Heat s skillet or pan to medium-high. Add olive oil and 2 tbsp butter. Wait until butter has melted and is hot. Add pork chops (about 2) and cook 3 minutes per-side or until golden brown. Remove pork chops and set aside. Continue with the rest of the pork chops (may need to add more oil & butter in between).
Gravy
In the same pan, add 1 tbsp butter. Add onions and sauté for 8-10 minutes or until caramelized. Add garlic and cook for 1 minute or until fragrant. Add the 2 tbsp flour mixture and mix well. Add ¼ cup of chicken broth and mix. Pour in the rest of the chicken broth and mix. Add heavy whipping cream and whisk.
Return pork chops to the pan and bring to a simmer. Cook for 5 minutes or until the sauce thickens. Make sure to coat the pork chops with gravy sauce and rotate while cooking. If the sauce is too thick add a bit more water or cream. Season with salt and pepper to taste.
