Ingredients

Sauce ingredients.

Gochugaru (Red Chili Flakes) is optional but highly recommended as it makes for a pretty presentation.

Sauce

Work the ground pork into fine bites. Cook for 3 minutes or until no longer pink.

Garlic, sugar, salt & pepper.

Toasted rice and Gochugaru (Red Chili Flakes).

Shallots

Fresh mint leaves.

Chopped cilantro.

Add sauce.

Mix and stir.

Finshed pork larb.

Serve with boston/iceberg lettuce or sticky/jasmine rice.

Equipment

  • Wok or skillet.

Ingredients
  

  • 1 lb ground pork
  • 1 tbsp uncooked sticky rice or jasmine rice
  • 2 tbsp vegetable or canola oil 
  • 1 cup mint leaves only
  • 1 cup cilantro chop leaves and top stems
  • 1 tsp granulated sugar
  • 3 garlic cloves minced
  • 3 shallots minced
  • 3 Thai peppers optional, chopped
  • 1 tbsp red chili flakes; gochugaru optional
  • Boston lettuce leaves or iceburg
  • salt & pepper to taste

Sauce

  • 3 tbsp fish sauce +/- adjust to your liking
  • 2 tbsp granulated sugar
  • 1 tbsp water
  • 2-3 limes juice only +/- adjust to your liking

Instructions
 

Sauce

  • Combine all the sauce ingredients together and set aside.

Toast Rice

  • Heat up a wok/skillet to low-medium, add uncooked sticky rice, cook for 5-8 minutes or until golden (toasted) and fragrant. Stir frequently to prevent burning.
  • Transfer the toasted rice to a mortar and grind to a powder using the pedestal. Set aside.

Cook

  • Heat the wok/skillet to medium-high and add oil.
  • Add ground pork and break up into finely bites. Cook for ~3 minutes or until no longer pink.
  • Add garlic and sugar; stir. Also add salt and pepper to taste. Cook for 1-2 minutes or until the garlic becomes fragrant.
  • Add toasted rice and stir. If using Gochugaru (Red Chili Flakes) add to the skillet/pan and mix. This creates a lovely color that enhaces presentation.
  • Turn off the cooktop/stove.
  • Combine mint leaves, chopped cilantros, shallot and sauce mixture.
  • Toss and stir until all contents are eveningly coated with the sauce.

Serve with boston lettuce, cooked sticky rice or jasmine rice.

    • Wok or skillet.

    Ingredients
      

    • 6 cup cold cooked rice from refrigerator
    • 5 tbsp vegetable or canola oil  divided
    • 4 eggs
    • 12 oz spam
    • 4 green onion ½ cup
    • 1 onion chopped
    • 3 garlic cloves minced

    Sauce

    • 2 tbsp soy sauce
    • 1 tsp fish sauce
    • 1 tsp sesame oil
    • ½ tsp white pepper

    Instructions
     

    • In a small bowl: combine all the sauce ingredients and mix; set aside.
    • Chop the spam into small â…›" by â…›" cubes (diced size). In a medium size bowl: beat 4 eggs and set aside.
    • Heat the skillet/wok to high and add 3 tbsp oil. Wait for 1- 2 minute for it to get hot. Add eggs and cook until nearly fully done. Remove the eggs and set aside. Add spam and cook for 3-5 minutes or until the edges turn brown. Push the spam to one side of the skillet/wok.
    • Add 2 tbsp oil with garlic and onion; cook for 1 minute or until fragrant. Mix with spam and push to one side of the skillet/wok. Add cold rice and sauce mixture. Mix until the rice is fully coated with the sauce. Add cooked eggs and chop them up in the skillet/wok; mix. Lastly add chopped green onions and mix.

    Serve immediately and enjoy!

      Baked Chicken & Rice

      Ingredients
        

      • 6 chicken thighs skinless
      • 1 ½ cup rice uncooked
      • 1 ½ cup chicken broth low-sodium
      • 1 ¼ cup water
      • 3 tbsp unsalted butter melted
      • 1 onion chopped
      • 2 garlic cloves minced

      Seasoning

      • ½-1 tsp salt adjust to your liking
      • ¼ tsp black pepper
      • ¼ tsp oregano
      • ¼ tsp paprika
      • ¼ tsp thyme

      Instructions
       

      • Preheat the oven to 350°F (176°C).
      • In a 13" x 9" baking dish, coat interior surface with olive oil. Wash/clean and rinse the rice at least twice.
      • Combine rinsed rice, chopped onions, minced garlic, melted butter, chicken broth and water in the baking dish.
      • Remove the skin from the chicken thighs. Place them in a bowl. Sprinkle and rub the seasonings on the chicken. Place the chicken in the bake dish on the rice.
      • Cover with aluminum foil. Bake for 35 minutes. Remove the foil and bake for an additional 20 minutes (uncovered). Remove from oven and cool for 5 minutes prior to serving.

      Top with fresh cilantro and Enjoy!

        Ingredients
          

        • 1 cups rice Jasmine
        • 1 ¼ cup low- sodium chicken broth can be substitute for beef or vegetable broth
        • 1 cup chopped/diced tomatoes
        • 3 tbsp oil
        • ½ tsp salt
        • ½ tsp chili powder
        • ½ tsp oregano
        • ½ tsp cumin
        • ½ tsp spanish paprika
        • ¼-½ tsp black pepper more or less to taste
        • ½ onion chopped
        • 2 garlic minced

        Instructions
         

        • Press the saute button (high) on the pressure cooker.
        • Add oil and rice; stir frequently. Sauté for 5 minutes or until slightly golden.
        • Add onion and garlic; stir frequently. Cook for 1-2 minutes or until the onions look translucent. Turn off the saute button.
        • Add broth and all the seasonings (salt, pepper, paprika, cumin, oregano & chili); mix.
        • Place the chopped/diced tomatoes in the center and do not STIR. Place the lid on.
        • Pressure cook on high for 3 minutes and natural release for 10 minutes. Follow the manufacture instructions for quick release. Remove the lid. Mix the rice and tomatoes until even.
