Cranberry Muffins

Moist rich and scrumptious vanilla muffins filled with deliciously tart cranberries is a perfect snack to have on hand for any occasion. Send seasonally inviting aromas throughout a warm kitchen when you bake a batch of these mouthwatering tummy pleasers. I love these fresh made but also look froward to a morning cup of coffee in my left hand and one of these goodies in my right. The only problem with these will be how long they are available to eat because your family will gobble them down faster than you can bake them up. My family absolutely loves these muffins and we hope you decide to give them a try to see for yourself just how delicious they really are.

In a large bowl: Fadd sugar, eggs and mix well.

Then pour in the milk, oil, vanilla extract, while continuing to mix. Once the mix is uniform, add flour, baking powder, salt and combine using a mixer mix.

Sprinkle in fresh cranberries (if using frozen cranberries: do not let thaw mix while still frozen) 

Then gently fold the batter until every distributed throughout the batter (do not over mix or use a mixer on this step, be gentle). 

Use an ice cream scooper to measure even portions. Place each scoop of batter into the muffin tin (should be exactly 12 scoops).

Bake for 22-25 minutes or until golden brown. Let the muffins cool in the tin for about 10 minutes and then transfer them to a baking rack until completely cooled.

Ingredients
  

  • 2 cups fresh cranberries or frozen
  • 2 cups all-purpose flour
  • ¾ cup granulated sugar
  • ½ cup milk (whole, low, fat-free or half & half)
  • ½ cup vegetable or canola oil 
  • 2 ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • 2 large eggs room temperature

Instructions
 

  • Preheat the oven to 350°F.
  • In a large bowl: add sugar, eggs and mix well. Then pour in the milk, oil, vanilla extract, while continuing to mix. Once the mix is uniform, add flour, baking powder, salt and combine using a mixer mix. Sprinkle in fresh cranberries (if using frozen cranberries: do not let thaw mix while still frozen) then gently fold the batter until every distributed throughout the batter (do not over mix or use a mixer on this step, be gentle). 
  • Coat the muffin tins with cooking spray or butter (optional: muffin paper liner).
  • Use an ice cream scooper to measure even portions. Place each scoop of batter into the muffin tin (should be exactly 12 scoops).
  • Bake for 22-25 minutes or until golden brown. Let the muffins cool in the tin for about 10 minutes and then transfer them to a baking rack until completely cooled.

    White Chocolate Cranberry Oatmeal Cookies

    Warm and chewy oatmeal cookies with cranberry and white chocolate morsels are absolutely delicious. I love these with my morning coffee if any happen to be left over once my family finds them. Just this morning I opened the cookie jar only to see the empty bottom with a couple of tiny crumbs. I would suggest making enough of these to go around if you want to appreciate them during the holiday season but it is so easy to make I may just whip up another batch tonight. These have a delightfuly tasty oatmeal texture with bursts of cranberry juices and buttery rich white chocolate. This is a very easy to follow affordable recipe and is fun for the entire family to make and enjoy. Perfect bite size snacks that also would go great at the office party if you need to bring something a bit festive but not to taxing to make. I love my treats and these cookies rank very high on my food lovers appreciation meter and I recommend you try it at least once to see for yourself how delicious they really are.

    In a large bowl using a mixer: add butter, sugar, and brown sugar. Whip on high until smooth.

    Add egg, vanilla extract and mix well.

    Add flour, salt, baking soda, and mix until well combined.

    Add oats, dried cranberries and white chocolate chips. Use a wooden spoon or spatula and mix everything together until well combined. Place the batter in the refrigerator for at least 30 minutes or until firm.

    Remove the cookie dough from the refrigerator. Scoop out 1 ½ – 2 tbsp of dough. Use damp hands to roll into a ball. Transfer the dough balls to the cookie sheet, spacing them ~2″ apart.

    Bake for 13-15 minutes or until lightly golden brown on top. Remove from the oven and let cool/rest on the cookie sheet for 5 minutes before transferring to a baking rack. Repeat steps with the rest of the dough. You should have 22-24 cookies.

    Place leftover cookies in a airtight container for top to a week.

    Serve and enjoy!

    • 1 ½ cups rolled oats or quick oats
    • 1 cup all-purpose flour
    • 1 cup dried cranberries
    • ½ cup white chocolate chips
    • ½ cup light brown sugar
    • ½ cup unsalted butter softened
    • ¼ cup granulated sugar
    • 1 large egg room temperature
    • 1 tsp vanilla extract
    • ½ tsp ground cinnamon
    • ½ tsp baking soda
    • ¼ tsp salt

    Instructions

      Dressing

      Add the vegetables and mix. Set aside until ready to use.

      Slice the bread in middle and place on a baking sheet.

      Layer the bottom with sliced cheese, ham, salami.

      Pepperoni on the bread.

      Toast for 5 minutes or until the cheese has melted.

      Add tomatoes

      Add salad. Season with fresh pepper.

