  • Masterbuilt 10 Liter XL Electric Turkey Fryer 

Ingredients
  

  • 12-18 lbs whole turkey
  • ¼ cup sea salt 1 ½ tbsp per-lb
  • 2 tbsp sugar ½ tsp per-lb
  • 11-13 qt peanut oil

Instructions
 

  • [If using a frozen turkey; thaw in the refrigerator 48-72 hours prior to use.] Remove the turkey from the refrigerator and remove neck, giblets and package; reserve for giblet gravy or discard if you prefer.
  • Brine- In a small bowl: combine salt and sugar (see notes in the recipe for references per-lb). Clean, rinse and pat the turkey dry with paper towels. Rub the salt mixture all over turkey. Place a wire rack on a baking sheet, then place turkey on top of the wire rack (watch the video for reference). Place turkey in the refrigerator uncovered for 24 hours (up to 2 days).

Frying **Read and follow ALL safety instructions and protocols**

  • Remove the turkey from refrigerator and let sit for 1-2 hour prior to frying. Make sure it is completely thawed and free from water. Do not rinse the salt off.
  • Make sure the drain valve is close before adding the peanut oil. Pour the oil to the max line (do not go above the line) and close the lid. Preheat the oil at 375°F for 45-60 minutes.
  • Place the whole turkey in the basket. Wear extreme heat resistant gloves, to protect hands and forearms. Use the lifting hook to lift the basket by the handle (see pictures and video for reference before proceeding to next steps).
  • Open the lid. THEN VERY SLOWLY & GRADUALLY LOWER the basket into the hot oil. (It took me about 5 minutes to lower the turkey in the hot oil). Close the lid and cook 3.5-4 minutes per-lb (see picture and video for reference).
  • While wearing your extreme heat resistant gloves: Use the lifting hook to secure basket handle, very slowly lift the basket out of the hot oil (slowly & carefully). Then using the baskets drain clips, hook the basket to the fryer's mounting position using the hole located atop the fryer (see picture and video for reference). Let turkey rest for 10 minutes. THEN, place basket with the turkey on a baking sheet and let the turkey rest until ready to serve/crave.

    Slow Cooker Turkey Bone Stock

    Slow Cooker Turkey Bone Stock is the perfect use for your leftover roasted turkey bones from the holidays. Put them in the slow cooker, add a couple of vegetables & water. That’s it, you’ll have homemade turkey bone stock. Simple and savory flavor that is far superior to store bought broth, when made using the slow cooker. With some ingredients (not including filtered water) you can have delicious homemade stock ready for use as you prepare for your next food adventure. Follow this recipe and you should end up with 12-16 cups of authentic clear stock that will elevate the freshness of your next dish. 

    If you want to make a truly home cooked dish leave the cans and cartons of broth on the shelf at the store. Start your next broth based meal with no artificial preservatives and less salt. When you consider the number of cups as compared to the cost of the fancy carton you end up saving dollars and having more broth. If you are using cubes, cans or cartons of broth; please give this a try and step up your homecoming game. Watch the video, read the instructions and you will never (under normal circumstances) plan to use factory made broth again. 

    When you don’t have time to stew or simmer a whole chicken and don’t want to be in the kitchen for hours, this recipe is for you. You’ll get clear fresh stock with minimal effort in the most efficient and timely manor possible (need I say more?). You can refrigerate the stock for up to a week or freeze up to 3 months.

    Place roasted turkey bones in the slow cooker.

    Add the rest of the ingredients. Optional: add turkey neck, giblets, thyme, bay leaves or parsley. Fill with water, leaving at least ½” room on top. 

    Cook on low for 18-24 hours.

    Discard the bones and vegetables. Place a mesh/strainer on top of a mixing bowl. Pour the liquid through a fine strainer or you can scoop out the grease that is floating around the top.

      [If using a frozen turkey; thaw in the refrigerator 48-72 hours prior to use.] Remove the turkey from the refrigerator and remove neck, giblets and package; reserve for giblet gravy or discard if you prefer. Brine- Clean, rinse and pat the turkey dry with paper towels. Rub the salt all over turkey. Place a jar that fits inside the turkey’s cavity. Let the turkey sit up (watch the video for reference). Place turkey in the refrigerator uncovered for 24 hours (up to 2 days).

      Preheat the oven to 425°F. Remove the turkey from refrigerator and let sit for 1 hour prior to stuffing the cavity. Do not rinse the salt off. Stuff the onion, garlic head, lemon, apple, rosemary, sage & thyme into the turkey’s cavity. Tie the legs together. 

      Place carrots & celery in the bottom of the dutch oven. Place stuffed turkey on top. Tuck the wing underneath the turkey leg (tip: use a bamboo stick about 2″ long to pin the wing). 

