1 English cucumber. Slice & dice cucumbers.

Slice & dice tomatoes.

Slice the avocado in half. Remove the core and skin, then dice.

Thinly slice the red onions.

Chop the cilantro’s.

Add olive oil, lemon juice, salt & pepper. Gently toss the salad together.

Ingredients
  

  • 1 English cucumber
  • 1 ripe avocado
  • 4 roma tomatoes
  • 1 lemon juice only
  • ½ red onion
  • cup cilantro
  • 2 tbsp extra virgin olive oil
  • ½ tsp salt
  • ½ tsp black pepper

Instructions
 

  • Slice & dice cucumbers.
  • Slice & dice tomatoes.
  • Slice the avocado in half. Remove the core and skin, then dice.
  • Chop the cilantro's.
  • Thinly slice the red onions.
  • In a large bowl: add cucumbers, tomatoes, avocado, cilantro, red onions, olive oil, lemon juice, salt & pepper.
  • Gently toss the salad together.

Serve & enjoy!.

    Spinach Strawberry Feta Cheese Salad

    Ingredients
      

    • 6 oz spinach
    • 1 lb fresh strawberries cut into quarters
    • ¼ red onion thinly sliced
    • ½ cup walnuts
    • ½ cup feta cheese

    Poppy Seed Dressing

    • ½ cup extra virgin olive oil
    • ¼ cup white vinegar
    • 3 tbsp honey
    • 1 tbsp mayonnaise
    • 1 tbsp poppy seeds
    • 1 tsp dijon mustard
    • ½ tsp salt
    • ¼ tsp black pepper

    Instructions
     

    • Place spinach, walnuts, feta cheese, strawberries and onions on a plate or bowl. Serve with poppy seed dressing.

    Poppy Seed Dressing

    • Place all the ingredients in a jar. Put the lid on tight, then shake until smooth.
    • Refrigerate the rest of the dressing.

      Pineapple Strawberry salsa is a naturally sweet mouthwatering dip that won’t last long once the first bite is taken. Change up the salsa selection at your next social gathering with this fresh made easy to follow recipe. My family knew something good was happening when I started chopping in the kitchen. The occasional teenager would circle closer and closer until it was feeding time. My husband sensed the activity in the kitchen and made his way to the frenzy to get his scoops in before it was significantly reduced or worse all gone.       In a bowl: combine pineapples

      Jalapeños, red onions, cilantro, lime juice, & salt.

      Mix well.

      Just before serving (or eating) add strawberries and mix. Season with salt or lime juice to taste. Serve immediately or before the pineapples start to turn “red-ish” from the strawberries.

      • 2 cups fresh pineapples (very ripe) chopped
      • 1 ½ cups fresh strawberries (very ripe) cut into quarters
      • ¼ cup red onions minced
      • ¼ cup cilantro chopped
      • ½ tsp salt
      • ½ lime juice only
      • 1 jalapeño deseed & minced

      Instructions
       

      • In a bowl: combine pineapples, jalapeños, red onions, cilantro, lime juice, salt and mix well.
      • Just before serving (or eating) add strawberries and mix. Season with salt or lime juice to taste. Serve immediately or before the pineapples start to turn "red ish" from the strawberries.

        Deseed the jalapeño’s and mince (transfer to the bowl).

        • 1 ½ cup fresh pineapples (ripe) discard the core & chopped
        • cup cilantro chopped
        • ¼ cup red onions chopped
        • 2 roma tomatoes chopped

        • ½ tsp salt
        • ¼ tsp black pepper

        Instructions

          Instant Pot Cranberry Juice

          Decorate the refreshment tray during your next family gathering with this deliciously refreshing cranberry juice. The red-color will stimulate the optical receptors as the pleasing scent makes everyones mouth water with anticipation. Garnish with a lemon or orange slice to enhance the drink’s presentation to a sophisticated looking beverage. The kids will not hesitate to drain the glass once they get their first taste as the juice is laced with natural sweetness. This recipe uses the perfect balance of honey (buy local if you can find it) and fresh squeezed lemon juice. I had to make this recipe twice as my family drank it all shortly after the first batch was made. The second batch didn’t last much longer but, I ran out of cranberries so that ended the cycle.

          Instant Pot Cranberry Juice

          Ingredients
            

          • 2 cups fresh cranberries
          • 8 cups filtered water
          • cup honey +/- to taste
          • 1 tbsp lemon juice

          Instructions
           

          • Add cranberries, lemon juice, water (hot or boiling).
          • Place the lid on. Pressure cook on high for 8 minutes, followed by a natural release. Follow the manufacture instructions for releasing the pressure. Remove the lid. 
          • Place cranberries in a strainer/mesh. Press to release the cranberries flavor/juice. Discard the chunks of mashed cranberries. Add honey and mix.

          Serve warm or cold. Place juice in an airtight container and refrigerate for up to 2 weeks.

            Instant Pot weight loss cabbage soup is tasty and deceptively satisfying. A bowl of this hot soup is a fantastic meal replacement for lunches to help trim back on the waistline that we earn through our food adventures. My husband ate this for several weeks as a rotating lunch serving and lost 20 lbs just like that. This soup will fill the hunger without adding to the calorie count.
