Clean potatoes. Bring a pot of water to a boil. Add a pinch of salt to the pot. Add baby potatoes in the pot. Bring the pot to a boil (uncovered). Then turn down the heat to medium and cook for 20 minutes or until the potatoes are tender. Drain potatoes and wait for 15 min to cool.

In a small bowl: combine salt, pepper, onion, garlic and mix. Preheat the oven to 425°F. Place potatoes on a baking sheet. Use a flat jar or cup to smash the baby potatoes. Brush 2 tbsp olive oil over the smashed potatoes, then sprinkle the seasoning mixture. Bake for 30 minutes. 

Remove the baking sheet from the oven. Flip the smashed potatoes. Brush the other 2 tbsp olive oil and sprinkle seasoning mixture.

Bake for another 30 minutes or until crispy.

Serve with your dip.

Ingredients
  

  • 2 lbs baby potatoes
  • 4 tbsp (divided) extra virgin olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp onion powder
  • ½ tsp garlic powder

Instructions
