Lemon Streusel Muffins

Soft, moist rich and absolutely delicious is how best to describe this Lemon Streusel Muffin recipe. Just the right balance of lemon zest, place other nice flavors, and sweetness make for a treat that will put a smile on anyones face. Muffins are wonderful with coffee, as a snack on the go or as a treat anytime of the day. I love baking these as the fresh home centric aroma that only comes from well made baked goods makes this recipe comforting from beginning to end. My family absolutely loves muffins and these Lemon Streusel barely had time to cool before they started magically disappearing.

In a separate bowl: combine flour, sugar, lemon juice and COLD butter. Use a pastry cutter or your hand to mix until it begins to form coarse crumbs. 

In a large bowl: beat the sugar and eggs together.

Then add the half & half or whole milk, oil, vanilla extract & lemon juice.

Lemon zest. Mix well.

Add in the flour, baking powder and salt.

Combine using a mixer mix.

Use an ice cream scooper to measure even portions. As you carefully place each scoop of batter in the muffin tin (should be exactly 12 scoops).

Sprinkle the streusel mixture atop the batter.

Bake for 20-22 minutes or until golden brown.

Let the muffins cool in the tin for about 10 minutes and then transfer them to a baking rack to finish cooling completely.

Serve

Ingredients
  

Muffins

  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup milk or half & half
  • ½ cup cooking oil
  • ¼ cup fresh lemon juice
  • 2 ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ salt
  • 2 lemon zest
  • 2 large eggs room temp

Streusel Topping

  • ¼ cup all-purpose flour
  • 2 tbsp granulated sugar
  • 1 tbsp cold unsalted butter cut into small cubes
  • 1 tsp lemon juice

Instructions
 

  • Preheat the oven to 350°F. Coat the muffin tin with cooking spray or butter (optional: muffin paper liner).
  • In a separate bowl: combine flour, sugar, lemon juice and COLD butter. Use a pastry cutter or your hand to mix until it begins to form coarse crumbs. 
  • In a large bowl: beat the sugar and eggs together. Then add the half & half or whole milk, oil, vanilla extract, lemon juice and lemon zest. Mix well.
  • Once the mixture is uniform, add in the flour, baking powder and salt. Combine using a mixer mix.
  • Use an ice cream scooper to measure even portions. As you carefully place each scoop of batter in the muffin tin (should be exactly 12 scoops). Sprinkle the streusel mixture atop the batter.
  • Bake for 20-22 minutes or until golden brown. Let the muffins cool in the tin for about 10 minutes and then transfer them to a baking rack to finish cooling completely.

    Clean, rinse and pat the corned beef dry with papper towel. Set aside. In a small bowl: combine brown sugar, apple cider vinegar, and dijon mustard. Gently pour the sauce mixture over the corned beef. Lightly sprinkle the package seasoning (that came with the beef) on the sauce.

    Then cover the beef with foil tent. Make sure to cover really well to prevent liquid leaking out.

    Preheat the air fryer to 300°F. Place the beef in the air fryer basket. Cook for 2 hours.

    Then remove beef from the basket.

    Let rest for 30 minutes covered with foil tent.

    Slice and enjoy!

    Tender and moist corned beef.

    Air Fryer Corned Beef

    Ingredients
      

    • 4 lbs corned beef
    • package seasoning
    • ¼ cup brown sugar
    • ¼ cup dijon mustard
    • 1 tbsp apple cider vinegar

    Instructions
     

    • Preheat the air fryer to 300°F.
    • Clean, rinse and pat the corned beef dry with papper towel. Set aside.

    • Place the corned beef on a sheet of aluminum foil. Gently pour the sauce mixture over the corned beef. Lightly sprinkle the package seasoning (that came with the beef) on the sauce. Then cover the beef with foil tent. Make sure to cover really well to prevent liquid leaking out.

      In a large bowl: combine meat, salt, thyme, sage, fennel, nutmeg, pepper, Worcestershire, garlic and mix everything together.

      Add panko breadcrumbs, onions, egg and mix everything together until well combined.

      Let the meat marinate for at least 30 minutes, preferably a 2 hours (the longer the better taste).

      Dust flour on a working surface (this will help prevent the puff sheets from sticking to the working surface). Unfold the puff sheet. Cut the dough into 2 long pieces. You should have 4 total from the 2 sheets. Add ¼ of the meat on the top of the pastry sheet (not in the middle).

      Form the meat into a long log. Gently roll the sheet until the bottom the pastry is underneath. 

      Egg wash: In a small bowl: combine egg, water and whisk. Brush the egg wash on top of the pastries. 

      Cut each long into 8 pieces. 

      There should be 32 pieces total.

      Bake for 25-30 minutes or until golden. Remove from the oven. 

      Best to serve immediately.

      Enjoy with your favorite dip.

      British Sausage Rolls

      Ingredients
        

      • 1 package pastry sheets 2 sheets

      Meat Filler

      • 1 lb ground pork
      • ½ cup plain panko breadcrumbs
      • 1 tbsp Worcestershire sauce
      • 1 tsp salt
      • 1 tsp dried thyme
      • 1 tsp fennel seeds
      • ½ tsp dried sage
      • ½ tsp pepper
      • tsp ground nutmeg
      • ½ onion finely minced
      • 2 garlic cloves finely minced
      • 1 large egg

      Egg Wash

      • 1 egg
      • 1 tbsp water

      Instructions

      • Transfer the pastries to a baking sheet (make sure to use parchment paper). Bake for 25-30 minutes or until golden. Remove from the oven.

        Rinse and drain beans. Discard any debris. Soak dried beans for as least 8 hours or overnight. Drain liquid. Place soaked beans in a dutch oven or pot. Add 8 cups of water. Heat to high and bring it to a boil, then turn down the heat to medium heat. Cook for 1 hour uncovered. Stir occasionally.

        Meanwhile: chop onions, garlic & bell pepper (discard the seeds & core). In a separate pan: add oil and turn up the heat to medium. Add chopped onions & bell peppers. Sauté for 8-10 minutes or until they are wilted.

        Add minced garlic and sauté for 30-45 seconds or until fragrant. Add salt, cumin, oregano, bay leaf and mix everything together. Turn off the heat.

        After 1 hour later: scoop out 1 cup of black beans from the pot. Transfer the beans to the vegetable pan.

        Use a fork to smash the beans.

        Mix everything together.

        Then place the sautéed vegetables in the pot with the rest of the black beans. Add 1 cup of water and stir everything very well.

        Cook for another 1 ½ – 2 hours or until the beans are tender and soft.

        Stir occasionally and add extra water as needed. Most of the water should have evaporated. Turn off the heat.

        Discard bay leaf and season with salt if needed.

        Serve with white rice.
