Air Fryer Cornbread Muffins

Air Fryer Cornbread Muffins are a simple way to bring a traditional recipe up to modern techniques for preparation. Moist warm bread bites that go great as a side munch and grab cornbread or as an additive to your favorite bowl of chili or likeminded stew. Warm bread under convection will resonate in the cooking as these convenient little muffins are baked to perfection. In a large bowl: combine eggs, buttermilk, melted butter and mix well.

Add cornmeal, flour, sugar, salt, baking powder & baking soda.

Mix well.

Place the silicone muffin molds in the air fryer.

Scoop ¼ cup of batter in the muffin molds or fill them up ⅔ of the way.

Air fry for 330°F for 10-11 minutes or until golden on top. (Depending on the size of your air fryer: repeat this step as necessary).

Serve & enjoy!

Ingredients
  

  • 1 ½ cup buttermilk room temperature

  • 8 tbsp melted unsalted butter
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 large eggs room temperature

Instructions
 

  • In a large bowl: combine eggs, buttermilk, melted butter and mix well. Add cornmeal, flour, sugar, salt, baking powder, baking soda and mix well.
  • Place the silicone muffin molds in the air fryer. Scoop ¼ cup of batter in the muffin molds or fill them up ⅔ of the way.
  • Air fry for 330°F for 10-12 minutes or until golden on top. (Depending on the size of your air fryer: repeat this step as necessary).
