Ingredients

Marinate Shrimp

Bring the water to a boil. Add broccoli florets and blanch for 1-2 minutes.

Cooked broccoli florets.

Add the marinated shrimp and cook each side for 2-3 minutes or until no longer raw.

Cooked Shrimp.

Add broccoli.

Mix well, and there you have it; another foodlicious meal ready for the dinner table.

Ingredients
  

  • 1 lb large shrimp
  • 4 cups broccoli florets
  • 4 garlic cloves minced
  • ½ cup low- sodium chicken broth
  • 2 tbsp oil
  • 1 tsp soy sauce
  • 1 tsp shaoxing wine or dry sherry
  • 1 tsp granulated sugar
  • 1 tsp water
  • ½ tsp cornstarch
  • salt to taste
  • white pepper to taste

Instructions
 

Marinate

  • In a medium size bowl: combine raw shrimp, soy sauce (1 tsp), shaoxing cooking wine (1 tsp) and a dash of white pepper; mix well.
  • Cover and refrigerate for 10 minutes.

Cook

  • In a medium size pan: bring the water to a boil. Then, add broccoli florets and blanch for 1-2 minutes. Over the sink: drain the broccoli using a strainer. Place the broccoli in a bowl and set aside.
  • Using the same pan (wipe with a paper towel and make sure it is completely dry), add oil. Wait for 30-60 seconds.
  • Add minced garlic and cook for 30 seconds or until fragrant.
  • Add the marinated shrimp and cook each side for 2-3 minutes or until no longer raw.
  • In a small bowl: combine cornstarch with the water; mix until fully liquifies.
  • Add the chicken broth, sugar and liquid cornstarch to the sauce pan; mix well.
  • Add the cooked broccoli florets; mix well.
  • Season with salt and white pepper to taste; mix.

Serve with your favorite warm rice!

      When it comes to hot and sour soup, I prefer my soup to be “fully” loaded with meat (shrimp, chicken or pork), tofu, mushrooms, bamboo, dried wood ear mushrooms and eggs. You can add other vegetables to the soup but recognize cook times and flavors may vary. As with most dishes the garnish sets the visual tone and creates a fresh appeal. Simply top this dish with fresh chopped green onions and white pepper prior to serving. The crisp onions and spice of the pepper will stew to a perfume of delightful invitation as the symphony of herbal tones and chicken broth cascade from the serving dish.

      This recipe is one of my personal favorites! Hot and sour soup reminds me of going out for dinner with my family and celebrating special occasions during my youth. I have worked for several years to try and recreate my best experiences of this dish in my own home. I believe this recipe is of a quality worthy of sharing and highly recommend you give it a try.       Extra large shrimp, homemade chicken broth (or carton of your favorite is fine), eggs and tofu.

      Seasonings

      Cut the tofu.

      Bring to a high simmer and add the vegetables.

      Add shrimp.

      Add eggs.

      Hot & Sour Shrimp Soup

      • 8 cups chicken broth low-sodium
      • 8 oz extra large shrimp ½ lb
      • 7 oz tofu sliced
      • 5 oz bamboo sliced
      • 5 oz fresh shiitake mushrooms you can substitute with any mushroom
      • 2 eggs beaten
      • 1 cup dried shredded wood ear mushroom
      • cup white vinegar +/- adjust to your liking
      • 2 tbsp light soy sauce
      • 2 tsp dark soy sauce
      • 2 tsp white pepper
      • 1 tsp sesame oil
      • ¼ cup cornstarch
      • ¼ cup water

      Instructions
       

      • Cut tofu into small rectangular shapes. Set aside.
      • In a small bowl: place the dried shredded wood ear mushroom and hot water. Soak for 10 minutes. Then rinse to clean the mushrooms at least twice.
      • In a medium size pot: pour in the chicken broth and turn heat to medium-high..
      • Add both soy sauce, vinegar, white pepper and sesame oil; bring to a boil.
      • Add bamboo, wood ears and shiitake mushrooms; stir and return to a boil.
      • In a small bowl: mix cornstarch and water. Then add the cornstarch mixture to the boiling pot and stir.
      • Add tofu and shrimp; stir a few times; reduce heat to low-medium.
      • Slowly pour the lightly beaten eggs into the soup as you gently swirl using chopsticks/fork. Recommend watch video once for reference.
      • Remove the pot from the stove and place soup in bowl(s).

