Apple Crumb Cake

Apple Crumb Cake has a sweetly moist center with a slightly crunchy flavorful top layer that completes this easy to make home made treat. It is perfect for the fall season, especially when apples are for sale in the grocery store.

Crumbling buttery sweetness, this cake recipe is cheaper and better than any you stumble across. Chucks of apples covered in accents and invitations of buttery sweetness, this cake is a must try. My middle son requested this type cake with his morning tea the day of his birthday because it’s during the fall season and he loves apples too. When this came out of the oven it was met by my waiting family. We all gathered in the kitchen area and enjoyed a slice together. Absolutely recommend this with a cup of coffee for us grown ups. But kids also enjoy with a mild tea, milk or favorite beverage.

In a small bowl: combine flour, brown sugar, white sugar, cinnamon, salt and mix. Add melted butter.

Mix until it begins to form coarse crumbs. 

Peel & remove core of the apples. Cut into ¼” cubes and then place in a bowl. Add brown sugar, flour, melted butter and salt. Mix everything together and set aside.

In a large bowl: add the flour, baking powder, baking soda, cinnamon and salt then mix. Highly recommend that you sift the dry ingredients before mixing them into the wet ingredients. This will form a smoother batter and the cake will be very soft & fluffy. Add eggs, brown sugar, white sugar, sour cream, vanilla extract, melted butter and mix everything together until smooth. 

Transfer the batter to the pan.

Add apple mixture on top of the batter.

Then, add the crumb on top.

Bake for 55-65 minutes (it took me 56 min) or until a toothpick placed in the center comes out clean. Remove from the oven and rest the cake in the pan for 30 minutes or until cool to touch. 

In a small bowl- add powdered sugar, milk and mix until smooth. Drizzle glaze over cake. 

Serve & enjoy! Refrigerate the leftovers in the refrigerator.

Ingredients
  

Crumb

  • 1 ½ cups all-purpose flour
  • ¾ cup brown sugar
  • ½ cup unsalted butter melted
  • ¼ cup granulated sugar
  • 1 ½ tsp ground cinnamon
  • ½ tsp salt
  • ½ tsp vanilla extract

Apple Mixture

  • 3 cups apples (Gala, Fuji, Jonagold, Honeycrisp, Red Delicious or Golden Delicious) peel & chopped
  • ¼ cup brown sugar
  • 1 tbsp all-purpose flour
  • 1 tbsp unsalted butter melted
  • 1 tsp ground cinnamon

Cake

  • 1 ¼ cups all-purpose flour
  • ½ cup melted unsalted butter warm
  • ½ cup sour cream (full fat) room temperature
  • ½ cup granulated sugar
  • ¼ cup brown sugar
  • 2 tsp vanilla extract
  • 1 ½ tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp baking soda
  • ½ tsp salt
  • 2 large eggs room temperature

Glaze

  • ½ cup + 2 tbsp powdered sugar
  • 2 tbsp milk

Instructions
 

  • Preheat the oven to 350°F. Grease the 9" springform pan with baking cooking spray or butter. Recommend putting some parchment paper on the bottom of the pan & along the sides first.

Crumb

  • In a small bowl: combine flour, brown sugar, white sugar, cinnamon, salt and mix. Add melted butter & mix until it begins to form coarse crumbs.

    Easy Pumpkin Muffins

    Soft moist Pumpkin muffins with subtle cinnamon and nutmeg flavor notes is so awesome fresh from the oven. Delicious and smooth these seasonal muffins fills the kitchen with warm pumpkin spice perfume that promises to be sweet and rewarding. Serve with coffee or milk. These muffins never lasts long once it is cool enough to eat. Spread a cut of butter on it while warm and watch the friends and families eyes glow with anticipation.

    Fall season is the perfect excuse to flex your culinary skills ahead of the holidays. This can be served at a formal gathering or just to reward yourself and your immediate family. You can double the recipe and freeze some for later (just make sure to let it fully thaw-out before cooking).

    Preheat the oven to 375°F. Coat the muffin tin with cooking spray or butter (optional: use muffin paper liner). In a large separate bowl: add white sugar, brown sugar, eggs, vanilla extract, pumpkin puree and oil. Mix everything together until combined.

    In a bowl: add flour, salt, cinnamon, pumpkin spice, baking powder & baking soda. Mix everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). Add dry ingredients

    Mix everything together. 

    Use an ice cream scooper or spoon to measure even portions. Place each scoop of batter in the muffin tin (should be exactly 12 scoops)

    Bake for 20-22 minutes or until lightly golden brown. Let the muffins cool in the tin for about 5 minutes and then transfer them to a baking rack to finish cooling completely.

      In a small bowl: combine cold water, gelatin and mix until well combined. Microwave the gelatin in 45-60 seconds or until it becomes liquid forms & set aside.

      Clean strawberries then remove the stem & dice. Place in a food processor then add sugar. Then blend or puree the strawberries until smooth. Add gelatin and mix. Set aside until ready to use.

      In a separate bowl: add cold whipping cream and powdered sugar. Beat on medium until soft peaks form. Add strawberry puree and gently fold them together with a spatula and mix until well combined. Simple Syrup – In a small bowl: add sugar and boiling hot water. Mix until the sugar is fully dissolved. 

      Cut ¼” off the tip end of the ladyfingers.

      Stand the ladyfingers around the sides of the pan; they will stand vertically.

      Arrange the bottom layer of the pan with ladyfingers; fill in the gaps with ladyfinger pieces. 

      Brush a generous amount of simple syrup on 1st layer and sides of the ladyfingers.

