Chicken Wings with Homemade Buffalo Sauce

Ingredients

  • 2 lbs chicken wings
  • 2 tbsp olive oil
  • ½ tsp salt

Buffalo Sauce

  • 1 cup cayenne pepper sauce
  • cup canola oil
  • 2 tsp cornstarch
  • 2 tsp water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp granulated sugar
  • 1 large egg yolk

Instructions

  • Preheat the oven or air fryer to 400°F.
  • Clean & pat the chicken wings dry with paper towel. Transfer the chicken to a bowl. Add orange juice and mix. Then coat the wings with salt & oil. Mix well. Transfer the wings to a baking sheet with a rack or air fryer basket. Coat both sides of the wings with cooking spray.
  • Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown. 
    Air Fry:  cook for 22-24 minutes (make sure to flip half way , 11-12 minutes per-side) or until the skin is crispy and golden brown . 

Sauce

  • In a non-stick pan: combine cayenne sauce, oil, garlic, onion, sugar and whisk. Cook on low-medium for 5-7 minutes. Remove the pan from heat source and let rest for 10 minutes.
  • In a small bowl: whisk egg yolk. In a separate small bowl: combine cornstarch, water and whisk until dissolved. Slowly add yolk mixture to the pan and whisk until smooth. I recommend whisking at the same time to prevent clumping. 

Coat sauce with chicken wings. Serve & enjoy!
