- 6 chicken thighs bone-in with skin
- 2 lbs yukon gold potatoes cut into cubes
- 4 tbsp (divided) extra virgin olive oil
- 2 tbsp lemon juice
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
- ½ tsp dried oregano
- ⅓ cup feta cheese
Preheat the oven to 425°F.
In a large bowl: add chicken thighs, lemon juice, olive oil (2 tbsp), garlic, onion, black pepper, oregano and mix.
Place the potatoes on the baking sheet. Drizzle olive oil (2 tbsp), salt & pepper (to taste) and mix everything together. Push the potatoes to the sides/edges. Then, place chicken (do not overlap) in the center of the baking sheet.
Bake for 40 minutes or until the internal chicken reaches to 165°F.
Remove baking sheet from the oven. Sprinkle feta cheese on top of the chicken and potatoes. Let rest for 5-6 minutes before serving.
