Creamy Tomato & Spinach Pasta

Delightful warm chewy pasta with mouthwatering creamy tomato sauce featuring the natural green taste of fresh spinach. This affordable and easy to make selection is perfect on any occasion.  Full of flavor, textures and at a budget price, this is perfect normal meal planning. Quick and tasty this recipe will fill the hunger without breaking the bank. I do enjoy mine with warm French bread but that is not uncommon in my house. We enjoyed this fresh creamy dish and recommend you try it at least once to see for yourself how delicious it really is.

Heat the pan to medium-high. Add olive oil and onions. Sauté for 2-3 minutes or until fragrant. Add in the tomatoes and garlic while mixing everything together. Cook for another 2-3 minutes or until fragrant.

Add Italian seasoning, salt, pepper, red pepper flakes, tomato paste, heavy whipping cream, parmesan cheese and the reserved pasta water to the pan. Gently stir everything together.

Add in the cooked pasta and mix thoroughly until well coated with sauce.

Add fresh spinach while folding and mixing.

Continue to cook and mix everything together until the spinach has fully wilted (add more water if the sauce is too thick for your liking). Season with salt & pepper as needed. Then remove from heat source.

Add Parmesan cheese and mix. Season with salt & pepper as needed.

Garnish with Parmesan cheese.

Serve and enjoy!

Creamy Tomato & Spinach Pasta

Ingredients
  

  • ½ lb pasta any types
  • 8 oz chopped tomatoes or diced
  • 6 oz fresh spinach
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp red pepper flakes
  • ¼ tsp black pepper
  • ½ onion chopped
  • 2 garlic cloves minced

Instructions
 

  • Follow the instructions on the package for pasta cook time (al dente). Then reserve about ½ cup of the pasta water.
  • Heat the pan to medium-high. Add olive oil and onions. Sauté for 2-3 minutes or until fragrant. Add in the tomatoes and garlic while mixing everything together. Cook for another 2-3 minutes or until fragrant.

    One Pot American Goulash

    Heat the pan to medium-high. add the oil and meat and cook for 3-5 minutes or until no longer pink.

    Add onion, garlic & bell pepper.

    Add salt, pepper, paprika, Worcestershire sauce, Italian seasoning, tomato paste, and cook for 1 minute or until fragrant.

    Add pasta, beef broth and mix well (make sure to submerge the noodles in the broth). Place the bay leaf, diced tomatoes and tomato sauce on top. DO NOT STIR.

    Bring to simmer (about 3-5 minutes). Turn down the heat to medium. Cover with a lid and cook for 12 minutes. 

    Turn off the heat. Remove the lid (be careful the lid is going to be hot). Add shredded cheese and then mix everything well.

    Season with salt & pepper if needed. Let rest for a few minutes before serving.

    • 2 lbs ground chuck or beef
    • ½ lb uncooked macaroni or any pasta
    • 2 cups unsalted or low-sodium beef broth
    • 1 cup shredded cheddar cheese
    • 28 oz diced tomatoes
    • 15 oz tomato sauce
    • 3 tbsp Worcestershire sauce
    • 2 tbsp tomato paste
    • 1 tbsp Italian seasoning
    • 1 tbsp olive oil
    • 1 tsp salt
    • 1 tsp paprika
    • ½ tsp pepper
    • 1 medium onion chopped
    • 3 garlic cloves minced
    • 1 green bell pepper discard seeds & chopped
    • 3 dried bay leaves

    Instructions

    • Add onion, garlic, bell pepper, salt, pepper, paprika, Worcestershire sauce, Italian seasoning, tomato paste, and cook for 1 minute or until fragrant. Add pasta, beef broth and mix well (make sure to submerge the noodles in the broth).
    • Place the bay leaf, diced tomatoes and tomato sauce on top. DO NOT STIR.
