Seasoning Mixture

Combine all the rub ingredients together. Save ½ cup of rub mixture for later (sauce).

Clean and pat the ribs dry with a paper towel. Place the ribs meat side down on the cutting board. Remove the chewy unattractive skin membrane from the back of ribs and discard.

Coat both sides of the 2 sets of ribs with the rub. Optional: marinate for 30 minutes.

Cover each rack of ribs with aluminum foil. Place ribs on a baking sheet.

Preheat the oven to 300°F (148°C). Cook in the oven for 2 ½ hours.

In a sauce pan: add ½ cup of rub mixture, ketchup, apple cider vinegar and stir. Bring to a simmer and turn down the heat to low.

Cook for 10 minutes or until sauce is reduce in half, continue to stir throughout.

Remove the ribs from the oven. Turn the oven up to 450°F (232°C). Remove/fold back the foil. Generously coat the ribs with the BBQ sauce. Then, bake for 15 minutes. Note: St. Louis style ribs may need to bake for 20 minutes.

Remove the ribs from the oven and coat with sauce again. Cool for 15 minutes before cutting. Place the ribs on a cutting board and cut between the bones.

Sweet & Spicy Ribs
Ingredients
- 2 St. Louis Style Ribs 2.5 lbs each
Rub
- ¾ cup brown sugar
- 3 tbsp salt
- 2 tbsp smoke paprika
- 2 tbsp ground mustard
- 2 tbsp onion powder
- 2 tbsp garlic powder
- 1 ½ tbsp ground cayenne pepper
Sauce
- 1 cup ketchup
- ½ cup rub mixture
- ¼ cup apple cider vinegar
Instructions
