Air Fryer Cornbread Muffins

Air Fryer Cornbread Muffins are a simple way to bring a traditional recipe up to modern techniques for preparation. Moist warm bread bites that go great as a side munch and grab cornbread or as an additive to your favorite bowl of chili or likeminded stew. Warm bread under convection will resonate in the cooking as these convenient little muffins are baked to perfection. If you grew up like my husband, eating corn bread as a staple in the kitchen you will appreciate this method of preparation as it leaves the kitchen almost as clean as you found it.

In a large bowl: combine eggs, buttermilk, melted butter and mix well.

Add cornmeal, flour, sugar, salt, baking powder & baking soda.

Mix well.

Place the silicone muffin molds in the air fryer.

Scoop ¼ cup of batter in the muffin molds or fill them up ⅔ of the way.

Air fry for 330°F for 10-11 minutes or until golden on top. (Depending on the size of your air fryer: repeat this step as necessary).

Serve & enjoy!

Ingredients
  

  • 1 ½ cup buttermilk room temperature
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 8 tbsp melted unsalted butter
  • 2 tbsp granulated sugar
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp salt
  • 2 large eggs room temperature

Instructions
 

  • In a large bowl: combine eggs, buttermilk, melted butter and mix well. Add cornmeal, flour, sugar, salt, baking powder, baking soda and mix well.

    Air Fryer Hot Dogs

    Air Fryer Hot dogs are simple to make and can be made anywhere you can plug in your appliance. This recipe does not smoke but creates a pleasant aroma of toasted bread and juicy hot dogs. Enjoy your dog with chili or what ever toping you prefer. We have no problem in making good food like this disappear at my house.     • Preheat the air fryer to 390°F.
    • Place the hotdogs in the air fryer basket and cook for 4 minutes. Transfer the hotdogs to the buns. Cook the hotdog in the buns for 1-2 minutes or until the buns are lightly toasted.

      Ingredients

      Steak: Clean and trim fat. Cut into cubes.

      Place in a bowl.

      Then add olive oil, salt, pepper and mix.

      Place the steak bites in the air fryer basket in a single layer.

      Air fry for 4-6 minutes or until desired doneness. Make sure to space them out.

      Meanwhile, make the garlic butter sauce. Heat a pan to medium-high. Add butter and wait until it has completely melted. Add garlic and saute for 30 seconds. Add parsley and mix. Remove from the heat source.

      Remove steak bites from the basket and place in serving dish (plate/bowl). Pour garlic butter sauce over the steak bites and mix. Optional: season with a bit more salt and pepper to taste. Garnish with parsley.

      I prefer 4 minutes for our steak bites.

      • 1 ½ lbs sirlion steak
      • 2 tbsp extra virgin olive oil
      • salt & pepper to taste

      Garlic Butter Sauce

      • 2 tbsp unsalted butter
      • 1 tbsp fresh parsley chopped
      • 3 garlic cloves minced

        Air Fryer Grilled Cheese

        One of the first things I learned how to cook growing up was a good ole iron skillet butter smothered grilled cheese sandwich. Like many of you, I love to experiment with my new appliances to see what is possible as I measure the quality of the dish and compare it to traditional methods. For me, a crispy hot grilled cheese is one of life’s simple pleasures and believe you me when I say it just got even easier.         • 2 sliced bread
        • 2 sliced cheese
        • 1 tbsp mayonnaise or butter (softened)

        Instructions
         

        • Place the sliced cheese between the bread.
        • Spread ½ tbsp mayonnaise or butter on the outside of bread.
        • Air fry on 370°F for 6 minutes total cook time, flip after the first 3 minutes (half way point). It is recommended that you check your toast after the initial couple of minutes as you may need to reduce or increase your total cook time +/- 1 minute depending on your specific make and model.

          Juicy chicken thigh

          Cut potatoes into cubes.

          Add carrots

          Add chicken thighs

          Add salt, pepper, paprika, oregano, garlic, onion and oil. Mix well until everything is coated evenly.

          Place potatoes and carrots in the bottom of the air fryer basket. (Optional: coat the bottom basket with cooking spray).

          Place chicken thighs on top of the potatoes and carrots.

          Air fry for 25 minutes at 400°F (make sure to flip after 15 minutes).

          Serve and enjoy!

          • 1 ½ lbs potatoes cut into cubes

            Air Fryer Homemade Biscuits

            Pass the biscuits please! Follow this recipe for 8 minute biscuits. Thats right, you will have traditional style biscuits in as little as 8 minutes using the air fryer convention technique. If you do not have an oven handy, have plans to be on the road or live in a dorm you will definitely enjoy having fresh made biscuits that your grandma would love anytime anywhere. I have worked over time to make a recipe for biscuits that my very traditional southern husband loves to eat. I have tweaked that method a bit to fit the air fryer and it works. In the south making a good biscuit can make you a legend in your own family. Soft filling comfort food that is great served with honey, butter or my kids favorite, with sausage gravy. If you have never had a good homemade biscuit, you should watch the video and follow the detailed instructions below to find out for your self what all the fuss is about.

            Traditional food from the different regions of the world are largely based on what type of ingredients are available there and what the culture is like. Soft fluffy southern style biscuits are no exception as flour is used heavily in southern style foods from fried food to gravy, you will likely find flour somewhere near the cooking area as an enhancement to the food experience. No better way to experience what flour can do than having a delicious warm biscuit with some eggs and bacon to fill the eat. My favorite way to enjoy a fresh made biscuit is to cover it with some local honey and butter, it goes great with morning coffee or as a standalone snack.             Fluffy homemade biscuits

            In a large bowl: combine flour, salt, sugar, baking powder and COLD butter. Use a pastry cutter or your hand to mix until it begins to form coarse crumbs.

            Add milk and knead the dough in the bowl for a few minutes. The dough will be sticky at first but once you knead everything it will be fine. If the dough is still sticky add 1 tbsp of flour and knead until it is no longer sticky.

            Transfer the dough to a floured surface. Pat the dough out to ¾” to 1″ thick.

            Use a biscuit cutter or glass to shape the biscuits. You should have 9-10 biscuits.

            Preheat the air fryer to 380°F.

            Place the biscuits in the air fryer basket and cook for 8 mintues or until golden brown on top. (Depending on the size of your air fryer: repeat this step as necessary).

            Optional: brush melted butter or honey over the top of the biscuits. Serve immediately and enjoy!

            • ¾ cup cold milk whole or reduced fat
            • 8 tbsp cold unsalted-butter
            • 1 tbsp baking powder
