Heat the pan to medium-high. Add olive oil and onions. Sauté for 2-3 minutes or until fragrant. Add in the tomatoes and garlic while mixing everything together. Cook for another 2-3 minutes or until fragrant.

Add Italian seasoning, salt, pepper, red pepper flakes, tomato paste, heavy whipping cream, parmesan cheese and the reserved pasta water to the pan. Gently stir everything together.

Add in the cooked pasta and mix thoroughly until well coated with sauce.

Add fresh spinach while folding and mixing.

Continue to cook and mix everything together until the spinach has fully wilted (add more water if the sauce is too thick for your liking). Season with salt & pepper as needed. Then remove from heat source.

Add Parmesan cheese and mix. Season with salt & pepper as needed.

Garnish with Parmesan cheese.

Serve and enjoy!

Creamy Tomato & Spinach Pasta
Ingredients
- ½ lb pasta any types
- 8 oz chopped tomatoes or diced
- 6 oz fresh spinach
- ½ cup heavy cream
- ¼ cup grated Parmesan cheese
- 2 tbsp olive oil
- 1 tbsp tomato paste
- 1 tsp Italian seasoning
- ½ tsp salt
- ½ tsp red pepper flakes
- ¼ tsp black pepper
- ½ onion chopped
- 2 garlic cloves minced
Instructions
- Follow the instructions on the package for pasta cook time (al dente). Then reserve about ½ cup of the pasta water.
- Heat the pan to medium-high. Add olive oil and onions. Sauté for 2-3 minutes or until fragrant. Add in the tomatoes and garlic while mixing everything together. Cook for another 2-3 minutes or until fragrant.
