Potato Egg Cups

Potato Egg Cups are not only fabulous tasting but they are cute, convenient and very fun to eat. These gorgeous giggling delights, are also very handy for those times you want something simple and fast. My entire family enjoys these but my nine year old daughter says she absolutely loves them. She often makes introductory level meals on the weekend and has added these to her list of things to try while practicing flying solo. Maybe next weekend we shall see if she remembers.

Clean, peel & grate the potatoes. Squeeze the potatoes to remove excess liquid.

Then place them in a bowl. Add salt, pepper, onion, garlic and combine everything together.

Scoop ¼ cup grated potatoes and place them in the muffin tins. Gently press the potato hash on the bottom and work to form up sides making cups. Place muffin tins in the oven and bake for 25 minutes.

Remove the muffin tin and turn down the heat to 375°F (190°C). Highly recommended: Open the oven to let out the heat out. Add 1 egg to each muffin cup.

Then bake for 10 minutes for runny yolk or 14 minutes for slightly harden yolks. When ready, use a butter knife or fork to gently remove the muffins.

  • Muffin Tin

Ingredients
  

  • 2 lbs yukon potatoes about 6 medium size
  • 12 large eggs cold
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder

Instructions
 

  • Preheat the oven to 425°F (218°C). Coat the muffin tins with olive oil cooking spray.
  • Clean, peel & grate the potatoes. Squeeze the potatoes to remove excess liquid. Then place them in a bowl. Add salt, pepper, onion, garlic and combine everything together.     Ingredients
      

    • 2 ripe avocados
    • ¼ cup red onions minced
    • ¼ cup cilantro minced
    • 1 medium jalapeño deseed & minced
    • ½ tsp salt or more to taste
    • ¼ tsp pepper or more to taste
    • ½ lime juice only

    Instructions
     

    • Peel, remove seed and dice the avocados.
    • Place diced avocados in a bowl or pestle. Use a fork/mortar and mash the avocados until smooth.
    • Add minced jalapeños, minced cilantro, minced red onions, lime juice, salt, pepper and mix well.
    • Season with more salt, pepper, lime juice as needed. Garnish with sliced jalapeños, chopped cilantros & chopped tomatoes.

      • 12 Hawaiian rolls
      • 1 ½ cups monterey jack cheese shredded
      • 1 ½ cups sharp cheddar cheese shredded
      • â…“ cup sun dried tomatoes with oil
      • 2 tbsp melted unsalted butter
      • 1 tsp dried parsley

      Instructions
       

      • Preheat the oven to 350°F.

        Homemade Fresh Strawberry Ice Cream

        Homemade Fresh Strawberry Ice Cream is a smooth and rich creamy dessert that is a wonderful treat any time. My daughter giggles every time she grabs a cone full of this sweet treat. This is an elegant homemade ice cream that has the textures of a fancy style of ice cream that normally costs more than what I am willing to pay for such a treat.         Clean strawberries then remove the stem & dice. Place in a bowl then add sugar.

        Mix until all the strawberries are well coated with sugar. Let rest for 15 minutes. Then blend or puree the strawberries.

        In a large bowl: combine the milk, heavy whipping cream, vanilla extract and pureed strawberries.

        Stir/mix well.

        Follow the ice cream machine instructions for best use, time and churning recommendations. Then turn on the machine and make sure the ice cream is properly churning. Slowly pour the cream mixture into the pre-frozen bowl.

        Once ready, transfer the ice cream to an air tight container with lid. Place in the freezer for at least 6 hours to ensures the proper ice cream texture. Or serve immediately if you like your ice cream soft with a slightly melting consistency.

        • ¾ cup granulated sugar

        • Place the ice cream bowl in the freezer for at least 24 hours prior to use. Freeze times may vary. Follow your ice cream machine manufacture's instructions for best results (normally in the user manual also likely available online).

          • 6 bacons chopped
          • 12 slices Swiss cheese
          • 8 eggs
          • ¼ cup milk preferably whole milk
          • ½ tsp salt
          • ¼ tsp black pepper
          • 2 tbsp melted butter

          Instructions
           

          • Preheat the oven to 350°F / 176°C.
          • Don’t pull the rolls apart. Cut them in half horizontally. Place the top halves aside. Optional: Toast the bottom half in the oven for 3-4 minutes, then remove from the oven.

            Mushroom Swiss Burger Sliders

            Using a pan, turn the heat to medium (optional: add 2 tbsp oil). Add ground beef/chuck and cook for 5-6 minutes or until no longer pink. Optional: drain grease. Add salt, pepper, onion, garlic, paprika, Worcestershire sauce and mix. Remove meat and set aside.

            Using the same pan. Add butter and turn up the heat to medium-high. Add sliced onions and cook for 5-6 minutes.

            Add sliced mushrooms and continue to cook for 5-6 minutes. Add salt, pepper, dried thyme, heavy whipping cream & Worcestershire sauce. Mix and cook for another 2 minutes. Remove the pan from heat source.

            Don’t pull the rolls apart. Cut the loaf in half horizontally. Place the top halves aside. Optional: Toast the bottom half in the oven for 3-4 minutes, then remove from the oven.

            Evenly spread the cooked meat over the bottom half of the rolls.

            Then layer with mushroom mixture.

            Add cheese

            Top halves of remaining rolls. Brush the melted butter over the tops of the rolls. Optional: sprinkle with white sesame seeds. Cover with aluminum foil and bake for 30 minutes or until the cheese is melted.

            Serve & enjoy!

            • 1 tbsp Worcestershire sauce
            • ½ tsp salt
            • ½ tsp black pepper
            • ½ tsp paprika
            • ½ tsp onion powder
            • ½ tsp garlic powder

            Mushroom Mixture

            • 8 oz mushrooms sliced
            • 2 tbsp heavy whipping cream
            • 2 tbsp butter
            • 1 tbsp Worcestershire sauce
            • ½ tsp salt
            • ¼ tsp black pepper
            • ½ tsp dried thyme
            • 1 onion sliced
            • 3 garlic cloves minced

            Butter

            • 2 tbsp melted unsalted butter
            • white sesame seeds

            Instructions
             

            • Preheat the oven to 350°F / 176°C.
            • Don’t pull the rolls apart. Cut the loaf in half horizontally. Place the top halves aside. Optional: Toast the bottom half in the oven for 3-4 minutes, then remove from the oven.
