Parmesan Chicken with Lemon Butter Sauce

Parmesan and chicken go great together. This recipe adds some tasty sauce to an already delicious parmesan chicken recipe. The rich butter and natural lemon flavors make one of the most savory Chicken entree combinations you will find as an affordable menu selection. These ingredients are widely available and are normally very reasonably priced. Having a large family, I am continuously buying in bulk. I normally buy family packs of chicken and then look for at least two meals tot feature them. Butter and lemon are very good with chicken. Throw in delicious parmesan cheese and you will have an aristocratic simple meal the entire family will enjoy.

Clean and slice the chicken in half lengthwise (4 filets). Optional: Use a meat pounder to tenderize the each chicken to an even â…“” thick. 

Mix flour, parmesan cheese, Italian seasoning, salt, pepper in a shallow.

Then whisk the eggs in a separate dish.

Soak the chicken breast in the eggs and then coat them with the parmesan mixture on both sides (gently shake off excess) and transfer to a plate. Repeat steps with remaining chicken.

Heat the skillet or non-stick pan to medium heat. Add olive oil and wait for 30-45 seconds or until hot. Fry the breaded chicken 3-4 minutes per-side or until crispy and golden.

Reduce the heat if they are growing too fast (monitor for even cooking per side). Depending on the size of your pan, you may need to do this in 2 batches. Return all chicken to the skillet/pan. Turn down the heat to low.

In a separate pan; add all the sauce ingredients together and whisk. Turn up the heat to medium and simmer for 3-4 minutes. Season with salt & pepper to taste.

Pour the sauce over the chicken and let simmer for 2-3 minutes.

 (flip and move/rotate the chicken for best results)

Garnish with sliced lemons and fresh parsley. Enjoy!

Ingredients
  

  • 1 ½ lbs chicken breast
  • 2 tbsp extra virgin olive oil
  • 2 eggs

Parmesan Breading

  • 1 cup grated Parmesan cheese
  • ¼ cup all-purpose flour
  • 1 tbsp Italian seasoning
  • ½ tsp salt
  • ¼ tsp black pepper

Lemon Sauce

  • ¼ cup olive oil
  • ¼ cup unsalted butter
  • ¼ cup lemon juice +/- just to your liking
  • 2 tsp brown sugar
  • ½-1 tsp salt
  • ¼ tsp black pepper
  • 3 garlic cloves minced

Instructions

    Spread monterey jack cheese.

    Add sharp cheddar cheese.

    Add sun dried tomatoes (with oil) on the rolls over the bottom halves.

    Then add the top half layer. Brush the melted butter over the tops of the rolls, then sprinkle with dried parsley. Cover with aluminum foil and bake for 30 minutes or until the cheese has melted.

    Grilled Cheese Sun Dried Tomato Sliders

    • 12 Hawaiian rolls
    • 1 ½ cups monterey jack cheese shredded
    • 1 ½ cups sharp cheddar cheese shredded
    • â…“ cup sun dried tomatoes with oil
    • 2 tbsp melted unsalted butter
    • 1 tsp dried parsley

    Instructions
     

    • Preheat the oven to 350°F.

      Olive Oil Bread Dip (Restaurant Style)

      • ½ cup extra virgin olive oil Preferably from italy
      • 1 tsp dried rosemary
      • 1 tsp dried parsley
      • 1 tsp dried oregano
      • ½ tsp onion powder
      • ½ tsp red pepper flakes

      • ¼ tsp salt to taste
      • 2 garlic cloves grated or minced

        Greek Salad with Yogurt Dressing

        Crunchy and refreshing greek salad is one of my personal favorites. Every time I would frequent my favorite Greek restaurant, I would savor the salad and wanted to learn to make it at home. I developed this recipe over the years and believe it is very close to the salads that inspired the attempt. Fresh ingredients and a good feta cheese make a big difference in the quality of the dish. Slightly zesty, with a slightly salty bite every once in a while, as the cucumbers compete with the spring mix and roasted peppers for texture changes while building a gorgeous flavor profile. The yogurt is the result of many attempts, I love how the zest from the lemon juice partners with the feta cheese, herbs and yogurt to form a creamy lightly tart taste that takes this salad to an experience worthy for any occasion as a side or a featured item.

        I first posted this salad as a dish partner in a previous video. I received several request to provide the recipe.         Greek Yogurt Dressing Ingredients

        In a bowl or jar, combine all the ingredients together.

        Mix well.

