Saucy Chicken Broccoli Stir-fry

Deliciously saucy tender juicy Chicken and Broccoli brought together in an effortless stir-fry. The authentic savory flavor of this meal will bring quality to your table. You will not have a difficult time getting the children to eat their broccoli after they take the first bite. I honestly have an extremely picky kid that turns his nose up at most vegetables, yet he cleans his plate every time I serve this dish.

Serve with your favorite rice and you will have yourself a comforting well balanced dining experience. No preservative makes this a healthier choice than eating out.

Chicken and Broccoli Stir-fry

Ingredients
  

  • 2 chicken breasts thinly sliced
  • 4 cups broccoli florets
  • 4 garlic cloves minced
  • ½ onion sliced
  • 1 tsp baking soda
  • 1 tbsp soy sauce
  • 1 tbsp oil

Sauce

  • 2 tbsp soy sauce
  • 2 tbsp stir-fry sauce (vegan oysters sauce) substitute oyster sauce as a replacement
  • 1 tbsp sesame oil
  • 1 tbsp chinese cooking wine or mirin
  • ½ tsp white pepper

Cornstarch mix

  • 1 cup cold water
  • 1 tbsp cornstarch

Instructions
 

Tenderize the meat

  • Slice the chicken breasts thinly and place them in a bowl.
  • Add baking soda and 1 tbsp of soy sauce, mix. Cover and let them marinate for 15 mintues.

Sauce

  • In a small bowl, place all the sauce ingredients together and mix. Set aside.

Broccoli

  • Place the broccoli in a glass/container and add 4 tbsp of water; cover. Cook them in the microwave for 3 minutes.

Stir-fry

  • In a small bowl, combine cornstarch with water. Set aside.
  • Heat up the wok/pan to medium-high; add oil. Allow oil to heat for 30 seconds, then add the chicken and cook for a couple minutes.
  • Add garlic and onion; cook for a minute.
  • Add the sauce mix, cornstarch mix and broccoli to the wok/pan. Stir and toss until evenly coated. Cook for couple addtional mintues or until the sauce thickens.

Serve with rice. Enjoy!

    • Instant Pot (IP)

    Ingredients
      

    • 4 chicken breasts
    • 1 cup salsa
    • ½ cup chicken broth
    • ½ onion chopped
    • 2 tbsp taco seasoning

    Instructions
     

    • Place the broth, onion, salsa and taco seasoning in the IP; mix.
    • Lay the chicken breasts on the sauce mix. Coat both sides.
    • Pressure cook on high for 12 minutes. Follow the manufacture for a quick release.
    • Shred the chicken with 2 forks or mixier. Watch the video for reference.
    • Fill a soft or hard tortilla with a serving of the shredded chicken and then add your favorite toppings.

      Buttermilk Fried Chicken Tenders

      Ingredients
        

      • 3 chicken breasts sliced
      • 1 cup buttermilk

      Coating

      • 2 eggs lightly beaten
      • 1 cup flour
      • 1 tsp salt
      • 1 tsp black pepper
      • 1 tsp onion powder
      • 1 tsp garlic powder
      • 1 tsp oregano
      • 1 tsp paprika

      Frying

      • 5-6 cups canola, vegetable or peanut oil

      Instructions
       

      Marinate

      • Place the sliced chicken breast in zip-lock bag or container. Pour buttermilk in the container and cover. Refrigerate for at least 2 hours.

      Coating

      • In a large shallow bowl; place flour and all the seasoning together then whisk. Place the flour mix, lightly beaten eggs and marinated chicken in close proximity to each other. Get one tender out of the container (at a time) and coat it with the flour mix. Dip the tender in the lightly beaten eggs and then return to the flour mix for second coating. Set the tender aside. (Repeat steps until all tenders are well battered)

      Frying

      • Pour the oil in a deep fryer pan and preheat the oil to 375°F / 190°C. Heat the oil at this temperature for at least 5 minutes before frying the chicken. Fry the tenders in separate batches, making sure to not overcrowd (no stacking or touching) cook for 6-8 minutes or until deep golden brown. Remove the tenders and place on a rack or paper towel(s) to drain excess oil.

      Serve with you favorite sauce! Enjoy!

        • Skillet or wok

        Ingredients
          

        • 3 boneless chicken thighs or breasts sliced
        • 1 ½ cup Thai basil
        • 4 garlic cloves minced
        • 1-5 Thai pepper depending how hot you like it
        • 2 tbsp oil
        • 2 tbsp cornstarch

        Sauce

        • 1 tbsp oyster sauce
        • 1 tbsp light soy sauce
        • 1 tbsp dark soy sauce
        • 2 tbsp brown sugar
        • ½ cup water or low sodium chicken broth

        Instructions
         

        Sauce

        • Put all the sauce ingredients in a small bowl, stir and set aside until ready for use.

        Stir-fry

        • Heat the wok on high. Add oil, garlic and peppers. Cook for 20 seconds.  Add sliced chicken and stir fry for 2-3 minutes until fully cooked.
        • Add sauce mixture to the wok and stir. Cook for 1-2 minutes, until the sauce begins the thicken.
        • Throw in the basil and Chinese chives. Toss everything until the basil and chives are wilted.

