, whisk all my seasoning ingredients together.
      • Brush a coat of the delicious sauce onto the vegetables.
      • Preheat the grill to 350°-400°F / 176°-204°C.
      • Grill the vegetables for a 10-12 minutes or until vegetables are become tender. Turn occasionally and baste until the sauce is gone.

      Serve immediately and enjoy!

        Saucy Chicken Broccoli Stir-fry

        Deliciously saucy tender juicy Chicken and Broccoli brought together in an effortless stir-fry. The authentic savory flavor of this meal will bring quality to your table. You will not have a difficult time getting the children to eat their broccoli after they take the first bite. I honestly have an extremely picky kid that turns his nose up at most vegetables, yet he cleans his plate every time I serve this dish.

        Serve with your favorite rice and you will have yourself a comforting well balanced dining experience. No preservative makes this a healthier choice than eating out.

        Chicken and Broccoli Stir-fry

        Ingredients
          

        • 2 chicken breasts thinly sliced
        • 4 cups broccoli florets
        • 4 garlic cloves minced
        • ½ onion sliced
        • 1 tsp baking soda
        • 1 tbsp soy sauce
        • 1 tbsp oil

        Sauce

        • 2 tbsp soy sauce
        • 2 tbsp stir-fry sauce (vegan oysters sauce) substitute oyster sauce as a replacement
        • 1 tbsp sesame oil
        • 1 tbsp chinese cooking wine or mirin
        • ½ tsp white pepper

        Cornstarch mix

        • 1 cup cold water
        • 1 tbsp cornstarch

        Instructions
         

        Tenderize the meat

        • Slice the chicken breasts thinly and place them in a bowl.
        • Add baking soda and 1 tbsp of soy sauce, mix. Cover and let them marinate for 15 mintues.

        Sauce

        • In a small bowl, place all the sauce ingredients together and mix. Set aside.

        Broccoli

        • Place the broccoli in a glass/container and add 4 tbsp of water; cover. Cook them in the microwave for 3 minutes.

        Stir-fry

        • In a small bowl, combine cornstarch with water. Set aside.
        • Heat up the wok/pan to medium-high; add oil. Allow oil to heat for 30 seconds, then add the chicken and cook for a couple minutes.
        • Add garlic and onion; cook for a minute.
        • Add the sauce mix, cornstarch mix and broccoli to the wok/pan. Stir and toss until evenly coated. Cook for couple addtional mintues or until the sauce thickens.

        Serve with rice. Enjoy!