      Add half of the strawberry mousse on top of the ladyfingers. Gently spread the filling to form an even layer. 

      Then, arrange the 2nd layer of ladyfingers on top of the mousse. Brush with simple syrup. Add the rest of the mousse on top. Gently spread the filling to form an even layer. 

      Refrigerate uncovered for at least 6 hours. 

      Decorate 

      Spread whipped cream on top of the cake. Garnish with fresh strawberries. 

      Slice & enjoy!

      • 40 ladyfingers

      Simple Syrup

      • ½ cup hot water
      • ¼ cup sugar

      Strawberry Mousse

      • 12 oz strawberries
      • 3 cups heavy whipping cream
      • ½ cup sugar
      • ¼ cup cold water
      • 3 tbsp powdered sugar
      • 1 tbsp unflavored gelatin

      Whipped Cream

      • 1 cup heavy whipping cream
      • 2 tbsp powdered sugar

      Topping

      • fresh strawberries

      Instructions
       

      • Line the sides of the 9" springform pan with parchment paper or transparent cake collar.
      • Simple Syrup – In a small bowl: add sugar and boiling hot water. Mix until the sugar is fully dissolved.
        ½ cup hot water, ¼ cup sugar

        Add the flour, baking powder, cornstarch and salt then mix until smooth. (I highly recommend weighing your flour and sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). 

        Add raspberries and dark chocolate chips. Use a spatula and fold everything together. 

        Add the batter to the pan.

          Homemade Raspberry Preserve

          Sweet, rich and naturally flavorful Homemade Raspberry Preserve is so good that you will need to stock up on bread so you can make toast for breakfast as an excuse to spread this wonderful natural reward. When cooking this preserve you will notice a fragrance permeating throughout that is full of sweet notes of tart berry mixed with inviting tones of lemon melted sugar. Aromas like this are what makes a house into a home. A generation or two ago ladies would measure their reputation as a cook by being master prepares of the best preserve in town. That sentiment is still ever present and remains part of our culture. My goal is to develop those kinds of memories for my children by setting the bar for how to spend time together.  With absolutely zero preservatives and a lot less sugar compared to store bought, this is a guilt free treat for the kids. My kids will get up early to toast an English muffin or a slice of bread for breakfast when this fresh made preserve is one of the choices. This can also be added to oatmeal or used to smother a scone to add a bit of seasonal delight to the midsummer breakfast experience.  Check out my video to see just how easy this preserve is to make and let me know what you think of the recipe.

          As with most preserves; you can substitute any type of fresh seasonal fruit local to your area and likely accomplish the same goal of deliciousness.

          This preserve can be kept in the refrigerator for 4-6 weeks. But good luck with that once your kids find out just how good it tastes.  This never lasts very long in my house. My children eat the preserves with almost everything they can think of. It’s so good, if I let them, they would eat straight out of the jar.  Of course, I don’t let them do that… but they haven’t caught me doing it yet 😉

          Turn the stove top heat high and cook for 10 minutes. Stir frequently to prevent burning or sticking to the pan. Then, turn down the heat to medium-low and let simmer for an additional 8-10 minutes. Continue to stir frequently. Let the raspberries simmer until the juice evaporates. Turn off the heat & remove the pan from heat source.. The mixture will thicken after as the preserve reaches room temperature. 

          Once cool enough to touch; Transfer the contents to a jar or container and place in the refrigerator. It’s good for up to 4-6 weeks.

            Homemade Fluffy Biscuits are the best when enjoyed fresh from the oven. This recipe is simple and easy to make with ingredients you likely already have in your kitchen. The best part is they only take less than 30 minutes to prepare and cook.

            I have worked over time to make a recipe for biscuits that, my very traditional southern husband, loves to eat. In the south making a good biscuit can make you a legend in your own family. Soft filling comfort food that is great served with honey, butter or my kids favorite, with sausage gravy.             Traditional food from the different regions of the world are largely based on what type of ingredients are available there and what the culture is like. Soft fluffy southern style biscuits are no exception; as flour is used heavily in southern style foods from fried food to gravy, you will likely find flour somewhere near the cooking area as an enhancement to the food experience. No better way to experience what flour can do than having a delicious warm biscuit with some eggs and bacon to fill the eat. My favorite way to enjoy a fresh made biscuit is to cover it with some local honey and butter, it goes great with morning coffee or as a standalone snack.             Preheat the oven to 425°F. Place parchment paper on a baking sheet. In a large bowl: combine flour, salt, sugar, baking powder and cold butter. Use a pastry cutter or your hand to mix until it begins to form coarse crumbs. Add milk and knead the dough in the bowl for a few minutes. The dough will be sticky at first but once you knead everything it will be fine. If the dough is still sticky add 1 tbsp of flour and knead until it is no longer sticky. Food Processor: add flour, salt, sugar and mix everything together. Add cold butter and mix until it forms into crumbs. Add cold milk and mix. It’s going to be a little sticky.

            Transfer the dough to a floured surface. Pat the dough out to ¾” to 1″ thick. Use a biscuit cutter or glass to shape 6 biscuits.

            Then transfer to the baking sheet.

            Bake for 12-14 minutes or until golden brown on top. Remove biscuits from the oven. Brush melted butter over the top of the biscuits immediately. 2-3 tbsp melted butter

            Ingredients
              

            • 255g (2 cups) all-purpose flour recommend weighing your flour
            • 8 tbsp unsalted butter place in the freezer for 15 minutes
            • 1 tbsp baking powder
            • 1 tbsp sugar
            • ¾ cup cold whole milk
            • 2-3 tbsp melted butter for brushing

            Instructions
