Banana Chocolate Chip Muffins

Fluffy warm Bakery Style Banana Chocolate Chip muffins made form scratch are a treat everyone will love. Delicious tasty and good to the last bite. They smell delicious when baking in the oven and taste even better when fresh. Treat yourself and your family to an easy to make recipe of baking delight. My kids race to the kitchen in the morning to make sure they get at least one of these muffins for a breakfast snack to start their day. My husband loves his with morning coffee or evening tea. Soft rich and moist Banana Chocolate Chip Muffins that are simply delicious using this easy to follow recipe.

Smash the ripe bananas using a fork or potato masher.

Add brown sugar, eggs, vanilla extract & oil.

And mix

In a bowl: add flour, salt, baking powder & baking soda while mixing everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). Combine wet and dry ingredients together. Mix until well combined. 

Add ¾ cup of chocolate chips and fold with spatula. 

Use an ice cream scooper or spoon to measure even portions. As you carefully place each scoop of batter in the muffin tin (should be exactly 12 scoops)

Sprinkle ¼ cup of chocolate chips on top of the batter. 

Bake for 18-20 minutes or until lightly golden brown. Let the muffins cool in the tin for about 5 minutes and then transfer them to a baking rack to finish cooling completely.

Can be kept up to a week. Serve & Enjoy!

Ingredients
  

  • 3 large ripe bananas
  • 1 ½ cups all-purpose flour
  • 1 cup (divided) semi-sweet chocolate chips
  • ¾ cup brown sugar
  • ½ cup oil unsalted butter (melted)
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ½ tsp salt
  • 2 large eggs room temperature

Instructions
 

  • Preheat the oven to 350°F. Coat the muffin tin with cooking spray or butter (optional: use muffin paper liner).
  • Smash the ripe bananas using a fork or potato masher. Add brown sugar, eggs, vanilla extract, oil and mix.
  • In a bowl: add flour, salt, baking powder & baking soda while mixing everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy).

    Shredded Beef

    Pat the beef dry with a paper towel and set aside. In a bowl: combine chili powder, onion, garlic, cumin, salt, black pepper, paprika, cayenne pepper and mix. Pour broth, tomato puree and season mixture in the slow cooker. Mix everything together.

    Place beef in the slow cooker and coat both sides with sauce. Add bay leaves.

    Cover with lid. Slow cook on low for 10-12 hours or until fork tender (or cook on high for 5-6 hours). Instant Pot, Stove Top & Oven instructions are under the notes. Discard bay leaves. Place roast in a bowl/plate. Shred the roast and discard any fat (optional). Return shredded beef back into the slow cooker. Add lime juice and mix everything together. Season with more salt if needed. 

    Easy Enchiladas Sauce

    Heat the pan up to medium-high. Add oil and wait for 45 seconds. Add half of the flour to the pan; whisk. Continue to whisk and slowly add the rest of the flour. Slowly pour ½ cup of broth into the pan; whisk until smooth. Repeat this step 3 more times by adding ½ cup; whisk until smooth. Then slowly pour in the rest of the broth; mix and whisk until smooth with no lumps. Add chili powder, garlic, onion, salt, Mexican oregano, cumin, tomato puree and whisk until everything is combined. Bring to a simmer and reduce the heat to medium. Let it simmer for 10-15 minutes or until it thickens. Then, add white vinegar and whisk. Remove the sauce from heat and let cool. 

    Assemble

    Dip tortillas in the enchilada sauce (make sure both sides are coated). 

    Add ⅓-½ cup of shredded beef. Add ¼ cup of Mexican cheese. Roll the tortillas tightly and place them in the baking dish, seam side down.

    Pan fry- heat the oil to medium-high heat. Fry tortillas and set aside. Microwave- wrap the tortillas in a damp paper towel and cook for 1 minute. Set aside. Preheat the oven to 350°F. In a 9″x13″ baking dish. Add ¼ cup enchilada sauce. Coat bottom and sides with sauce. 

