Flourless Dark Chocolate Cookies

Ingredients

  • 3 large egg whites
  • 3 cups confectioner sugar/ powdered sugar
  • 1 cup unsweetened cocoa powder
  • 1 cup dark chocolate chips or bittersweet
  • 2 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp ground cinnamon

Instructions

  • Preheat the oven to 350°F (176°C).
  • In a medium size bowl: add egg whites. Use an electric mixer and beat for 2-3 minutes or until stiff peaks form.
  • In a separate bowl: sift powered sugar, unsweetened cocoa, salt and cinnamon. Do not skip this step. This will form a smoother batter and the cookies will be very soft & fluffy. 
  • Add vanilla extract and stiff egg whites. Mix everything together until well combined. This will be a very thick batter like brownies. Add dark chocolate chips and mix with a spatula until well combined.
  • Scoop out 2 tbsp of dough. Use damp hands to roll into a ball. Transfer the cookie balls to the cookie sheet, spacing them 2" apart.
  • Bake for 12-15 minutes or until light glossy with slight cracking on top. Remove from oven and let cool on the cookie sheet for 3 minutes before transferring to a baking rack. Repeat steps with the rest of the dough. You should have 15 cookies.

Place leftover cookies in an airtight container for up to a week. Serve and enjoy!
