Buttermilk Fried Chicken Tenders (video)

Buttermilk Fried Chicken Tenders are perfect when craving for some down home scratch-made comfort food. Almost everything is good fried but this recipe will have you making crunchy, juicy, authentic flavored chicken and you will get more bang for your buck when cooking at home. If you make extra and have left-overs, you can change up how you serve them. These are versatile and may be consumed multiple ways like in wraps, on a salad, in a sandwiched, as a finger food, or with sides to make an entree. Buttermilk Fried Chicken Tenders

Ingredients
  

  • 3 chicken breasts sliced
  • 1 cup buttermilk

Coating

  • 2 eggs lightly beaten
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 1 tsp paprika

Frying

  • 5-6 cups canola, vegetable or peanut oil

Instructions
 

Marinate

  • Place the sliced chicken breast in zip-lock bag or container. Pour buttermilk in the container and cover. Refrigerate for at least 2 hours.

Coating

  • In a large shallow bowl; place flour and all the seasoning together then whisk. Place the flour mix, lightly beaten eggs and marinated chicken in close proximity to each other. Get one tender out of the container (at a time) and coat it with the flour mix. Dip the tender in the lightly beaten eggs and then return to the flour mix for second coating. Set the tender aside. (Repeat steps until all tenders are well battered)

Frying

  • Pour the oil in a deep fryer pan and preheat the oil to 375°F / 190°C. Heat the oil at this temperature for at least 5 minutes before frying the chicken. Fry the tenders in separate batches, making sure to not overcrowd (no stacking or touching) cook for 6-8 minutes or until deep golden brown. Remove the tenders and place on a rack or paper towel(s) to drain excess oil.

Serve with you favorite sauce! Enjoy!

    • Mini Muffin Pan

    Ingredients
      

    Dry Ingredients

    • 1 ½ cup all-purpose flour
    • cup granulated sugar
    • 1 tsp baking powder
    • ½ tsp baking soda
    • ½ tsp salt

    Wet Ingredients

    • ¾ cup buttermilk
    • 1 egg beaten
    • 4 tbsp butter melted
    • 1 tsp vanilla extract
    • 1 ¼ cups shredded sharp cheddar cheese

    Instructions
     

    • Preheat the oven to 400°F/204°C.
    • In a large bowl, mix the dry ingredients.
    • In a separate bowl, mix the wet ingredients (set the cheese aside for now).
    • Pour the wet mixture in the large bowl with the dry mixture and whisk until smooth.
    • Fold in the cheese.
    • Spray the mini pan with the cooking spray.
    • Fill the mini cupcake tin with the batter. 
    • Bake for 7-10 minutes.

     Best Served warm!

      Ham & Cheese Sliders

      This Ham & Cheese Sliders are easy, fun, and a delicious comfort food that everyone will love. It’s an excellent choice for parties, tailgating, or at home when wanting a convenient meal. When served fresh out of the oven, I guarantee this will be hit with the kids.  These satisfying little sliders are loaded with cheese, ham, smothered and well coated with succulent rich buttery “everything seasoning”.       • 12 Hawaiian rolls
      • 10-16 sliced cheese your preference
      • 1 lb sliced ham
      • ¼ cup mayonnaise
      • 4 tbsp melted butter
      • 1 tbsp Dijon mustard
      • 1 tsp Worcestershire
      • 3 tsp everything seasoning

      Everything seasoning

      • ½ tsp poppy seeds
      • ½ tsp black sesame seeds
      • ½ tsp white sesame seeds
      • ½ tsp dehydrated onion
      • ½ tsp dehydrate garlic
      • ¼ tsp salt optional

      Instructions
       

      • Preheat the oven to 350°F / 176°C. Place an aluminum foil on a 13 x 9-inch baking sheet and spray with cooking spray.
      • Don’t pull the rolls apart. Cut them in half horizontally. Place the top halves aside.
      • Spread the mayonnaise evenly on the bottom halves. Then layer with ham and cheese.
      • Place the top half of the rolls on top of the ham and cheese.
      • In a bowl, whisk melted butter, mustard, Worcestershire and the rest of the seasonings until well mixed. Then brush the butter mixture over the tops of the rolls and cover with foil.
      • Place in oven and bake the for 15 minutes. Remove the foil and then bake another 5-8 minutes or until golden brown.

        Korean Fried Chicken

        Korean Fried Chicken (KFC for short), are succulent little wings that are so crunchy and juicy even before they are covered with delicious sauce. These sticky, sweet, slightly salty wings pack a bit of heat and will having you literally picking every last bit of met off the bones as you transition into you own fulfilling Foodlicious meal experience. This style of KFC is double fried which is the secret to making them so crispy that they remain crunchy for hours after cooking. If you like fried wings, you’ll will love KFC double fried wings for sure.

        When I first started cooking fried chicken, I could never get them this crispy. Once I started exploring different cultures for methods of cooking, I came up with this recipe. I highly recommend giving this a try and adding another notch to the list of quality items in your meal repertoire. Everyone in my family loves the homemade Asian inspired KFC just about as much as our local favorite wings place; best part the cost is way less when made fresh at home.

        First fry. Cook for 12-16 minutes or until lightly golden brown. Then remove the wings and transfer them to a baking rack.

        Second fry. Return the wings to the pot of oil and cook for additional 8-10 minutes or until deeply golden brown.

