Bakery Style Chocolate Chip Muffins

In a large bowl: beat the sugar and butter until mixed thoroughly.

Add eggs, buttermilk, vanilla extract, and sour cream.

Mix until well combined.

Once the mixture is uniform: add in the flour, baking powder, baking soda, salt and mix. 

Highly recommend that you sift the dry ingredients before mixing with the wet ingredients to form a smoother batter. This will make the muffins very soft & fluffy (don’t skip this tip). 

Add chocolate chips.

Use a spatula to fold the batter.

Use an ice cream scooper or spoon to measure even portions. As you carefully place each scoop of batter in the muffin tin (should be exactly 12 scoops). Optional: sprinkle 2 tbsp sugar or ¼ cup of chocolate chips on top of the batter. 

Bake for 5 minutes at 425°F. Then, turn down the oven temperature to 375°F and bake for 12- 14 minutes (it took me 13 minutes). Do not over bake the muffins or it will be dry. 

Let the muffins cool in the tin for about 5 minutes and then transfer them to a baking rack to finish cooling completely.

Can be kept up to a week.

Ingredients
  

  • 2 ½ cups all-purpose flour
  • 1 ½ cups semi-sweet chocolate chips good quality
  • 1 cup granulated sugar
  • ¾ cup buttermilk room temperature
  • ½ cup unsalted butter softened
  • ¼ cup sour cream room temperature
  • 2 ½ tsp baking powder
  • 1 tsp vanilla extract
  • ½ tsp salt
  • ½ tsp baking soda
  • 2 large eggs room temperature

Instructions
 

  • Preheat the oven to 425°F. Coat the muffin tin with cooking spray or butter (optional: use muffin paper liner).

    Then add the whole milk, oil, and vanilla extract. Mix well. 

    Once the mixture is uniform, add in the flour, baking powder, baking soda, salt, cinnamon. Combine using a mixer mix.

    Add oats

      In a separate bowl: add eggs and whip. Add milk, salt, pepper and whip. Optional: transfer the egg to a measuring cup for easy pouring.

      Add your choice of toppings.

      Divide ½ cup of cheese evenly into the tins.

      Bake for 25 – 30 minutes.

      Remove from the oven and transfer to a baking rack.

          British Sausage Rolls

          Fresh homemade Pastry Sausage Rolls that are scrumptious finger food that everyone will enjoy. The Pastry is light crispy and flaky.           In a large bowl: combine meat, salt, thyme, sage, fennel, nutmeg, pepper, Worcestershire, garlic and mix everything together.

          Add panko breadcrumbs, onions, egg and mix everything together until well combined.

          Let the meat marinate for at least 30 minutes, preferably a 2 hours (the longer the better taste).

          Dust flour on a working surface (this will help prevent the puff sheets from sticking to the working surface). Unfold the puff sheet. Cut the dough into 2 long pieces. You should have 4 total from the 2 sheets. Add ¼ of the meat on the top of the pastry sheet (not in the middle).

          Form the meat into a long log. Gently roll the sheet until the bottom the pastry is underneath. 

          Egg wash: In a small bowl: combine egg, water and whisk. Brush the egg wash on top of the pastries. 

          Cut each long into 8 pieces. 

          There should be 32 pieces total.

          Bake for 25-30 minutes or until golden. Remove from the oven. 

          Best to serve immediately.

          Enjoy with your favorite dip.

          British Sausage Rolls

          • 1 package pastry sheets 2 sheets

          Meat Filler

          • 1 lb ground pork
          • ½ cup plain panko breadcrumbs
          • 1 tbsp Worcestershire sauce
          • 1 tsp salt
          • 1 tsp dried thyme
          • 1 tsp fennel seeds
          • ½ tsp dried sage
          • ½ tsp pepper
          • â…› tsp ground nutmeg
          • ½ onion finely minced
          • 2 garlic cloves finely minced
          • 1 large egg

          Egg Wash

          • 1 egg
          • 1 tbsp water

          Instructions
