Smothered Pork Chops

Ingredients

  • 4 pork chops with bone
  • 1 cup low- sodium chicken broth
  • ½ cup heavy whipping cream
  • ½ cup flour
  • 2 tbsp olive oil
  • 3 tbsp (divided) butter
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp ground cayenne pepper
  • 1 onion sliced
  • 3 garlic cloves minced

Instructions

  • In a shallow bowl/platter: add flour, onion powder, garlic powder, paprika, salt, pepper, cayenne and mix.
  • Pat the pork chops until dry. Coat both sides of the pork chops with the flour mixture, then gently shake off the excess. Reserve 2 tbsp of the flour mixture.
  • Heat s skillet or pan to medium-high. Add olive oil and 2 tbsp butter. Wait until butter has melted and is hot. Add pork chops (about 2) and cook 3 minutes per-side or until golden brown. Remove pork chops and set aside. Continue with the rest of the pork chops (may need to add more oil & butter in between).

Gravy

  • In the same pan, add 1 tbsp butter. Add onions and sauté for 8-10 minutes or until caramelized. Add garlic and cook for 1 minute or until fragrant. Add the 2 tbsp flour mixture and mix well. Add ¼ cup of chicken broth and mix. Pour in the rest of the chicken broth and mix. Add heavy whipping cream and whisk.
  • Return pork chops to the pan and bring to a simmer. Cook for 5 minutes or until the sauce thickens. Make sure to coat the pork chops with gravy sauce and rotate while cooking. If the sauce is too thick add a bit more water or cream. Season with salt and pepper to taste.

Serve with mashed potatoes, salad, rice, noodles or vegetables. Enjoy!
