Marinate
2lbschicken breastsboneless & skinless
2tbsplime juice only
2tspground cumin
1tspground chipotle
1tspsalt
1tsponion powder
1tspgarlic powder
1tspMexican oregano
1tsppaprika
½tspblack pepper
Chipotle Sauce
¾cupmayonnaisefull fat
½cupsour creamor Mexican crema
½cupchopped cilantro
⅓cupchopped onion
½tspsalt
7ozchipotle peppers with adobo sauce
3garlic cloves
Instructions
Clean & pat the chicken breasts dry with paper towel(s). Slice the chicken breast. Transfer the sliced chicken to a bowl.
Add all the marinade seasonings to the bowl with the chicken. Rub the seasoning mix all over the chicken breast. Marinate for 30 minutes.
Heat the skillet or non-stick pan to medium-high heat. Add olive oil and wait for 30-45 seconds or until hot. Cooking in batches: Cook the chicken for 5-8 minutes or until the internal chicken reaches 165°F. Set aside and repeat with the rest of the chicken.
Chipotle Sauce
Place all the ingredients in a food processor or blender. Blend for 60-75 seconds or until smooth. Season with salt if needed.
Assemble
Preheat the non-stick pan or skillet (no oil) to medium-high heat. Wait until it gets pretty hot. Add flour or corn tortilla. Cook for 30-45 seconds then, flip and cook for another 30-45 seconds or until slightly golden brown. Set aside.
Add chopped lettuce, chopped tomatoes, chopped onions on top of the tortilla. You can add anything you like. Top with the cooked chicken. Generously spoon the chipotle sauce over the chicken.
