Ingredients
  

  • 1 cup mayonnaise vegan or regular
  • ¼ cup chopped dill
  • 2 tbsp lemon juice
  • ½ tsp salt

Instructions
 

  • In a bowl: combine all the ingredients together and mix well. Season with salt & pepper to taste.

Serve with chips, vegetables, seafood, sandwiches or salad. Enjoy!

    Can be refrigerated for up to 2 weeks.

      Steak Fajitas

      Delicious tasty street style fajitas drip with natural juices and are fun to eat. This affordable and easy to make selection is perfect on any occasion.  Full of flavor, textures and at a budget price, this is eatfoodlicious meal planning at it finest. You can serve on hard or soft shell, but I prefer mine on toasted corn tortillas to get that authentic flavor of an unmistakably good street taco. The secret to this tasty recipe is the dry seasoning mix and a good hot skillet to to sear in the flavor and produce a ‘handy’ yet tasty traditional steak fajita.

      When the family requests fajitas or street tacos simply watch this video and follow the instructions below and you will have a pan full of delicious food for the table in about an hour (which is well worth the time for the taste).       In a shallow bowl: combine all the marinate ingredients together (expect steak).

      Then coat both sides of the steak.

      Marinate for 1 hour.

      Heat the skillet/pan to medium-high heat. Add oil and wait until it gets hot and smoky. Add marinated steak and cook.

      3 minutes per-side for rare, 4 minutes per-side for medium-rare, 5 minutes per-side for medium & 6 minutes per-side for well done.

      Remove steak and let rest for 5 minutes before slicing.

      Add sliced bell peppers & onions. Sauté for 2-4 minutes or to your liking.

      Serve with tortilla, salsa, guacamole, refried beans, rice, salad and beans. Enjoy!

      Ingredients
        

      • 3 bell peppers red, orange or yellow core removed & sliced
      • 1 onion sliced
      • 2 tbsp oil

      Marinate

      • 1 lb steak
      • 2 tbsp oil
      • 2 tbsp lime juice
      • 2 tsp cumin
      • 2 tsp ground chipotle or ancho
      • 1 tsp garlic powder
      • 1 tsp onion powder
      • 1 tsp salt
      • ½ tsp black pepper
      • ¼ tsp ground cayenne pepper

      Instructions

        Smothered Pork Chops

        Pat the pork chops until dry.

        In a shallow bowl/platter: add flour, onion powder, garlic powder, paprika, salt, pepper, cayenne and mix. Coat both sides of the pork chops with the flour mixture, then gently shake off the excess.

        Reserve 2 tbsp of the flour mixture.

        Heat s skillet or pan to medium-high. Add olive oil and 2 tbsp butter. Wait until butter has melted and is hot. Add pork chops (about 2) and cook 3 minutes per-side or until golden brown. Remove pork chops and set aside. Continue with the rest of the pork chops (may need to add more oil & butter in between).

        In the same pan, add 1 tbsp butter. Add onions and sauté for 8-10 minutes or until caramelized. Add garlic and cook for 1 minute or until fragrant. Add the 2 tbsp flour mixture and mix well.

        Add ¼ cup of chicken broth and mix. Pour in the rest of the chicken broth and mix. Add heavy whipping cream and whisk.

        Return pork chops to the pan and bring to a simmer. Cook for 5 minutes or until the sauce thickens. Make sure to coat the pork chops with gravy sauce and rotate while cooking. If the sauce is too thick add a bit more water or cream.

        Season with salt and pepper to taste.

        Serve with mashed potatoes, salad, rice, noodles or vegetables. Enjoy!

        Ingredients
          

        • 4 pork chops with bone
        • 1 cup low- sodium chicken broth
        • ½ cup heavy whipping cream
        • ½ cup flour
        • 2 tbsp olive oil
        • 3 tbsp (divided) butter
        • 1 tbsp onion powder
        • 1 tbsp garlic powder
        • 1 tsp salt
        • ½ tsp black pepper
        • ½ tsp ground cayenne pepper
        • 1 onion sliced
        • 3 garlic cloves minced

        Instructions
         

        • In a shallow bowl/platter: add flour, onion powder, garlic powder, paprika, salt, pepper, cayenne and mix.

          Chicken Wings with Homemade Buffalo Sauce (Oven & Air Fryer)

          This recipe captures the most important features of a good Buffalo Sauce, the flavor, heat and balance to the acidity. The wing’s crispy skin smothered in a wet Buffalo sauce begs for napkins, cold drinks and good times. Buffalo Chicken Wings are one of my families favorites for getting our grub on. My husband may be a bit biased, but he said he likes this flavor better than the ones we have been eating for years at our local wings place. The kids seem to agree as they work through these almost faster than I can make them.           Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown. 

          Air Fry:  cook for 22-24 minutes (make sure to flip half way , 11-12 minutes per-side) or until the skin is crispy and golden brown .

          In a non-stick pan: combine cayenne sauce, oil, garlic, onion, sugar and whisk. Cook on low-medium for 5-7 minutes. Remove the pan from heat source and let rest for 10 minutes.

          1 large egg yolk

          In a small bowl: whisk egg yolk. In a separate small bowl: combine cornstarch, water and whisk until dissolved.

          Slowly add yolk mixture to the pan and whisk until smooth.

           I recommend whisking at the same time to prevent clumping. 

          Pour sauce over chicken wings.

          Serve immediately & enjoy!

          Chicken Wings with Homemade Buffalo Sauce

          Ingredients
            

          • 2 lbs chicken wings
          • 2 tbsp olive oil
          • ½ tsp salt

          Buffalo Sauce

          • 1 cup cayenne pepper sauce
          • cup canola oil
          • 2 tsp cornstarch
          • 2 tsp water
          • 1 tsp garlic powder
          • 1 tsp onion powder
          • 1 tsp granulated sugar
          • 1 large egg yolk

          Instructions
           

          • Preheat the oven or air fryer to 400°F.
          • Clean & pat the chicken wings dry with paper towel. Transfer the chicken to a bowl. Add orange juice and mix. Then coat the wings with salt & oil. Mix well. Transfer the wings to a baking sheet with a rack or air fryer basket. Coat both sides of the wings with cooking spray.
          • Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown.
