Smashed Baby Potatoes

- 2 lbs baby potatoes
- 4 tbsp (divided) extra virgin olive oil
- 1 tsp salt
- ½ tsp black pepper
- ½ tsp onion powder
- ½ tsp garlic powder
Clean potatoes. Bring a pot of water to a boil. Add a pinch of salt to the pot. Add baby potatoes in the pot. Bring the pot to a boil (uncovered). Then turn down the heat to medium and cook for 20 minutes or until the potatoes are tender. Drain potatoes and wait for 15 min to cool.
Preheat the oven to 425°F.
In a small bowl: combine salt, pepper, onion, garlic and mix.
Place potatoes on a baking sheet. Use a flat jar or cup to smash the baby potatoes. Brush 2 tbsp olive oil over the smashed potatoes, then sprinkle the seasoning mixture. Bake for 30 minutes.
Remove the baking sheet from the oven. Flip the smashed potatoes. Brush the other 2 tbsp olive oil and sprinkle seasoning mixture. Bake for another 30 minutes or until crispy.
Serve with your favorite dip.
