Easy Brookies (Cookie & Brownie Bars)

Brookies are moist, gooey, rich and heat punningly delicious. The novelty of these snacks make them an adventure to prepare and a conversation starter to enjoy when sharing with others. Delicious tasty and good to the last bite, these addictive treats are perfect as a snack or with your morning coffee. I love explaining the n name and the target textures as I watch my friends and family take their first bite.  I enjoyed this recipe and recommend you try it at least once to see for yourself how delicious it really is.

Cookie : Preheat the oven to 350°F. Grease the 9″x 13″ pan with butter or baking cooking spray. Optional: place parchment paper on the bottom of the pan (this will help to remove the cookie). In a bowl: add butter, brown sugar and beat until smooth.

Add eggs, vanilla extract and mix everything together.

Add flour, baking powder, salt and mix. Do not over mix the batter.  Highly recommend that you sift the dry ingredients before mixing them into the wet ingredients. 

Add 1 cup chocolate chips and mix. 

Transfer the batter to the pan. Use your fingers to spread the batter. 

Brownie: In a separate large bowl: add eggs and sugar. Beat until well combined.

Add melted butter, vanilla extract awhile continuing to mix. Add flour, baking powder, cocoa powder & salt to the bowl.

Mix everything together. Again, highly recommend that you sift the dry ingredients before mixing them into the wet ingredients. 

Use an ice cream scooper or ladle to layer the brownie batter on top of the cookie batter. Leave the brownie batter alone being careful to not smear.

Bake

Bake for 20-22 minutes. Careful not to overcook, the brownies are meant to be gooey. Keep an eye on the edges for optimal soft & gooey results.

Remove from oven and let cool in the pan for 45-60 minutes. Once cool to the touch remove and cut into bars.

Serve & enjoy!

Ingredients
  

Brownie

  • 1 cup granulated sugar
  • ¾ cup all-purpose flour
  • ½ cup unsalted butter softened
  • â…“ cup unsweetened cocoa powder
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • ¼ tsp baking powder
  • 2 large eggs room temperature

Cookie

  • 1 ½ cups all-purpose flour
  • 1 cup brown sugar
  • 1 cup semi-sweet chocolate chips
  • ½ cup unsalted butter softened
  • 2 tsp baking powder
  • 1 tsp vanilla extract
  • ¾ tsp salt
  • 2 large eggs room temperature

Instructions
 

  • Preheat the oven to 350°F. Grease the 9"x 13" pan with butter or baking cooking spray. Optional: place parchment paper on the bottom of the pan (this will help to remove the cookie).

    Sheet Pan Chicken & Sweet Potatoes with Avocado Cilantro Sauce

    Sheet Pan Chicken & Sweet Potatoes with Avocado Cilantro Sauce is saturated with natural flavors and smooth fresh flavors. This is another simple to make and everyone will love how delicious and filling it is. I do prefer fresh from the oven because each ingredient still has a unique flavor and texture. But the sweet combination that comes after reheat is pretty good also. We like our hearty meals around here and this one went pretty fast. Fall off the bone tender meat and soft warm vegetables is a nice meal. Recommend adding French bread or corn bread to the table just because you may want to dip your bread in the juices.

    Preheat the oven to 425°F. Chop sweet potatoes. Add sweet potatoes cubes to the baking sheet. Add olive oil and salt. Mix everything together. Bake for 15 minutes. 

    In a small bowl: combine garlic, onion, paprika , salt, red flakes, black pepper, and cumin.

    Mix

    Cut chicken breast into cubes.

    In a separate bowl: add chicken cubes, extra virgin olive oil and mix. Then, add seasoning and mix everything together until well coated. Add sliced lemon while continuing to mix. 

    Remove baking sheet from oven. Then, push the sweet potatoes to one side. Add chicken cubes to the other side of the baking sheet. Bake another 20 minutes or until the internal chicken reaches 165°F. Remove baking sheet from the oven. Let

    Avocado Cilantro Sauce :

    Place all the ingredients in a food processor or blender. Blend for 60-75 seconds or until smooth. Add more water if it’s too thick. Season with salt to your preference.