        Greek Salad Ingredients

        Chopped cucumbers, sliced cherry tomatoes, sliced red onions & cube feta cheese.

        Salad

        Add both olives, red onions, tomatoes.

        Add rest of the salad ingredients.

        Pour the dressing on top of the salad.

        Yogurt Dressing

        • ½ cup plain greek yogurt
        • ½ cup extra virgin oliveo oil
        • 2 tbsp red wine vinegar
        • 2 tbsp fresh lemon juice
        • ¾ tsp dried oregano
        • ½ tsp granulated sugar
        • ¼ tsp dried dill weed
        • 2 garlic cloves grated
        • season with salt & pepper to taste

        Salad

        • 1 spring mix bag
        • 1 english cucumber sliced
        • 3.5 – 4 oz feta cheese cut into cubes
        • 1 cup cherry tomatoes slice in half
        • ½ cup kalamata olives
        • ½ cup pitted green olive 
        • ½ cup roasted red peppers
        • ¼ cup red onion thinly sliced
        • 6-8 peperoncino

        Instructions
         

        Yogurt Dressing

        • In a bowl or jar, combine all the ingredients together and mix well.

        Salad

        • Layer all the salad ingredients into the bowl or serving platter.
        • Pour the dressing on top of the salad.
        • Mix and serve.

        Yogurt Dressing can be kept in an air tight jar and be refrigerator up to a week.

          Instant Pot Feta Pasta

          Creamy, saucy, slightly spicy with the perfect finish of fresh basil herbal notes is what you will have when following this Feta Pasta recipe using the Instant Pot. Like most of you I have seen the oven baked and other forms of Feta Pasta on different food channels. I was going through my kitchen and noticed I had half a block of my favorite Greek Feta cheese and decided to take it to the laboratory and generate a product for family consumption. The aromas when cooking are some of my favorite experiences and sautéed grape tomatoes with garlic are among my favorite. This recipe is in a bit reverse cycle but yields very similar results and can be made anywhere you can plug your IP up, so it is ever more versatile.

          Slowly appreciate the photos below and review the instructions to see just how to unlock the Feta Pasta recipe using your Instant Pot. Filling and simple this recipe is easy to follow and will be enjoyed by all. I enjoy my saucy pasta with slightly toasted slices of my local bakers french bread and suggest you serve yours with your favorite also. Choose a good quality for your feta to enhance the flavor profile but feel free to do as I did and use what you have on hand. This recipe features simple ingredients but I do highly recommend adding fresh basil. If you don’t already, I suggest you start growing your own basil this season as it is a must in many eat foodlicious dishes.

          Add pasta, water and mix.

          Place feta cheese, pepper flakes & basil on top of the pasta, don’t mix or stir.

          Press the canel button. Place the lid on. Pressure cook on high for 4 minutes and a quick release.

          Mash the feta cheese and mix everything together. Season with salt and pepper.

          Ingredients
            

          • 8 oz any pasta
          • 4 oz feta cheese (block) cut in half vertically
          • 1 pint cherry tomatoes
          • 2 cups water
          • ¼ cup fresh basil leaves chopped
          • 3 tbsp olive oil
          • ¼ tsp dried red pepper flakes
          • 3 garlic cloves minced
          • salt & pepper to taste

          Instructions
           

          • Set the sauté to high.
          • Add garlic and cherry tomatoes. Cook for 4-5 mintues or until the tomatoes are softened.
          • Add pasta, water and mix.
          • Place feta cheese, pepper flakes & basil on top of the pasta, don't mix or stir.
          • Press the canel button. Place the lid on. Pressure cook on high for 4 minutes and a quick release (be careful when releasing the pressure from the cooker). Follow the manufacture instructions for releasing the pressure. Remove the lid.
          • Mash the feta cheese and mix everything together. Season with salt and pepper.
          • If the sauce is too watery, press the sauté button and cook for 2-3 minutes or until excess water has evaporated.

            Instant Pot Greek Chicken

            This Instant Pot Greek Chicken delivers a gorgeous presentation with promises of a delicious and crispy reward that partners well with Tzatziki sauce. The chicken remains extremely tender and full of marinated juice and once removed from the broiler the aroma will turn your house into a home.             • ½ cup plain greek yogurt
            • 2 tbsp olive oil
            • 2 tbsp lemon juice about ½ lemon
            • 3 garlic cloves grated
            • ½ tsp salt
            • ½ tsp black pepper
            • ½ tsp dried oregano
            • ½ tsp dried thyme

            Serving (optional)
