Ingredients
  

  • 1 pint cherry tomatoes cut in half
  • ¼ cup fresh basil chopped
  • 2 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 2 garlic cloves minced
  • salt & pepper

Instructions
 

  • In a bowl: add all the ingredients together and mix. Season with salt & pepper to taste.
  • Serve immediately or place in refrigerator until ready to eat.

    Quick & Easy Cucumber Kimchi is crunchy fun of flavor and just a bit spicy (turn up the heat if you dare). This is absolutely one of my favorite ways to enjoy Cucumbers. This is a great main entree or side salad. It is perfect for a light lunch with a small bowl of fresh rice. I love to sit and chat while snacking over a shared salad and this one adds some heat to the conversation.

    Quick & Easy Cucumber Kimchi (10 minutes)

    Refreshing Cucumber Kimchi that is so delicious, everyone will love it.

    Ingredients
      

    • 8 cucumber Persian
    • 2 tsp salt
    • 1 carrot peeled & julienne
    • ½ onion thinly sliced
    • 2 garlic cloves minced
    • ½ cup rice vinegar +/- adjust to your liking
    • 1 tbsp sesame oil
    • 2 tbsp ground gochugaru (Korean flakes) +/- adjust to your liking
    • 2 tsp fish sauce +/- adjust to your liking
    • 2 tsp granulated sugar +/- adjust to your liking

    Instructions
     

    • Rinse, clean, and chop the cucumbers into ½" thick. Place in a bowl. Add salt and mix. Let rest for 10 minutes (to help draw out / release excess water).
    • After the 10 minutes are up, rinse the cucumbers with water. Then firmly squeeze the cucumbers to remove any excess liquid. Then place them in a clean bowl.
    • Add the rest of the ingredients to the bowl of crushed cucumbers and mix thoroughly. Let sit for at least 10 minutes before eating. Place leftovers in a air tight jar and keep in the refrigerator.

    Serve & enjoy!

      Light and fresh Cucumber Salad is an interesting and very enjoyable dish. Like most of you I am sure, my cravings are all over the place. I love a good salad and very much recommend this combination for an unlikely yet perfect marriage of textures and flavors that are health and heart wise. I alway s have cucumbers around because we enjoy them in a variety of ways. Cucumbers are very common, easy to grow and go great with a variety of dishes. I enjoyed this salad and recommend you try it at least once.

      Mince the shallot.

      Slice the avocado in half. Remove the core and skin, then dice.

      In a large bowl: combine cucumbers, shallots, avocados, salt, pepper, red pepper flakes, & olive oil.

      Mix everything together.

      • Slice the cucumbers.
      • Slice the avocado in half. Remove the core and skin, then dice.

        Chop the cilantro’s.

Look for juicy berries that have an appealing fragrance. Driscoll berries seem to be good most years.           Ingredients
            

          • 6 oz spinach
          • 1 lb fresh strawberries cut into quarters
          • ¼ red onion thinly sliced
          • ½ cup walnuts
          • ½ cup feta cheese

          Poppy Seed Dressing

          • ½ cup extra virgin olive oil
          • ¼ cup white vinegar
          • 3 tbsp honey
          • 1 tbsp mayonnaise
          • 1 tbsp poppy seeds
          • 1 tsp dijon mustard
          • ½ tsp salt
          • ¼ tsp black pepper

          Instructions
           

          • Place spinach, walnuts, feta cheese, strawberries and onions on a plate or bowl. Serve with poppy seed dressing.

          Poppy Seed Dressing

          • Place all the ingredients in a jar. Put the lid on tight, then shake until smooth.
          • Refrigerate the rest of the dressing.

            Pineapple Strawberry salsa is a naturally sweet mouthwatering dip that won’t last long once the first bite is taken.             Jalapeños, red onions, cilantro, lime juice, & salt.

            Mix well.

            Just before serving (or eating) add strawberries and mix. Season with salt or lime juice to taste. Serve immediately or before the pineapples start to turn “red-ish” from the strawberries.

            • 1 jalapeño deseed & minced
