- 3 boneless skinless chicken breast about 1½ lbs
- 2 tbsp extra virgin olive oil
- 1 tbsp Italian seasoning
- 1 tsp salt
- 1 tsp garlic powder
- 1 tsp onion powder
- ½ tsp black pepper
Sauce
- 1 cup chicken broth
- 1 cup heavy whipping cream
- 3 tbsp dijon mustard
- 2 tbsp butter
- 2 garlic cloves minced
Clean & pat the chicken breasts dry with paper towel(s).
In small bowl: combine salt, pepper, garlic, onion Italian seasoning and mix. Rub the seasoning mix all over the chicken breast.
Heat the skillet or non-stick pan to medium heat. Add olive oil and wait for 30-45 seconds or until hot. Sear the chicken for 4 minutes per-side. Remove chicken and set aside.
Using the same pan: Turn down the heat to medium. Add butter, broth, garlic, dijon mustard, heavy whipping cream and whisk until smooth. Return chicken and let simmer for 8-10 minutes (flipping the chicken every 2-3 minutes) or until the chicken internal temperature reaches 165°F. Season with salt & pepper as needed.
