Chicken in Dijon Mustard Cream Sauce

Ingredients

  • 3 boneless skinless chicken breast about 1½ lbs
  • 2 tbsp extra virgin olive oil
  • 1 tbsp Italian seasoning
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper

Sauce

  • 1 cup chicken broth
  • 1 cup heavy whipping cream
  • 3 tbsp dijon mustard
  • 2 tbsp butter
  • 2 garlic cloves minced

Instructions

  • Clean & pat the chicken breasts dry with paper towel(s).
  • In small bowl: combine salt, pepper, garlic, onion Italian seasoning and mix. Rub the seasoning mix all over the chicken breast.
  • Heat the skillet or non-stick pan to medium heat. Add olive oil and wait for 30-45 seconds or until hot. Sear the chicken for 4 minutes per-side. Remove chicken and set aside.
  • Using the same pan: Turn down the heat to medium. Add butter, broth, garlic, dijon mustard, heavy whipping cream and whisk until smooth. Return chicken and let simmer for 8-10 minutes (flipping the chicken every 2-3 minutes) or until the chicken internal temperature reaches 165°F. Season with salt & pepper as needed.
