Chicken Wings with Homemade Buffalo Sauce (Oven & Air Fryer)

This recipe captures the most important features of a good Buffalo Sauce, the flavor, heat and balance to the acidity. The wing’s crispy skin smothered in a wet Buffalo sauce begs for napkins, cold drinks and good times. Buffalo Chicken Wings are one of my families favorites for getting our grub on. My husband may be a bit biased, but he said he likes this flavor better than the ones we have been eating for years at our local wings place. The kids seem to agree as they work through these almost faster than I can make them. Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown. 

Air Fry:  cook for 22-24 minutes (make sure to flip half way , 11-12 minutes per-side) or until the skin is crispy and golden brown .

In a non-stick pan: combine cayenne sauce, oil, garlic, onion, sugar and whisk. Cook on low-medium for 5-7 minutes. Remove the pan from heat source and let rest for 10 minutes.

1 large egg yolk

In a small bowl: whisk egg yolk. In a separate small bowl: combine cornstarch, water and whisk until dissolved.

Slowly add yolk mixture to the pan and whisk until smooth.

 I recommend whisking at the same time to prevent clumping. 

Pour sauce over chicken wings.

Serve immediately & enjoy!

Chicken Wings with Homemade Buffalo Sauce

Ingredients
  

  • 2 lbs chicken wings
  • 2 tbsp olive oil
  • ½ tsp salt

Buffalo Sauce

  • 1 cup cayenne pepper sauce
  • cup canola oil
  • 2 tsp cornstarch
  • 2 tsp water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp granulated sugar
  • 1 large egg yolk

Instructions
 

  • Preheat the oven or air fryer to 400°F.
  • Clean & pat the chicken wings dry with paper towel. Transfer the chicken to a bowl. Add orange juice and mix. Then coat the wings with salt & oil. Mix well. Transfer the wings to a baking sheet with a rack or air fryer basket. Coat both sides of the wings with cooking spray.
  • Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown.

    In small bowl: combine cream cheese, lemon juice & sugar.

    Mix well.

    Separate the dough into 8 triangles. Scoop about 1 tbsp of mixture and spread onto the long side of the crescents. Gently fold and roll the dough to the point end.

    Oven: Place the crescents on a baking sheet and bake for 12-15 minutes or until golden brown. 

    Air fryer: Coat the air fryer basket with cooking spray. Place the crescents in the basket. Cook for 6 minutes or until golden brown.

    In a bowl: combine powdered sugar & lemon juice. Mix well until smooth.

    Drizzle the glaze over the lemon cheesecake. Zest some lemon on top of the crescents.

    Serve immediately and enjoy!

    • 1 can pillsbury crescent rolls
    • 4 oz cream cheese room temperature
    • 2 tbsp granulated sugar
    • 1 tbsp lemon juice
    • lemon zest

    Glaze

    • 1 cup powdered sugar
    • 2 tbsp lemon juice

    Instructions
     

    • Preheat the oven or air fryer to 350°F (176°C). 
    • In small bowl: combine cream cheese, lemon juice, sugar and mix well.

      Southwestern Braised Pork Steak

      Pat the pork steak until dry. Season both sides with salt & pepper.

      Heat the dutch oven or pot to medium-high. Add oil and wait until hot. Place 2 pork steaks in the dutch oven or pot and sear for 2-3 minutes or until golden brown. Remove the pork and and set aside. Repeat this step with the other 2 porks.

      Add sliced onions and sauté for 8-10 minutes or until caramelized.

      Add garlic and cook for 2 minute or until fragrant. Add brown sugar, tomato paste, and mix.

      Add stout ale and deglaze the bottom of the pot.

      Add chicken broth, cumin, chipotle and mix.

      Return seared pork then add the thyme to the pot. Cover for with a lid and cook for 1 hour on the middle rack.

      Remove dutch oven from the oven. Place the dutch oven on the stove top. Remove pork and place on a plate (cover). Bring the liquid to a simmer. In a small bowl: combine butter (melted or softened) and flour. Add 1 tbsp of mixture to the liquid and whisk. Continue this step until the mixture has is gone. Continue whisking while adding mixture to prevent clumps/lumps. Simmer for 10-15 minutes or until to your desire gravy consistency. Return pork chop to the pot. Season with salt & pepper to taste.

      Serve & enjoy!

      Ingredients
        

      • 4 pork steak
      • 2 cups low- sodium chicken broth
      • 12 oz Stout Ale Beer
      • 2 tbsp oil
      • 2 tbsp brown sugar
      • 1 tbsp ground cumin
      • 1 tbsp tomato paste
      • 1 tbsp ground chipotle or ancho
      • 1 tsp salt
      • ½ tsp black pepper
      • 6-8 thyme stems or 1 tsp dried thyme
      • 3 garlic cloves minced
      • 2 onions sliced

      Instructions
       

      • Preheat the oven to 325°F.
      • Pat the pork steak until dry. Season both sides with salt & pepper.

        Spanish Rice

        Add rice and sauté for 3-4 minutes or until lightly toasted.

        Add garlic and cook for 1 minute or until fragrant. 

        Add chicken broth, salt, pepper, cumin, paprika, chili, & oregano.

        Add tomato sauce and stir. Then, bring to a simmer.

        Reduce the heat to low and cover with a lid.

        Cook for 15 minutes (rice should be tender, not soggy and liquid should be fully absorbed).

        Remove the pan from the heat source. Let rest with lid on for another 10 minutes. Remove lid and mix.

        Season with salt to taste.

        Garnish with chopped cilantro.

        Enjoy!
