Ingredients

  • 8 oz block feta cheese
  • 2 cups cheery tomatoes
  • ¼-⅓ cup olive oil
  • 1 small sweet onion chopped
  • 5 garlic cloves minced
  • 4 sprigs thyme or 1 tsp dried thyme
  • black pepper to taste
  • red pepper flakes to taste

Instructions

  • Preheat the oven to 425°F.
  • Place the block of feta cheese in the center of the baking dish. Next, add everything else to the baking dish. Bake for 20 minutes.
  • Then broil on high for 4-5 minutes or until the feta cheese is slightly burnt (keep on eye on it).
  • Discard thyme stems (not the leaves). Mix everything together until smooth. Season with black pepper & red pepper flakes to taste.

Serve with warm toasted bread or pita chips. Enjoy!