    Rest for 5-6 minutes before serving. 

    Serve and enjoy!

    Ingredients
      

    Marinate Chicken

    • 2 lbs chicken breast or thighs cut into cubes
    • 2 tbsp extra virgin olive oil
    • 2 tsp ground cumin
    • 2 tsp paprika
    • 1 tsp salt
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • ½ tsp black pepper
    • ½ tsp red pepper flakes
    • 1 lemon sliced

    Sweet Potatoes

    • 2 large sweet potatoes peeled & cut into cubes
    • 2 tbsp olive oil
    • ½ tsp salt

    Avocado Cilantro Sauce

    • 1 ripe avocado
    • 1 medium jalapeño
    • ½ cup water
    • â…“ cup chopped cilantro
    • 1 garlic clove
    • 1 tbsp lemon juice
    • ½ tsp ground cumin
    • ½ tsp salt

    Instructions
     

    • Preheat the oven to 425°F. Wrap the baking sheet in aluminum foil for easy cleaning later or grease with oil.
    • Add sweet potatoes cubes to the baking sheet. Add olive oil and salt. Mix everything together. Bake for 15 minutes.

      Clean, peel & cut sweet potatoes into cubes. Place potatoes in a pot. Add enough water to cover the potatoes (above 1″). Optional: add a pinch of salt to the pot.

      Bring the pot to a boil (uncovered). Then turn down the heat to medium and cook for 20-30 minutes or until the potatoes are fork tender.

      Drain potatoes. Place in a bowl. Add butter, salt & garlic then smash with a potato masher.

      Add milk & sour cream.

      Smash until smooth.

      Season with salt, cinnamon or black pepper if you prefer.

      Garnish with butter or sour cream. Enjoy!

      • 3 tbsp sour cream

        Preheat the oven to 400°F. Coat the muffin tin with cooking spray or butter (optional: use muffin paper liner). In a large bowl: add brown sugar, eggs, milk, oil, vanilla extract and mix well. 

        Once the mixture is uniform: add in the flour, baking powder, baking soda, salt, cinnamon. Combine using a mixer.

        Add the oats while continuing to mix until all ingredients are well combined.

        Add ½ cup raisins & ½ cup chocolate chips. Use a spatula to fold the batter.

        Use an ice cream scooper or spoon to measure even portions. As you carefully place each scoop of batter in the muffin tin (should be exactly 12 scoops).

        Place the other ¼ cup raisins on top of the muffin batter in the tin. Optional: sprinkle sugar or oats on top of the batter. 

        Bake for 18-20 minutes or until golden brown.

        Let the muffins cool in the tin for about 5 minutes and then transfer them to a baking rack to finish cooling completely.

        Serve & enjoy! Can be kept up to a week.

          Pour the extra virgin olive oil on the chicken then mix. Add seasoning. Mix until well coated. Marinate for at least 15 minutes or up to 8 hours.

            Ripe Bananas

            Smash the ripe bananas using a fork or potato masher.

            Add brown sugar, butter, eggs, vanilla extract and mix.

            In a bowl: add flour, salt & baking soda while mixing everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy).

            Combine wet and dry ingredients together. Mix well.

            Then transfer the batter to the loaf pan.

            Bake for 55-65 minutes or until a toothpick placed in the center of the bread comes out clean.

            Remove from the oven and rest the bread in the pan for 15 minutes before transferring the loaf to a baking rack to finish cooling.

            • 4 large ripe bananas or 5 medium size
            • 1 ½ cups all-purpose flour
            • ¾ cup brown sugar
            • ½ cup unsalted butter softened/ room temperature
            • 1 tsp vanilla extract
            • 1 tsp baking soda
            • ½ tsp salt
            • 2 large eggs room temperature

            Instructions
             

            • Preheat the oven to 350°F / 176°C. Lightly grease the loaf pan (9" x 5") with softened butter & flour or coat with flour cooking spray. (optional: line the inside of the pan with parchment paper).
            • In a bowl: add flour, salt & baking soda while mixing everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy).
