Vietnamese Shaken Beef (Bò Lúc Lắc)

Vietnamese Shaken Beef is rich and delicious. The tender chunks of meat practically melt in your mouth like the butter they were seared in. Served with sweet grape tomatoes on a bed of farm fresh lettuce, this is no side salad. We love to eat well flavored beef in this house and my family will not pass an opportunity to communicate over good food, so we absolutely love this recipe. Feel free to substitute the steak selection to your favorite cut but I do recommend following this recipe for predictable results. Best served fresh, with French bread on the side, to enjoy all the natural juices permeating from the meat all over the salad and plate. When no one is looking, use the bread to clean the plate. It is absolutely a delicious combination that is worth every last savory bite.

Cut the ribeye into 1″ cubes. Place in a bowl. Add soy sauce, dark soy sauce, oyster sauce, fish sauce and mix well.

Cover and let marinate for 1 hour.

In a medium size bowl: add thinly sliced onions, salt, pepper, sugar, rice vinegar then mix everything together. Set aside until ready to eat.

Heat the skillet or pan to high heat. Add butter and wait until it melts. Add ribeye & sauce to the skillet.

Cook for 5-6 minutes until sauce absorbs into the meat. Also, make sure to stir occasionally.

Remove meat from the heat source and transfer to the salad plate.

It’s best when eaten right away. Serve & enjoy!

Ingredients
  

Marinate

  • 1 lb boneless ribeye steak
  • 1 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tsp dark soy sauce

Vinaigrette Onion

  • ½ sweet onion thinly sliced
  • ½ cup rice vinegar
  • ½ tbsp sugar
  • 1 tsp salt
  • ½ tsp black pepper

Salad

  • chopped romaine lettuce
  • tomatoes

2 Tbsp Butter

Instructions

    In a medium size bowl: add tuna, mayonnaise, purple onion, fresh dill, dijon mustard, lemon juice and mix.

    Season with salt & pepper to taste.

    Tuna Salad

    Preheat the air fryer to 370°F. Generously coat both sides of the sliced bread with cooking spray.

    Place the bread in the air fryer and toast for 1-2 minutes or until lightly golden.

    Remove one slice of the bread and set aside.

    Place a slice of cheese on the bread remaining in the air fryer.

    Then add layer of tuna salad

    Then another slice of cheese.

    Cook for 30 seconds or until the top layer of cheese has melted.

    Put the removed slice of bread back in the air fryer atop the melted cheese. (Place the darkest toasted side down)

    Air fry for 7-8 minutes (flip after 5 minutes). 

    Serve immediately and enjoy!

    Air Fryer Tuna Melt

    • Air Fryer

    Ingredients
      

    • 4 slices rye bread ¾" thick
    • 4 slices cheddar cheese
    • cooking spray I used avocado oil spray

    Tuna Salad

    • 2 cans (5 oz each) solid white tuna drained
    • ½ cup mayonnaise
    • ¼ cup chopped purple onion
    • 2 tbsp fresh lemon juice about ½ lemon
    • 1 tbsp fresh dill or 1 tsp
    • 1 tbsp dijon mustard
    • 1 tbsp pickle relish
    • salt & pepper to taste

    Instructions
     

    • In a medium size bowl: add tuna, mayonnaise, purple onion, fresh dill, dijon mustard, pickle relish, lemon juice and mix. Season with salt & pepper to taste.
    • Preheat the air fryer to 370°F. Generously coat both sides of the sliced bread with cooking spray. Place the bread in the air fryer and toast for 1-2 minutes or until lightly golden.

Cook for 30 seconds or until the top layer of cheese has melted.
    • Put the removed slice of bread back in the air fryer atop the melted cheese. (Place the darkest toasted side down) Air fry for 7-8 minutes (flip after 5 minutes).  Watch the video for reference.

    Serve immediately and enjoy!

      Greek Salad with Yogurt Dressing

      Crunchy and refreshing greek salad is one of my personal favorites. Every time I would frequent my favorite Greek restaurant, I would savor the salad and wanted to learn to make it at home. I developed this recipe over the years and believe it is very close to the salads that inspired the attempt. Fresh ingredients and a good feta cheese make a big difference in the quality of the dish. Slightly zesty, with a slightly salty bite every once in a while, as the cucumbers compete with the spring mix and roasted peppers for texture changes while building a gorgeous flavor profile. The yogurt is the result of many attempts, I love how the zest from the lemon juice partners with the feta cheese, herbs and yogurt to form a creamy lightly tart taste that takes this salad to an experience worthy for any occasion as a side or a featured item.

      I first posted this salad as a dish partner in a previous video. I received several request to provide the recipe.       Greek Yogurt Dressing Ingredients

      In a bowl or jar, combine all the ingredients together.

      Mix well.

      Greek Salad Ingredients

      Chopped cucumbers, sliced cherry tomatoes, sliced red onions & cube feta cheese.

      Salad

      Add both olives, red onions, tomatoes.

      Add rest of the salad ingredients.

      Pour the dressing on top of the salad.