      Top with the remaining half of the bread.

      Use a bread or sharp knife to slice the sandwich. Enjoy!

      Grinder Sandwich

      Ingredients
        

      • 1 lb Italian bread/loaf
      • 8 oz provolone cheese
      • ½ lb deli ham
      • ½ lb deli salami
      • ½ lb deli pepperoni

      Salad Mixture

      • ½-1 head iceberg lettuce sliced
      • ¼ red onion thinly sliced
      • â…“ cup sliced pepperoncini
      • ½ cup real mayonnaise
      • 3 tbsp grated Parmesan cheese
      • 2 tbsp red wine vinegar
      • ½ tbsp granulated sugar
      • 1 tsp Italian seasoning
      • 1 tsp dried oregano
      • ½ tsp red pepper flakes
      • 2 garlic cloves grated or minced

      Instructions
       

      • In a large bowl: combine mayonnaise, Parmesan cheese, red wine vinegar, sugar, Italian seasoning, oregano, red flakes, garlic and mix well. Add lettuce, red onions, pepperoncini and mix together. Set aside until ready to use.
      • Preheat the oven to 350°F.
      • Slice the bread in middle and place on a baking sheet. Layer the bottom with sliced cheese, ham, salami, pepperoni on the bread. Toast for 5 minutes or until the cheese has melted.
      • Assemble: remove the bread from the oven. Toss the salad with the dressing. Place on top of the meat. Then add sliced tomatoes. Season with fresh pepper. Top with the remaining half of the bread.
      • Use a bread or sharp knife to slice the sandwich.

        Jalapeños Popper Pigs in a Blanket (Air Fryer & Oven)

        Cut the jalapeños in half (vertically) and remove (discard) the seeds.

        Chop the jalapeños into bite sizes.

        In a medium size bowl: combine chopped jalapeño, cream cheese, shredded cheese, salt, pepper, onion and garlic; mix well.

        Unroll the can of dough. Separate 8 triangles. Cut each triangle into 3 smaller narrow triangles.

        Scoop out about 1 tsp jalapeños popper mixtures and place onto the long side of the crescent.

        Add 1 mini cocktail on top.

        Gently fold and roll the dough to the point end. Place them on a baking sheet. Continue with the rest.

        In a small bowl: add 1 egg and water. Whip until well combined. Brush the egg wash over the crescents. Sprinkle with salt.

        Air fry for 6-7 minutes or until the top becomes golden brown. Remove the pigs in a blanket from the basket. Continue with the rest. Make sure to coat the basket with cooking spray. Do not over crowd in the basket. May need to do 2-3 batches. 

        Bake in the oven for 12-14 minutes or until golden brown. Remove the pigs in a blanket from the baking sheet.

        • 12 oz mini cocktail sausages lil'smokies

        Egg Wash

        • 1 egg

          Slow Cooker Dr.Pepper Pulled Pork

          In a small bowl; combine all the seasonings together.

          Then sprinkle over the pork.

          Place the seasoned pork in the slow cooker.

          Gently brush ½ cup BBQ sauce on top of the pork (careful not to wipe the seasoning off).

          Pour Dr. Pepper down the side of the slow cooker (careful not to wash off the BBQ).

          Slow cook on low for 10 hours for optimal fork tenderness or on high for 5-6 hours. Bone-in pork cook on low for 12 hours.

          Transfer the cooked meat to a bowl/plate.

          Use tongs or 2 forks to shred the meat.

          Then return the meat to the pot.

          Add another ½ cup of BBQ sauce and mix everything together. Season with salt & pepper. Optionalremove/discard the grease that is floating on top of the liquid before returning the meat to the cooker.

          Serve on a hamburger bun(s) with pickled red onions, pickles & coleslaw.

          • 4 lbs boneless Boston butt or pork shoulder
          • 1 tbsp garlic powder
          • 1 tbsp onion powder
          • 1 tbsp paprika
          • 1 tbsp salt
          • 1 tsp pepper
          • 12 oz Dr. Pepper
          • ½-1 cup (divided) BBQ sauce to taste

          Serve with

          • Hamburger buns, pickled red onions, pickles & coleslaw

          Instructions

            • 12 Hawaiian rolls
            • 1 lb leftover ham or deli meat
            • 1 cup homemade cranberry sauce or can
            • 1 ¼ shredded Swiss cheese about 5 oz

            • 2 tbsp brown sugar
            • 1 tbsp dried parsley

            Instructions
             

            • Preheat the oven to 350°F.
            • Don’t pull the rolls apart. Cut them in half horizontally. Place the top halves aside and bottom halves in the baking pan.
            • Layer swiss cheese atop the bottom rolls. Then layer with ham, cranberry sauce then cover with the rolls top halves.
            • In a bowl, whisk melted butter, brown sugar, parsley until well mixed. Then brush or spread the butter mixture over the top of the rolls
            • Bake for 15-20 minutes or until the cheese has melted.

            Serve immediately and enjoy!
