Sheet Pan Chicken Thighs with Potatoes and Feta Cheese

Simple Sheet Pan Chicken Thighs with Potatoes & Feta is a budget friendly meal that can put together quickly with just a few ingredients that you have at home. It’s also great for meal prepping for the week if you have a busy schedule. It is saturated with natural flavors and smooth fresh flavors. This is another simple to make and everyone will love how delicious and filling it is. I do prefer fresh from the oven because each ingredient still has a unique flavor and texture. We like our hearty meals around here and this one went pretty fast. Fall off the bone tender meat and soft warm potatoes & feta cheese is a nice meal. Recommend adding French bread or corn bread to the table just because you may want to dip your bread in the juices.

In a large bowl: add chicken thighs, lemon juice, olive oil (2 tbsp), garlic, onion, black pepper, oregano and mix. 

Preheat the oven to 425°F.  Place the potatoes on the baking sheet. Drizzle olive oil (2 tbsp), salt & pepper (to taste) and mix everything together. Push the potatoes to the sides/edges.

Then, place chicken (do not overlap) in the center of the baking sheet. 

Bake for 40 minutes or until the internal chicken reaches to 165°F. Remove baking sheet from the oven. Sprinkle feta cheese on top of the chicken and potatoes. Let rest for 5-6 minutes before serving.

Ingredients
  

  • 6 chicken thighs bone-in with skin
  • 2 lbs yukon gold potatoes cut into cubes
  • 4 tbsp (divided) extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 tsp salt
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp black pepper
  • ½ tsp dried oregano
  • cup feta cheese

Instructions
 

  • Preheat the oven to 425°F.
  • In a large bowl: add chicken thighs, lemon juice, olive oil (2 tbsp), garlic, onion, black pepper, oregano and mix.
  • Place the potatoes on the baking sheet. Drizzle olive oil (2 tbsp), salt & pepper (to taste) and mix everything together. Push the potatoes to the sides/edges. Then, place chicken (do not overlap) in the center of the baking sheet.
  • Bake for 40 minutes or until the internal chicken reaches to 165°F.