    Add 2 cups of Mexican cheese on top of the tortillas.

    Bake for 20 minutes (uncovered) or until the cheese has melted.

    Garnish with cilantro, jalapeños, salsa or tomatoes.

    Serve with refried beans, rice or salad. Enjoy!

    Shredded Beef

    • 3-4 lbs chuck roast
    • ½ cup unsalted or low-sodium beef broth/stock
    • ½ cup tomato puree
    • 3 tbsp lime juice
    • 2 tbsp chili powder
    • 2 tsp onion powder
    • 2 tsp ground cumin
    • 2 tsp garlic powder
    • 1 ½ tsp salt
    • 1 tsp black pepper
    • 1 tsp spanish paprika
    • ½ tsp ground cayenne pepper

    Homemade Easy Enchilada Sauce

    • 4 cups unsalted or low-sodium beef broth/stock
    • ¼ cup oil
    • ¼ cup all-purpose flour
    • ¼ cup tomato puree
    • 3 tbsp chili powder
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp ground cumin
    • 1 tsp salt
    • 1 tsp Mexican oregano
    • 2 tsp white vinegar

    Enchiladas

    • 8 flour or corn tortillas
    • 4 cups (divided) Mexican cheese

    Instructions

      Notes

      Instant Pot: Pressure cook on high for 1 hour with a full natural release (about 30 minutes). Follow the manufacture instructions for releasing the pressure.
      Stove Top: Bring the dutch oven or pot to a simmer. Cover with lid and turn the heat down to low. Cook for 2 ½ -3 hours or until the meat is fork tender.
      Oven: Preheat the oven to 325°F. Place the dutch oven or pot with lid in the middle rack of the oven. Cook for 3- 3 ½ hours or until the meat is fork tender.

      Chocolate Banana Bread

      Chocolate Chip Banana Bread takes the sweet natural flavors of a nice ripe banana and embeds it in a fluffy, chocolate moist bread and turns them into something truly rewarding.       Ripe Bananas

      Mix until well combined. 

      Add ¾ cup of chocolate chips and fold with spatula.

      Transfer the batter to the loaf pan.

      Sprinkle ¼ cup of chocolate chips on top of the batter. 

      Bake for 60-65 minutes or until a toothpick placed in the center of the bread comes out clean.

      Remove from the oven and rest the bread in the pan for 15-20 minutes before transferring the loaf to a baking rack to finish cooling.

            Clean, rinse and pat the corned beef dry with papper towel. Remove and discard fat. Cut beef into 1″ x 1″ cubes. Place cube corned beef in the instant pot. Add onions, garlic & corned beef spice.

            Add beef broth. Mix everything together. Place the lid on.

            Pressure cook on high for 30 minutes, with a 15 minutes natural release (exercise caution when releasing pressure from the cooker). Follow the manufacture instructions for releasing the pressure. Remove the lid.

            Add salt, pepper, Worcestershire sauce and mix everything together. Add carrots & celery.

            Add potatoes & chopped cabbage on top (do not mix). Place the lid on.

            Pressure cook on high for 3 minutes, with a 15 minutes natural release (exercise caution when releasing pressure from the cooker). Follow the manufacture instructions for releasing the pressure. Remove the lid.

            Remove lid and mix everything together. Season with salt and pepper if needed. Serve & Enjoy!

            • 3 lbs corned beef
            • 2 lbs yukon gold potatoes cut into cubes
            • 1 lb carrots chopped
            • 4 cups unsalted or low-sodium beef broth/stock
            • 2 tbsp corned beef spice
            • 2 tsp Worcestershire sauce
            • 1 tsp salt
            • ½ tsp black pepper
            • 4 celery chopped
            • 1 onion chopped
            • 3 garlic cloves minced
            • ½ cabbage cut into cubes

            Instructions