      Use one hand to loosen and lift the turkey breast skin. Coat/Rub 3 tbsp butter on each side of the breast just beneath the skin. Brush melted butter all over the turkey.

      Cook uncovered for 5 minutes at 425°F. Then turn down the heat to 350°F. Cook for 13 minutes per-pound (2:10 hrs total for 10 lbs). Remove turkey from the oven. Let the turkey sit in the dutch oven for 15 minutes. Transfer the turkey to a serving tray and tent with aluminum foil.

      Use a fine mesh and strain the liquid; discard the carrots & celery. Pour liquid in a measuring cup. You should have about 2 cups of turkey broth/liquid + grease when done. Let the grease float on top. Slowly pour grease in the dutch oven. Turn up the heat to medium high. Then add flour as you whisk. Slowly add the turkey broth, whisk until smooth. Add Worcestershire sauce and whisk. Pour in chicken broth and whisk. Let simmer for 10-15 minutes or until the desired consistency. Season with salt and pepper as needed. 

      Serve & Enjoy!

      Brine

      • 10 lbs turkey
      • 2 tbsp salt

      Additional

      • 6 tbsp unsalted butter softened
      • 2 tbsp melted butter
      • 1 onion quartered
      • 1 apple cut in half
      • 1 lemon cut in half
      • 1 garlic head
      • 3 carrots cut in half
      • 2 celery ribs cut 3" in length
      • 3 sprigs fresh rosemary
      • 3 sprigs fresh thyme
      • 2 sprigs fresh sage

      Instructions

        Add 12 cups of water and bring it to boil. Add paprika, peppercorn, oregano, thyme, rosemary, brown sugar, kosher salt, bay leaves and mix. Let boil for 10 minutes. Turn off the heat. Add onion, garlic & cinnamon stick to the pot. 

        Remove pot from the heat source. Let the pot sit at room temperature for 15 minutes.

        Then, add ice to the pot and let sit at room temperature for about 2 hours. 

        Place turkey in a large pot or container. Pour brine over the turkey. Add more cold water to cover the turkey. Make sure the turkey is submerged in the brine. Add any additional ingredients to the pot you desire. 

        Cover and place the turkey in the refrigerator. Brine the turkey for 24 hours or for up to 2 days. Remove the turkey from the refrigerator. Rinse the turkey to remove any excess salt. Pat dry the turkey dry and follow your favorite instructions to cook the turkey.

        Blend for 60-75 seconds or until smooth. Season with salt to your preference. 

        Smear butter on the inside of the buns and toast until crisp around the edges. Spread sauce over the buns.

        • 4 thick sliced bread
        • 2-4 sliced provolone, havarti or swiss cheese

        Chipotle Ranch Sauce

        • ½ cup mayonnaise full fat
        • ½ cup sour cream full fat
        • ¼ cup buttermilk
        • 2 chipotle peppers in adobo sauce more if you like it spicy
        • 2 tbsp chopped green onion
        • 2 tbsp lime juice
        • 1 tsp onion powder
        • 1 tsp garlic powder
        • 1 tsp dried parsley
        • ½ tsp dried dill
        • ½ tsp salt
        • ¼ tsp pepper

        Instructions

          Bone-in turkey breast

          Rub olive oil all over the turkey.

          In a small bowl: combine salt, rosemary and thyme together. Then, coat the seasoning mixture all over. 

          Place the turkey (skin side down) in the air fryer basket. Cook for 40 minutes. 

          Flip the turkey (skin side up) and cook for another 12-15 minutes or until the skin is golden brown and the internal temp reaches 165°F. 

          I highly recommend using a meat thermometer to check for doneness. Do not overcook the turkey.

          Remove turkey from the basket and place on a serving tray. Rest for 10 minutes.

          • 5 lbs bone-in turkey breast
          • 2 tbsp olive oil
          • 2 tsp salt
          • ½ tsp dried rosemary

          Instructions
           

          • Preheat the air fryer (8QT) to 350°F.
          • Remove turkey breast from the refrigerator and let sit in room temperature for 30 minutes. Rinse, clean and pat the turkey breast dry (using a paper towel).
          • In a small bowl: combine salt, rosemary and thyme together. Set aside.
          • Rub olive oil all over the turkey. Then, coat the seasoning mixture all over.
          • Place the turkey (skin side down) in the air fryer basket. Cook for 40 minutes.
          • Flip the turkey (skin side up) and cook for another 12-15 minutes or until the skin is golden brown and the internal temp reaches 165°F. I highly recommend using a meat thermometer to check for doneness. Do not overcook the turkey.
          • Remove turkey from the basket and place on a serving tray. Rest for 10 minutes.
