Chicken Ramen Stir Fry

Chicken Ramen Stir Fry is a savory filling dish that takes simple ingredients and combines them for a tasty meal that can be ready in a matter of minutes. My family and I have been eating some form of Ramen style noodles for years. We all have had those days when we just didn’t feel like cooking much or maybe could not afford a four course meal. Ramen noodles are an excellent choice to have on hand that partner with a wide variety of meats and vegetables. This recipe demonstrates how I use a sauce pan to stir fry my noodles with some fresh vegetables and tender chicken. I absolutely love to have fresh slightly crunchy vegetables with my noodles and my family appreciates the addition of some tasty protein like chicken. This is a personal recipe I have been using for years. My teenagers cook it about as good as I do and it is a great “go find something in the kitchen” and eat adventure for the beginners in our lives. A meal like this is affordable and has excellent taste appeal that is worth every bite.

In a small bowl: combine all the sauce ingredients and mix. Set aside until ready to use. 

Heat the pan to medium-high. Add 2 tbsp oil and wait for 30 seconds. Add onion, garlic and cook for 1-2 minutes or until fragrant.

Add meat and cook for 3-4 minutes or until no longer pink.

Add sauce and mix.

Add carrots and cook for 1-2 minutes. Push the meat and vegetables to the side.

Place ramen noodles in the center and add water. Cook for 1 minute, then flip and continue to cook for several minutes until the noodles have softened (use tongs or chop sticks to untangle the noodles). Watch video for reference.

Add chopped bok choy and mix everything together.

Cook for 1-2 minutes until the sauce has reduced to your liking.

Garnish with green onion, sesame seed and chili oil. Serve & enjoy!

Ingredients
  

  • 2 package ramen noodles about 2-3 oz each
  • 2 cups chopped bok choy can substitute for cabbage
  • 1 cup water
  • 2 tbsp olive oil
  • 1 chicken thigh (about 7 oz) skinless, boneless & cut into cubes
  • 1 medium carrots julienned
  • 3 garlic cloves minced
  • ½ onion sliced

Sauce

  • 1 tbsp soy sauce
  • 1 tbsp hoisin sauce
  • 1 tbsp oyster sauce
  • 1 tbsp shaoxing cooking wine or dry sherry
  • 1 tsp dark soy sauce

Instructions

    Instant Pot Basic Congee (Rice Porridge)

    Instant Pot Basic Congee is a filling simple to make traditional peasants meal that goes great with just about anything you throw at it. The Congee is best served steaming hot and covered with your favorite toppings. I normally serve this with some sort of protein such as eggs, strips of chicken, or Chinese sausage.     Instant Pot Basic Congee (Rice Porridge)

    Instant Pot is much easier and quicker when cooking Congee (rice porridge) compared to the traditional stove top method. With the Instant Pot you’ll have home cooked hot soup within 30 minutes.

    • Pressure Cooker / Instant Pot

    Ingredients
      

    • 1 cup white rice
    • 4 cups low- sodium chicken broth
    • 4 cups hot boiling water or chicken broth
    • 1 oz fresh ginger about 4 slices
    • ½ tsp salt

    Toppings: fried garlic, fried shallots, chopped green onion, chinese sausage, Thai peppers, chili oil, soy sauce, soft-boiled egg or chinese donut.

    Instructions
     

    • Rinse and drain the rice twice. Place rice, water, broth, salt and gingers in the cooker.
    • Place the lid on. Pressure cook on high for 20 minutes, followed by a 15 minutes natural release . Follow the manufacture instructions for releasing the pressure. Remove the lid. 
    • Discard the gingers and stir. Season with salt to taste.

    Garnish with fried garlic, fried shallots, chopped green onion, chinese sausage, Thai peppers, chili oil, soy sauce, soft-boiled egg or chinese donut. Serve and enjoy!

      Teriyaki Steak Stir Fry

      A more traditional inspired teriyaki style stir fry this recipe packs sharp contrasting flavors with piquant notes that subtly wash away from the pallet when served with a delicious fresh warm rice. This sauce is not sticky or over powered with cheap shortcuts to sweeten some versions available for consideration. The flavors of this sauce are generated from one of the featured ingredients (name of Japanese sauce). The more times I tried to tweak this recipe the more times I found myself exploring the ranges of flavors that come from the use of too much or not enough of this (Japanese sauce). I found after a couple of interactions that the preferred amount to achieve elegance and style we all love in a gorgeous bowl of tender flavored steak slices dripping over a bed of fresh jasmine rice.

      Clean and trim fat from the steak. Slice the steak against the grain. Place the steak in a bowl.

      In a small bowl: combine sugar & soy sauce. Stir until the sugar dissolves then add mirin and sake as you continue to stir.

      Pour the sauce over the steak and turn the meat until well mixed. Let marinate for 30 minutes.

      Heat a pan up to medium-high. Add 2 tbsp oil and wait for 30 seconds. Add marinated steak only. Reserve the sauce. Stir continuously and cook for 3-4 minutes or until ~75% of the meat is medium to well done. Turn down the heat to medium.

      Meanwhile, mix cornstarch and water together. Stir until the cornstarch has completely dissolved. Pour the cornstarch mixture in the pan.

      Pour the reserved sauce in the pan.

      Mix and cook for 4-6 minutes or until the liquid has thickened and the steak soaks up most of the sauce.

      Serve with your favorite rice. Garnish with toasted sesame seeds & chopped green onions. Enjoy!

      • 1 ½ lbs sirlion steak substitute with flank steak
      • 4 tbsp soy sauce
      • 4 tbsp sake cooking wine substitute with dry sherry, dry white wine, shaoxing wine or chinese rice wine
      • 4 tbsp mirin
      • 2 tbsp granulated sugar or brown sugar
      • 2 tsp water
      • 1 tsp cornstarch