          Korean Fried Chicken

          Korean Fried Chicken (KFC for short), are succulent little wings that are so crunchy and juicy even before they are covered with delicious sauce. These sticky, sweet, slightly salty wings pack a bit of heat and will having you literally picking every last bit of met off the bones as you transition into you own fulfilling Foodlicious meal experience. This style of KFC is double fried which is the secret to making them so crispy that they remain crunchy for hours after cooking. If you like fried wings, you’ll will love KFC double fried wings for sure.

          When I first started cooking fried chicken, I could never get them this crispy. Once I started exploring different cultures for methods of cooking, I came up with this recipe. I highly recommend giving this a try and adding another notch to the list of quality items in your meal repertoire. Everyone in my family loves the homemade Asian inspired KFC just about as much as our local favorite wings place; best part the cost is way less when made fresh at home.

          First fry. Cook for 12-16 minutes or until lightly golden brown. Then remove the wings and transfer them to a baking rack.

          Second fry. Return the wings to the pot of oil and cook for additional 8-10 minutes or until deeply golden brown.

          Korean Fried Chicken

          Ingredients
            

          • 3 lbs chicken wings
          • 1 tbsp toasted sesame seeds optional but highly recommended
          • 1 cup cornstarch
          • ½ tsp black pepper
          • ½ tsp salt
          • ½ tsp garlic powder
          • ½ tsp onion powder

          Sauce

          • ¼ cup honey
          • ¼ cup gochujang
          • ¼ cup soy sauce
          • ¼ cup brown sugar
          • 2 tbsp sesame oil

          Instructions
           

          • Place the chicken wings into a large bowl. Then coat the wings with the dry ingredients except the sesame seeds.
          • In a deep-frying pot or wok, add 6 cups of vegetable oil. Heat the oil up to medium-high, around 275-300°F for 5 minutes before adding the wings.
          • Carefully add the wings to the pot of hot oil. Cook for 12-16 minutes or until lightly golden brown. Then remove the wings and transfer them to a baking rack.
          • Heat up the oil to 400-425°F for 5 minutes. Return the wings to the pot of oil and cook for additional 8-10 minutes or until deeply golden brown (See picture for reference). Then remove the wings and transfer them back to the baking rack.
          • Making the sauce: Heat a large non-stick pan or wok over medium-high. Add the sesame oil and garlic. Stir until fragrant for 20-30 seconds. Put the rest of the sauce ingredients and stir evenly or until it bubbles.
          • Turn down the sauce heat to low-medium before adding the fried wings. Toss the wings around in the sauce until they are completely coated.

          Sprinkle toasted sesame seeds and serve.

            Creamy Lemon Chicken

            Creamy Lemon Chicken that will make your mouth water as the zesty sauce combines harmoniously with the pan fried super thick and juicy chicken breast to make a creamy tang that will satisfy the most ambitious appetite. This meal is succulent, creamy, very comforting and pairs well with most any side. It is so easy to prepare which makes it perfect for a busy work/weekday schedule.  I don’t know about you but, I am all about the zest, whether its lemon or lime.  This creamy gravy that the chicken comes served with takes the food to another level. This is the kinda meal that when cooking, the aroma is so good that the neighbors will be wanting to stop by to see if you need any help with eating this masterpiece. You may need to have your favorite bread/roll handy so your family can wipe their plates clean as they devour a well prepared made form scratch home cooked juicy chicken entree.

            I like to serve this with rice and keep the main dish in the middle of the table so the presentation has a feast like appeal and the experience is communal. This meal will please your sense of sight, taste and smell as you and your family bond over the days happenings while experiencing a quality meal together. I know we all remember our mothers and grandmothers’ kitchen as children and feeling safe and loved, by the work activities being undertaken to prepare a fabulous meal.  I take it upon myself to hold a place in my family’s memories that will show them how to love and be loved because, we take the time to break bread together while we enjoy the reward of our labor that comes from a place of love.             Creamy Lemon Chicken

            Ingredients
              

            • 4 chicken breasts
            • 5 garlic cloves  minced
            • ½ onion chopped
            • ½ cup fresh parsley chopped
            • 3 tbsp butter
            • 2 tbsp olive oil
            • 2 lemon juice only
            • 1 ½ cup cup heavy whipping cream

            Seasoning

            • 2 tbsp all-purpose flour
            • 1 tbsp Italian seasoning
            • 1 tbsp granulated sugar
            • 1 tsp salt
            • 1 tsp black pepper

            Instructions
             

            Seasoning

            • In a small bowl mix all the seasoning ingredients together.
            • Coat chicken breasts with about ½ tbsp of seasoning mix on each side.

            Cook

            • Heat the skillet to medium high, add oil and butter.
            • Place chicken breast in skillet. Cook each breast for 5 minutes per side until done. Transfer the cooked breast to a plate and set aside.
            • Add garlic to the skillet, cook for 30 seconds. Add onions, cook for 1 minute. Add heavy whipping cream until it bubbles. Turn down the heat to low medium.
            • Add lemon, parsley and the chicken breasts to the skillet. Simmer for 3 minutes prior to serving.

            Recommend serving with rice, pasta or vegetables.
