Creamy Tomato & Spinach Pasta

Delightful warm chewy pasta with mouthwatering creamy tomato sauce featuring the natural green taste of fresh spinach. This affordable and easy to make selection is perfect on any occasion.  Full of flavor, textures and at a budget price, this is perfect normal meal planning. Quick and tasty this recipe will fill the hunger without breaking the bank. I do enjoy mine with warm French bread but that is not uncommon in my house. We enjoyed this fresh creamy dish and recommend you try it at least once to see for yourself how delicious it really is.

Heat the pan to medium-high. Add olive oil and onions. Sauté for 2-3 minutes or until fragrant. Add in the tomatoes and garlic while mixing everything together. Cook for another 2-3 minutes or until fragrant.

Add Italian seasoning, salt, pepper, red pepper flakes, tomato paste, heavy whipping cream, parmesan cheese and the reserved pasta water to the pan. Gently stir everything together.

Add in the cooked pasta and mix thoroughly until well coated with sauce.

Add fresh spinach while folding and mixing.

Continue to cook and mix everything together until the spinach has fully wilted (add more water if the sauce is too thick for your liking). Season with salt & pepper as needed. Then remove from heat source.

Add Parmesan cheese and mix. Season with salt & pepper as needed.

Garnish with Parmesan cheese.

Serve and enjoy!

Ingredients
  

  • ½ lb pasta any types
  • 8 oz chopped tomatoes or diced
  • 6 oz fresh spinach
  • ½ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp salt
  • ½ tsp red pepper flakes
  • ¼ tsp black pepper
  • ½ onion chopped
  • 2 garlic cloves minced

Instructions
 

  • Follow the instructions on the package for pasta cook time (al dente). Then reserve about ½ cup of the pasta water.
  • Heat the pan to medium-high. Add olive oil and onions. Sauté for 2-3 minutes or until fragrant. Add in the tomatoes and garlic while mixing everything together. Cook for another 2-3 minutes or until fragrant.
  • Add Italian seasoning, salt, pepper, red pepper flakes, tomato paste, heavy whipping cream and the reserved pasta water to the pan. Gently stir everything together.

    Add the vegetables and mix. Set aside until ready to use.

    Slice the bread in middle and place on a baking sheet.

    Layer the bottom with sliced cheese, ham, salami.

    Pepperoni on the bread.

    Toast for 5 minutes or until the cheese has melted.

    Add tomatoes

    Add salad. Season with fresh pepper.

    Top with the remaining half of the bread.

    Use a bread or sharp knife to slice the sandwich. Enjoy!

    Ingredients
      

    • 1 lb Italian bread/loaf
    • 8 oz provolone cheese
    • ½ lb deli ham
    • ½ lb deli salami
    • ½ lb deli pepperoni

    Salad Mixture

    • ½-1 head iceberg lettuce sliced
    • ¼ red onion thinly sliced
    • cup sliced pepperoncini
    • ½ cup real mayonnaise
    • 3 tbsp grated Parmesan cheese
    • 2 tbsp red wine vinegar
    • ½ tbsp granulated sugar
    • 1 tsp Italian seasoning
    • 1 tsp dried oregano
    • ½ tsp red pepper flakes
    • 2 garlic cloves grated or minced

    Instructions
     

    • In a large bowl: combine mayonnaise, Parmesan cheese, red wine vinegar, sugar, Italian seasoning, oregano, red flakes, garlic and mix well. Add lettuce, red onions, pepperoncini and mix together. Set aside until ready to use.
    • Preheat the oven to 350°F.
    • Slice the bread in middle and place on a baking sheet. Layer the bottom with sliced cheese, ham, salami, pepperoni on the bread. Toast for 5 minutes or until the cheese has melted.
    • Assemble: remove the bread from the oven. Toss the salad with the dressing. Place on top of the meat. Then add sliced tomatoes. Season with fresh pepper. Top with the remaining half of the bread.
    • Use a bread or sharp knife to slice the sandwich.

    Serve immediately & enjoy!

      In a bowl: combine everything together.

      Mix well.

      In a large bowl: combine pasta and tomato sauce together.

      Cooking Spray

      In this order – 1st layer: Add 2 ½ cups of pasta sauce.

      Add 2 cups uncooked ziti.

      Add half of the ricotta mixture.

      Add 1 cup grated Parmesan cheese.

      Add ½ cup mozzarella cheese.

      • 1 lb uncooked ziti pasta
      • 2 (24-25 oz) pasta sauce
      • 15 oz tomato sauce
      • 2 cups shredded mozzarella cheese

      Ricotta Cheese Mixture

      • 15 oz ricotta cheese
      • 2 cups grated Parmesan cheese
      • ½ cup fresh chopped parsley
      • 2 large eggs

      Instructions
       

      Ricotta Mixture

      • In a bowl: combine everything together and mix well.

      Sauce

      • In a large bowl: combine pasta and tomato sauce together.

      Slow Cook

      • Grease the cooker with cooking spray.

        Peposo (Pepper Beef Stew)

        Old world style Peposo (Pepper Beef Stew) is tenderly succulent over a warm bed of deliciously filling Polenta. This savory tummy pleaser is so tasty everyone that tries it inevitably likes it. I love to feed this to my hungry teenagers, as they appreciate a nice hearty meal that will stay with them on their busy days.         Use a mortar and pestle to grind whole peppercorns.

        Then set aside.

        Using the same pestle: smash garlic cloves.

        Pat the beef dry. Place the beef in a large bowl.

        Add the smashed garlic, tomato paste, salt then mix well.

        Coat the beef with crushed peppercorns.

        Mix Well.

        Place beef in a dutch oven or pan (with lid).

        Add chianti (Italian red wine) to the pan.

        Add bay leaves & thyme.

        Sprinkle more black pepper on top of the meat. Bring to a simmer (medium-high).

        Reduce the heat to low and cover with a lid for 2 hours.

        Remove the lid and cook uncovered for 45-60 minutes or until meat is very tender. Make sure to baste the meat with the liquid frequently, this will prevent the meat from drying. Discard bay leaves & thyme. Season with salt and a bit more black pepper.

        Serve with bread and polenta.

        • 2 lbs chuck roast cut into 1.5" x 1.5" cubes
        • 750 ml Chianti (Italian Red Wine) about 1 bottle
        • 2 tbsp tomato paste
        • 1 tbsp whole peppercorn
        • 2 tsp salt
        • 8 thyme stems
        • 2 bay leaves
        • 5 garlic cloves
        • black pepper to taste

        Instructions

          Heat the skillet to medium high. Add oil and wait until it gets hot. Sear all sides of the Italian sausages. Remove and set aside.

          Add sliced onions, sliced peppers, salt, peppers, red pepper flakes, Italian seasoning and mix.

          Sauté for 3-4 minutes. Add garlic and mix.

          Return seared sausages to pan atop the bell peppers. Place the skillet in the oven. Bake for 20 minutes.

          Place provolone cheese on the Italian hoagies or subs. Toast to your liking.

          Place sausage and peppers on the hoagies.

          Serve with hot marinara sauce.

            Add 3 sliced pepperoni on top.

            Then add 1 tbsp shredded mozzarella cheese. Gently fold and roll the dough to the point end.

            Preheat the air fryer to 350°F (176°C). Coat the air fryer basket with cooking spray. Place the crescents in the basket.

            Cook for 6 minutes or until golden brown. (Do not use parchment paper).
