Place the potatoes in atop 2 wooden spoons or 2 chop sticks. Slice the potatoes thinly (about ¼” thick), leaving ¼” at the bottom unsliced so everything keeps its shape. Continue with the rest of the potatoes.

Brush 1 tbsp olive oil over entire surface of the potatoes.

Preheat the air fryer to 350°F. Place potatoes in your air fryer basket.

Meanwhile, in a bowl: combine 1 tbsp olive oil, salt, pepper, paprika and mix.

After 15 minutes, brush the mixture on the top & inside of the potatoes (be careful when handing ‘hot’ potatoes).

Continue to cook for another 15 minutes or until crispy on the outside and tender on the inside.

Serve!

Ingredients
- 4-5 (about 6-7 oz each) yukon gold potatoes cleaned & scrubbed
- 2 tbsp (divided) extra virgin olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp paprika
Instructions
- Preheat the air fryer to 350°F.
- Place the potatoes in atop 2 wooden spoons or 2 chop sticks. Slice the potatoes thinly (about ¼" thick), leaving ¼" at the bottom unsliced so everything keeps its shape. Continue with the rest of the potatoes. Brush 1 tbsp olive oil over entire surface of the potatoes. Place potatoes in your air fryer basket.