      Top with fresh chopped green onions and white pepper.

        Serve immediately and enjoy!

          Air-Fried Bang Bang Shrimp

          Ingredients
            

          • 1 lb large shrimp raw
          • ½ cup flour
          • ½ cup water
          • 1 tsp salt
          • ½ tsp black pepper
          • 1 cup breadcrumbs

          Bang Bang Sauce

          • ¼ cup mayonnaise
          • 2 tbsp sweet chili sauce
          • 1 tsp sriracha

          Instructions
           

          • In a medium size bowl, combine flour, salt, pepper and water; whisk.
          • Add raw shrimp and toss until evenly coated.
          • Place the breadcrumbs in a separate bowl.
          • Dip the battered shrimp into the breadcrumbs until well coated.
          • Place the shrimp in the air fryer tray and spray cooking olive oil.
          • Insert Tray and turn the air fryer to 400°F/204°C.
          • Cook for 10-12 minutes or until lightly golden brown. Repeat steps until all shrimp are done.

          Sauce

          • In a small bowl, combine mayonnaise, sweet chili sauce and sriracha; mix.

          Serve and enjoy!

            • 1 lb large shrimp peeled and deveined
            • ½ cup cornstarch
            • 1 tsp salt
            • 1 tsp black pepper
            • 1 ¼ cup oil divided
            • 2 tbsp ginger minced
            • 1 tbsp sichuan pepper
            • 1 shallot minced
            • 4 garlic cloves minced
            • 2 tbsp green onions chopped

            Instructions
             

            Salt and Pepper mixture

            • In a medium size bowl, combine the raw shrimp, cornstarch, salt and pepper; mix until well coated.

            Frying

            • Pour ¼ cup of oil into a wok or skillet and heat to medium-high (375°F-400°F / 176°C-204°C).
            • Wait for a minute or so then add ginger to the wok/skillet; cook for 1-2 minutes.
            • Add the garlic and shallot to the wok/skillet. Cook for another 1 minute or until they turn golden brown. Remove the fried toppings. Place them on a clean paper towel (drain the oil). Set aside.
            • Pour 1 cup of oil into the wok/skillet, allow to heat up for about 3 minutes.
            • Place the sichuan pepper and fry for 1 minute.
            • Add the shrimp to the wok/skillet. Space the shrimp carefully to prevent from sticking togther. Watch the video for guidance.
            • Cook for 1-2 minutes per side or until lightly brown. Remove the shrimp and place them on a clean paper towel (drain the oil)

            Preparing

            • In a medium size bowl, add cooked shrimp, fried garlic/shalllot/ginger bits and extra optional salt/pepper. Toss everything together .
            • Top with chopped fresh green onions.

            Serve with white or brown rice. Enjoy!

              Dipping sauce

              • In a small-medium bowl, place all the ingredients together and stir until the sugar is dissolved.

              Grill

              • Direct grill on high for 3-4 minutes per-side or until fully cooked.

              Arranging the bowl

              • Place the cooked vermicelli on the bottom of the bowl. Arrange toppings around the edges of the bowl.
              • Place 5 grilled shrimp in the center.
              • Pour the dipping sauce over the food.

                Shrimp Ceviche

                This Ceviche recipe calls for fresh raw shrimp, red onion, English cucumber, tomatoes, jalapeno and cilantro. An authentic approach for eating this dish is to let the shrimp chemically cure/cook in lime Juice and salt as a marinade. Simply place the marinating shrimp in the refrigerator for the required amount of time to enjoy just how tender, tangy and juicy they turn out. I love this as an appetizer.  

                It’s a very healthy, simple, quick meal to prepare and is very low in carbohydrates. This is a good choice for those times you want to cut back on red meat.
