Basil Cucumber Salad

Basil flavored Cucumber salad is perfect on a hot summers day when trying to stay light, healthy and cool. This zesty tagnerific crunchy plant based/vegan dish, when served with a chilled glass of water, will make you feel happy, refreshed and satisfied. Served with scratch-made salad dressing that will quench your hunger as well as your thirst; this dish is great as an appetizer or as a large healthy lunch serving. I highly recommend English cucumbers instead of regular cucumbers, they have less seeds and are not as watery. You can substitute cherry tomatoes for regular tomatoes if you wish but the presentation and sweetness of the Cherry Tomatoes makes this meal Foodlicious. Basil Cucumber Salad

Ingredients
  

  • 2 English cucumbers sliced
  • ½ red onion thinly sliced
  • 1 cup cherry tomatoes sliced
  • 1 cup basil chopped/sliced

Dressing

  • â…“ cup olive oil
  • ¼ cup red vinegar may substitute with white wine, apple cider vinegar or sherry vinegar
  • 2 tsp granulated sugar
  • 1 tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 2 garlic clove minced

Instructions
 

  • Mix all the dressing ingredients together in a jar and shake. Set aside
  • Place the sliced cucumbers, tomatoes, onions and basils in a large bowl.
  • Pour the dressing over the vegetables. Gently toss the vegetables and dressing together.

Serve immediately. Enjoy!

This is an easy to prepare salad that may be served with an entrée or as the main dish if trying to cut back on less healthy choices.     Ingredients
      

    • 2 cups cherry heirloom tomatoes sliced
    • 1 cup fresh basil chopped
    • ¼ red onion thinly sliced

    Dressing

    • â…“ cup extra virgin olive oil
    • 2 tbsp balsamic vinegar
    • 1 tbsp Dijon mustard
    • ½ tsp dried oregano
    • ½ tsp dried thyme
    • ¼ tsp black pepper
    • ¼ tsp salt

    Instructions
     

    • In a jar or bowl, put all the dressing ingredients together and mix well. Set aside.
    • Add the tomatoes, basil and red onion to a large serving bowl.
    • Pour the dressing mixture over the salad and mix until well coated.
    • Let the salad stand for 5 minutes to allow for marination prior to serving.

    Homemade Caesar Salad Dressing

    Have you ever tried home-made zesty Caesar salad dressing? Once you have, you’ll never want to go back to the plain tasting bottle from your local store again. The secret is using the right balance of fresh ingredients that will have you cleaning your plate with your favorite fresh bread. This is a very easy recipe and it does not take long to prepare. Add your favorite protein to the salad and you are good to go. I used shrimp, home-made croutons and fresh Parmesan cheese for my version.

    • Mortar and Pestle

    Ingredients
      

    • 6 anchovies’ fillets (from the can)
    • 1 garlic clove finely minced
    • 1 small shallot finely minced
    • 1 lemon juice
    • 3 egg yolks
    • ½ cup olive oil
    • 1 Tbsp Parmesan finely grated
    • 1 tsp Dijon mustard
    • Pinch of salt and pepper 

    Instructions
     

    • Cut the anchovies into pieces and place them in a mortar bowl. Transfer the paste to a medium sized bowl. Then add the rest of the ingredients. Whisk all in medium bowl until the dressing is smooth and thick. Season with salt and pepper (to taste).
