Fast and ready grab and go tasty breakfast that is simple to make and is deliciously filling. This is an excellent breakfast pre made meal selection that can be enhanced with your preferred topping. My favorite is a nice dollop of peanut butter covered with chocolate morsels. The sweetness of the chocolate gives an instant boost to the flavor and your general outlook on life that is well balanced with the subtle sour notes of the greek yogurt. The filling peanut butter gives the comforting satisfaction of a pregame warm up that will have you and your troops ready to march into another day. Feel free to experiment with the toppings and use whatever you have on hand. I made this last night and used some blueberries I had left over from another dish. The blueberries gave some natural elegance to the meal experience and didn’t leave me full of the bad kind of sugars. But I still love any excuse to work some chocolate into my breakfast when possible. This served cold goes great with a glass of water of my husbands favorite a nice hot cup of coffee.

Overnight Oats
Ingredients
- ½ cup rolled oats
- ½ cup milk dairy, almond, oat, cashew or coconut
- ¼ cup plain greek yogurt optional
- 1 tbsp maple syrup
- 1 tsp chia seeds
Instructions
- In a jar/bowl add oats, milk, yogurt, maple syrup, chia seeds and mix. Cover with a lid and refrigerate overnight (~6-8 hours).
- Suggested toppings: peanut butter & chocolate chips, fresh berries, pecans & dried cranberries, mixed nuts, or fresh fruits.
Refrigerate up to 4 days.