      Yogurt Dressing

      • ½ cup plain greek yogurt
      • ½ cup extra virgin oliveo oil
      • 2 tbsp red wine vinegar
      • 2 tbsp fresh lemon juice
      • ¾ tsp dried oregano
      • ½ tsp granulated sugar
      • ¼ tsp dried dill weed
      • 2 garlic cloves grated
      • season with salt & pepper to taste

      Salad

      • 1 spring mix bag
      • 1 english cucumber sliced
      • 3.5 – 4 oz feta cheese cut into cubes
      • 1 cup cherry tomatoes slice in half
      • ½ cup kalamata olives
      • ½ cup pitted green olive 
      • ½ cup roasted red peppers
      • ¼ cup red onion thinly sliced
      • 6-8 peperoncino

      Instructions
       

      Yogurt Dressing

      • In a bowl or jar, combine all the ingredients together and mix well.

      Salad

      • Layer all the salad ingredients into the bowl or serving platter.
      • Pour the dressing on top of the salad.
      • Mix and serve.

      Yogurt Dressing can be kept in an air tight jar and be refrigerator up to a week.

        Ingredients

        Sauce ingredients.

        Gochugaru (Red Chili Flakes) is optional but highly recommended as it makes for a pretty presentation.

        Sauce

        Work the ground pork into fine bites. Cook for 3 minutes or until no longer pink.

        Garlic, sugar, salt & pepper.

        Toasted rice and Gochugaru (Red Chili Flakes).

        Shallots

        Fresh mint leaves.

        Chopped cilantro.

        Add sauce.

        Mix and stir.

        Finshed pork larb.

        Serve with boston/iceberg lettuce or sticky/jasmine rice.

        Equipment

        • Wok or skillet.

        Ingredients
          

        • 1 lb ground pork
        • 1 tbsp uncooked sticky rice or jasmine rice
        • 2 tbsp vegetable or canola oil 
        • 1 cup mint leaves only
        • 1 cup cilantro chop leaves and top stems
        • 1 tsp granulated sugar
        • 3 garlic cloves minced
        • 3 shallots minced
        • 3 Thai peppers optional, chopped
        • 1 tbsp red chili flakes; gochugaru optional
        • Boston lettuce leaves or iceburg
        • salt & pepper to taste

        Sauce

        • 3 tbsp fish sauce +/- adjust to your liking
        • 2 tbsp granulated sugar
        • 1 tbsp water
        • 2-3 limes juice only +/- adjust to your liking

        Instructions
         

        Sauce

        • Combine all the sauce ingredients together and set aside.

        Toast Rice

        • Heat up a wok/skillet to low-medium, add uncooked sticky rice, cook for 5-8 minutes or until golden (toasted) and fragrant. Stir frequently to prevent burning.
        • Transfer the toasted rice to a mortar and grind to a powder using the pedestal. Set aside.

        Cook

        • Heat the wok/skillet to medium-high and add oil.
        • Add ground pork and break up into finely bites. Cook for ~3 minutes or until no longer pink.
        • Add garlic and sugar; stir. Also add salt and pepper to taste. Cook for 1-2 minutes or until the garlic becomes fragrant.
        • Add toasted rice and stir. If using Gochugaru (Red Chili Flakes) add to the skillet/pan and mix. This creates a lovely color that enhaces presentation.
        • Turn off the cooktop/stove.
        • Combine mint leaves, chopped cilantros, shallot and sauce mixture.
        • Toss and stir until all contents are eveningly coated with the sauce.

        Serve with boston lettuce, cooked sticky rice or jasmine rice.

          Ingredients
            

          • 2 english cucumber or 8 mini cucumbers
          • 2 garlic cloves
          • 2 tbsp soy sauce
          • 2 tbsp rice vinegar
          • 1 tsp sugar
          • 1 tsp sasame oil
          • ½ tsp red pepper flakes

          Instructions
           

          Dressing

          • Using a mortar and pestle to grind the garlic.
          • Add all the ingredients except for the cucumber, whisk.

          Smashed Cucumber

          • Wash the cucumber and don't peel the skin. Place one cucumber on a cutting board. Cut off both ends.
          • Using both hands; hold a large knife flat on the first cucumber and smash with the other hand. Continue until the skin begins to break/crack. Slice the cucumber into ½ thick chunks. Repeat steps with second cucumber. Watch the video for reference.

          Salad

          • In a large bowl, place the smashed cucumbers and dressing together, gently toss.

          Serve immediately and enjoy!

            Mediterranean Pasta Salad

            • 1 Rotini Pasta 12 oz
            • 1 English Cucumber sliced
            • 1 Large Tomato sliced
            • ½ Red Onion thinly sliced
            • ½ cup Carrots thinly sliced
            • ½ cup Black Olives sliced
            • 3-4 oz Feta Cheese

            Dressing

            • ½ cup olive oil
            • ¼ cup red wine vinegar
            • ½ lemon juice
            • 1 garlic cloves minced
            • 1 tsp salt
            • ½ tsp black pepper
            • 2 tsp Italian seasoning

            Instructions
             

            • Cook the rotini; follow the box instructions for the pasta cook time.
            • Mix all the salad dressing ingredients together and set aside.
            • In a large bowl, place the pasta and all the vegetables together. Add the salad dressing and mix.
            • Top with feta cheese (optional).
