Air Fryer Cornbread Muffins

  • 1 ½ cup buttermilk room temperature
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 8 tbsp melted unsalted butter
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 large eggs room temperature


  • In a large bowl: combine eggs, buttermilk, melted butter and mix well. Add cornmeal, flour, sugar, salt, baking powder, baking soda and mix well.
  • Place the silicone muffin molds in the air fryer. Scoop ¼ cup of batter in the muffin molds or fill them up ⅔ of the way.
  • Air fry for 330°F for 10-12 minutes or until golden on top. (Depending on the size of your air fryer: repeat this step as necessary).
