Cranberry Bliss Bars

Elegant Cranberry Bliss bars covered with sweet cream cheese and drizzled with buttery white chocolate look almost as delicious as they taste. The first chewy bite will cause you to pause and absorb the rich flavors as you slowly chew this delicious sophisticated cookie. As you may have picked up if you read my posts, I love my coffee and when baking these I am already making designs on quietly appreciating these with a hot cup. For items like this, I always suggest making enough of these to go around if you want to appreciate them during the holiday season as this recipe requires some preliminary activities prior to baking. However, this is a very easy to follow affordable recipe and is fun for the entire family to make and enjoy. Perfect snacks that also would go great at the office party if you need to bring something a bit festive and pretty sophisticated looking. I love my treats and these fancy bars are among my new favorite. I highly recommend you try these at least once to see for yourself just how delicious they really are.

In a large bowl: add butter, brown sugar and beat until smooth.

Then add vanilla extract, eggs, orange juice and mix again.

Place in the flour, baking powder, powdered ginger and salt; then mix well. 

Add in the white chocolate chips, dried cranberries and orange zest over the batter. Then gently fold (use a spatula) the batter until evenly distributed throughout (do not over mix or use a mixer for this step, be gentle). 

Thenpour/transfer the batter into the baking pan.

Bake for 18-20 minutes or until lightly golden brown. Careful not to overcook the cookie. Keep an eye on the edges for best soft & gooey results. Remove from oven and let cool in the pan for ~45-60 minutes.

In a medium size bowl: add cream cheese and beat until smooth. Add powdered sugar, orange juice, orange zest and mix until smooth.

Spread the frosting on top of the cool cookie bar.

Sprinkle the chopped dried cranberries over the icing glaze.

Then drizzle melted white chocolate in a zig zag pattern over the cranberry laced icing glaze (I used a fork to drizzle).

Refrigerate for 1 hour before cutting.

Cut the cookie bar into triangles.

Enjoy! Refrigerate the leftovers, they will keep for up to a week.

Ingredients
  

  • 2 cups all-purpose flour
  • 1 ½ cups light brown sugar
  • 1 cup unsalted butter (2 sticks) softened
  • 1 cup white chocolate chips
  • 1 cup dried cranberries
  • 2 tbsp fresh orange juice or 1 tsp orange extract
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • ½ tsp salt
  • ½ tsp ground ginger
  • 2 large eggs room temperature
  • orange zest about half an orange

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1 ½ cups powdered sugar
  • ½ cup dried cranberries chopped
  • 2 tbsp fresh orange juice
  • orange zest about 1 tsp
  • ½ cup white chocolate melted

Instructions
 

  • Preheat the oven to 350°F. Grease the 9"x 13" pan with butter or baking cooking spray. Optional: place parchment paper on the bottom of the pan (this will help when removing the cookie).
  • In a large bowl: add butter, brown sugar and beat until smooth. Then add vanilla extract, eggs, orange juice and mix again.
  • Place in the flour, baking powder, powdered ginger and salt; then mix well. Being careful to not over mix/whip the batter. For best results, Highly recommend that you sift the dry ingredients before mixing them into the wet ingredients. 
  • Lastly, sprinkle/add in the white chocolate chips, dried cranberries and orange zest over the batter. Then gently fold (use a spatula) the batter until evenly distributed throughout (do not over mix or use a mixer for this step, be gentle). Then pour/transfer the batter into the baking pan.