        Korean Fried Chicken

        Ingredients
          

        • 3 lbs chicken wings
        • 1 tbsp toasted sesame seeds optional but highly recommended
        • 1 cup cornstarch
        • ½ tsp black pepper
        • ½ tsp salt
        • ½ tsp garlic powder
        • ½ tsp onion powder

        Sauce

        • ¼ cup honey
        • ¼ cup gochujang
        • ¼ cup soy sauce
        • ¼ cup brown sugar
        • 2 tbsp sesame oil

        Instructions
         

        • Place the chicken wings into a large bowl. Then coat the wings with the dry ingredients except the sesame seeds.
        • In a deep-frying pot or wok, add 6 cups of vegetable oil. Heat the oil up to medium-high, around 275-300°F for 5 minutes before adding the wings.
        • Carefully add the wings to the pot of hot oil. Cook for 12-16 minutes or until lightly golden brown. Then remove the wings and transfer them to a baking rack.
        • Heat up the oil to 400-425°F for 5 minutes. Return the wings to the pot of oil and cook for additional 8-10 minutes or until deeply golden brown (See picture for reference). Then remove the wings and transfer them back to the baking rack.
        • Making the sauce: Heat a large non-stick pan or wok over medium-high. Add the sesame oil and garlic. Stir until fragrant for 20-30 seconds. Put the rest of the sauce ingredients and stir evenly or until it bubbles.
        • Turn down the sauce heat to low-medium before adding the fried wings. Toss the wings around in the sauce until they are completely coated.

        Sprinkle toasted sesame seeds and serve.

          Omelette Waffle

          Short and simple today: Omelette waffles are an easy to prepare no mess option for a breakfast on the run. They have basically five main ingredients and may be prepared by most age groups of the family group. They will turn out very fluffy and are best served fresh off the griddle. Add any extra ingredients you wish but allow extra cook time as necessary. Depending on what fillings you may select, feel free to top with a variety of finishes such as syrup, ketchup or even Tabasco.           • 8 eggs
          • 2 tbsp extra virgin olive oil
          • 4 sliced ham chopped
          • 2 tbsp green onion chopped
          • ¼ cup cheese

          Instructions
           

          • In a large bowl, beat the eggs. Put the rest of the ingredients in the bowl and mix.
          • Heat the waffle iron for 2-3 minutes. Spray cooking spray on the waffle maker.
          • Pour a scoop of the egg mixture on to the iron and close lid.
          • Cook for 2 minutes or until golden brown.

          Serve immediately.

            Vietnamese Pork Egg Rolls

            Crunchy and lightly seasoned fried pork Vietnamese Egg Rolls require the touch of a patient kitchen master. These are not difficult to make if you have the right directions. My recipe has been developed over the years by making many mistakes and asking for insights from older ladies. Proper Egg Rolls will require strict adherence to the directions and will allow little room for error. The amount of egg on the wrapper has to be pretty close to exact and the temperature of the oil will determine if they bust and stick together or if they come out to a golden crispy finish that is ready for the table. For this Batch; I filled them with ground pork, bean noodles, black mushrooms, carrots and green onions. Traditionally, they are deep fried but they may also be baked in the oven if you prefer. Check out my video or my recipe below to see how to make this wonderful addition to your menu.

            My family loves them when fried to perfection. With all the seasoning, meat, vegetables mixed together and fried your mouth will be watering as they cool down enough to eat. My husband circles the kitchen desperately wanting a bite right off the hot deep fryer and sometimes grabbing one disregarding safety recommendations.  It is rewarding to watch someone brave a mouth burn just to get a bite of the freshly homemade egg roll.

            Traditional, Vietnamese egg rolls are rolled in rice wrapper. In America, most people will roll them in wheat egg roll wrapper instead. It’s a lot easier to roll with rice wrapper. If you haven’t tried making them before I suggest trying the rice wrapper for practice and working your way up to the egg rolls.

            Vietnamese egg rolls are perfect for serving as a snack, appetizer or main dish. They can be made with most any type of protein or just vegetables (be sure to give the vegetables additional time to drain prior to serving).

            I grew up eating the traditional Vietnamese Egg Roll. They are usually served at party’s or special events. Since I have a family of my own now, I love to treat my family throughout the year. These are not easy to make, but once you learn how, it is well worth the effort.

            Vietnamese Pork Egg Rolls

            Ingredients
              

            • 2 lbs ground pork
            • 1 bundle dried bean thread (vermicelli) noodles
            • ½ cup dried woodear mushrooms
            • 2 carrots shredded
            • 4 green onions ½ cup
            • 3-4 tbsp granulated sugar
            • 1 ½ tsp black pepper
            • 1 tbsp mushroom seasoning optional but recommended
            • 1 tsp garlic powder
            • 4 tbsp fish sauce
            • 1 pack of egg roll 25 wrappers

            Instructions
             

            • In two separate bowls, soak dried bean thread and dried mushrooms in hot water for 10 minutes. Rinse, drain and squeeze the excess water from the noodles and mushrooms. Chop/mince. 
            • In a large bowl, add ground pork, noodles, mushrooms, carrots, green onions and all the seasonings. Mix well.
            • Defrost the egg roll wrapper. It usually takes about 1-2 hours at room temperature.Just before making the egg rolls, be sure to gently pull each individual wrapper apart and place them on a plate. This will help and save time when rolling.
            • Place the egg roll wrapper on a flat surface. Put a spoonful on the wrapper and roll. Be sure to roll it a little tight. Don’t roll it too tight or they will bust during frying. Watch the video for guidance how to roll it properly. 
            • Heat a large pot or wok to medium-high on 325-350°F / 162-176°C for 5 minutes before frying. Fry them in batches careful not to overcrowd as they may stick to each other. Cook for 13-15 minutes or until golden brown per batch.
