In a bowl: combine chili powder, onion, garlic, cumin, salt, black pepper, paprika, cayenne pepper and mix. 

Pour broth, tomato puree and season mixture in the slow cooker. Mix everything together.

Place beef in the slow cooker and coat both sides with sauce. Add bay leaves.

Cover with lid. Slow cook on low for 10-12 hours or until fork tender (or cook on high for 5-6 hours). Instant Pot, Stove Top & Oven instructions are under the notes. Discard bay leaves.

Place roast in a bowl/plate.

Shred the roast and discard any fat (optional). 

Return shredded beef back into the slow cooker. Add lime juice and mix everything together. Season with more salt if needed. 

Serve as tacos, enchiladas, burrito, salad, sandwiches, nachos or with rice.

Ingredients
  

  • 3 ½ – 4 lbs chuck roast boneless
  • ½ cup unsalted low-sodium beef broth
  • ½ cup tomato puree
  • 3 tbsp lime juice
  • 2 tbsp chili powder
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tsp ground cumin
  • 1 ½ tsp salt
  • 1 tsp black pepper
  • 1 tsp spanish paprika
  • ½ tsp ground cayenne pepper
  • 3 bay leaves

Instructions
 

  • Pat the beef dry with a paper towel and set aside. In a bowl: combine chili powder, onion, garlic, cumin, salt, black pepper, paprika, cayenne pepper and mix.
  • Pour broth, tomato puree and season mixture in the slow cooker. Mix everything together. Place beef in the slow cooker and coat both sides with sauce. Add bay leaves.
  • Cover with lid. Slow cook on low for 10-12 hours or until fork tender (or cook on high for 5-6 hours). Instant Pot, Stove Top & Oven instructions are under the notes.

    Notes

    Instant Pot: Pressure cook on high for 1 hour with a full natural release (about 30 minutes). Follow the manufacture instructions for releasing the pressure.
    Stove Top: Bring the dutch oven or pot to a simmer. Cover with lid and turn the heat down to low. Cook for 2 ½ -3 hours or until the meat is fork tender.
    Oven: Preheat the oven to 325°F. Place the dutch oven or pot with lid in the middle rack of the oven. Cook for 3- 3 ½ hours or until the meat is fork tender.

    In a shallow dish or ziplock bag: add olive oil, lemon juice, soy sauce, Worcestershire sauce, garlic, black pepper, thyme, red pepper flakes ,and mix. Add London Broil and coat both sides.

    Cover and refrigerate for 4 hours, preferably overnight. Don’t forget to flip the meat at the half way point. Remove meat from the refrigerator and let sit at room temperature for 30 minutes. 

    Preheat the broiler to high. Position the oven rack 4″ from the heat source. Wrap the baking sheet in aluminum foil for easy cleaning later or ceramics baking dish. Broil for 4-5 minutes per/side for medium-rare.

    Rest for 10 minutes before slicing. Grease the skillet or grill with olive oil. Preheat to medium-high (heat and wait for several minutes until hot). Sear 3 minutes per-side for medium rare and charred on the outside ~ (5 minutes per-side for medium, 8 minutes per-side for well done). Note: cooking time may vary depending on the thickness of the meat.

    Slice the steak against the grain.

      Clean, peel & grate the potatoes. Then place them in a bowl.

      Add salt, pepper, onion, garlic and combine everything together.

      Scoop ¼ cup grated potatoes and place them in the muffin tins.

      Gently press the potato hash on the bottom and work to form up sides making cups. Optional: Squeeze the potatoes to remove excess liquid.Preheat the oven to 400°F (218°C). Coat the muffin tin with olive oil cooking spray. Place muffin tins in the oven and bake for 15 minutes. 

      Remove the muffin pan (tin) and turn down the heat to 375°F (190°C). Highly recommended: Open the oven to let out the heat out. Add 1 egg to each muffin tin cup.

      Then bake for 10 minutes for runny yolk, 12 minutes for jammy or 14 minutes for a slightly hardened yolk.

      When ready, use a butter knife or fork to gently remove the muffins from the pans cups.

      Season with salt, black pepper, Parmesan cheese or fresh parsley.

      • 1 lb sweet potatoes peeled & shredded
      • 12 large eggs cold
      • ½ tsp salt
      • ½ tsp onion powder
      • ½ tsp black pepper

      Instructions

          In a small bowl: combine all the seasoning ingredients together and mix. Set aside.

          Rinse, clean and pat the turkey breast dry (using a paper towel). Rub the seasoning mixture all over the turkey breast. Place the breast in the slow cooker. Add garlic, broth, thyme and onion to the cooker then cover with lid. Slow cook on low for 6 hours.

          Remove breast from the slow cooker and transfer to a baking sheet. Broil the breast in the oven for 5-6 minutes or until golden. Cover with aluminum foil until ready to serve.

          Use a fine mesh and strain the broth; discard the vegetables and fat. Set aside until ready to use.

          Heat the sauce pan to medium-high. Melt the butter then add flour as you whisk. Slowly add the broth, whisk until smooth. Add Worcestershire sauce as you continue to whisk. Turn down the heat to medium and let simmer for 7-8 minutes or until desired consistency. Season with salt and pepper.

          Slice the breast and place on a serving platter. Serve with gravy and enjoy!
