Apple Bread

Apple Bread features baked moist fruit with just the right amount of cinnamon, vanilla and sugar for a harmonious collection of good old-fashioned flavors. The Bread is tart, sweet, fluffy and a satisfying treat. Fresh out of the oven warm filled apple bread is soft moist sweet and delightful to eat. A hint of cinnamon balance the nutmeg and sweet apples to provide the perfect seasonal baked goods or anytime of the year.

I love them fresh from the oven but look forward to the morning after and enjoying them with my favorite coffee. My kids would eat them all if they could as they enjoy theirs with a cold glass of milk. Warm your kitchen on a cool day by baking these little delights. Great for snacks, meal preparation or when you are on the go. You can make a couple of these bread batches and freeze, just be sure to let them fully thaw before serving (microwave for 30-90 seconds).

In a bowl combine flour, salt, baking soda, cinnamon, nutmeg & baking powder together. Set aside until ready to use. (I highly recommend weighing your flour and sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). In a large separate bowl: add white sugar, eggs and beat until pale yellow.

Add vanilla extract, applesauce and oil. Mix everything together until combined.

Add dry ingredients and mix.

Add the finely chopped apples into the bowl and gently toss them together with a spatula. 

Preheat the oven to 350°F / 176°C. Lightly grease the loaf pan (8″x 4″) with softened butter & flour or line the inside of the pan with parchment paper. Transfer the batter to the pan.

Bake for 55-60 minutes or until a toothpick placed in the center of the bread comes out clean (tent with aluminum foil after 30 minutes)

Remove pan from the oven and rest the bread in the pan for 10 minutes before transferring the bread to a baking rack to finish cooling.

Slice & enjoy! Cover the leftovers in a container. Keep at room temperatures to up 2 days or refrigerate up to 6 days.

  • 8" x 4" Loaf Pan

Ingredients
  

  • 204g (1 ½ cups) all-purpose flour
  • 1 ½ tsp ground cinnamon
  • 1 ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • ¼ tsp ground nutmeg
  • ¾ cup granulated sugar
  • ½ cups vegetable or canola oil 
  • 2 tsp vanilla extract
  • 2 cups finely chopped apples peeled & deseed
  • 4 oz (½ cup) unsweetened apple sauce
  • 2 large eggs room temperature

Instructions
 

  • Preheat the oven to 350°F / 176°C. Lightly grease the loaf pan (8"x 4") with softened butter & flour or line the inside of the pan with parchment paper.

    Mix until it dissolves. Add sugar, eggs, sour cream, vanilla extract, oil and mix everything together. In a bowl: add flour, salt, baking powder & baking soda while mixing everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). 

    Combine wet and dry ingredients together. Mix until well combined. Add 1 ½ cups of chocolate chips and fold with spatula. 

    Use an ice cream scooper or spoon – fill up to â…” of the muffin tin. Add chocolate chips on top of the batter. 

    Bake for 17 minutes. Let the muffins cool in the tin for about 10 minutes and then transfer them to a baking rack to finish cooling completely. Continue with the rest of the muffins.

    Can be kept up to a week.

    • 224g (1 â…” cups) all-purpose flour
    • 71g (½ cup) unsweetened cocoa powder
    • 2 cups (divided) semi-sweet chocolate chips
    • 1 cup granulated white sugar
    • 1 cup sour cream (full fat) room temperature
    • ½ cup boiling/hot water
    • ½ cup vegetable or canola oil 
    • 1 tbsp instant coffee optional
    • 1 tsp baking powder
    • 1 tsp vanilla extract
    • ½ tsp baking soda
    • ½ tsp salt
    • 2 large eggs room temperature

    Instructions
     

    • Preheat the oven to 375°F. Coat the muffin tin with cooking spray or butter (optional: use muffin paper liner).

      Preheat the oven to 375°F. Grease the 8″x 8″ pan with cooking flour spray or butter. Peel ripe bananas over a pan. Then smash until smooth and consistently creamy with a fork.

      Add egg and mix. Add oatmeal, maple syrup, cinnamon, salt, vanilla extract, milk, and mix everything together. 

      Add chopped strawberries and mix everything together.

      Optional- add nuts or chocolate chips on top.

      Bake for 45-50 or until the top is golden (if using frozen strawberries, bake for 50-55 min until golden on top). 

      Let cool for 10 minutes before serving.. Enjoy!

      Optional Topping

        Pumpkin Cream Cheese Loaf with Pepitas Streusel

        Soft moist Pumpkin Cream Cheese Loaf with Pepitas Streusel with subtle cinnamon and nutmeg flavor notes is so awesome fresh from the oven.         In a small bowl: combine flour, brown sugar, pumpkin spice, salt and mix. Add melted butter & mix until it begins to form coarse crumbs. 

        Cream Cheese 

        In a medium size bowl: add softened cream cheese and whip until smooth. Add sugar, vanilla extract and whip/beat until smooth. Add the egg and whip until smooth. Use a spatula to scrap the sides of the cheesecake batter to center of the bowl and continue to whip until smooth.

        Loaf

        In a bowl combine flour, salt, baking soda, pumpkin spice, cinnamon & baking powder together. Set aside until ready to use. (I highly recommend weighing your flour and sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). In a large separate bowl: add white sugar, brown sugar, eggs, vanilla extract, pumpkin puree and oil. Mix everything together until combined. Add dry ingredients and mix. 

        Use an ice cream scooper or ladle. Transfer ½ of the pumpkin batter to the pan. Gently add the cream cheese mixture on top of the batter. Gently add the other ½ of the batter on top of cream cheese. Then, add the crumb on top. Lastly, sprinkle pepitas (pumpkin seeds) on top. 

        Bake for 60-65 minutes or until a toothpick placed in the center of the bread comes out clean. 

        Remove from the oven and rest the bread in the pan for 15 minutes before transferring the loaf to a cake rack to finish cooling.

          Homemade Fluffy Biscuits are the best when enjoyed fresh from the oven. This recipe is simple and easy to make with ingredients you likely already have in your kitchen. The best part is they only take less than 30 minutes to prepare and cook.

          I have worked over time to make a recipe for biscuits that, my very traditional southern husband, loves to eat. In the south making a good biscuit can make you a legend in your own family. Soft filling comfort food that is great served with honey, butter or my kids favorite, with sausage gravy. If you have never had a good homemade biscuit, you should watch the video and follow the detailed instructions below to find out for your self what all the fuss is about.

          Traditional food from the different regions of the world are largely based on what type of ingredients are available there and what the culture is like. Soft fluffy southern style biscuits are no exception; as flour is used heavily in southern style foods from fried food to gravy, you will likely find flour somewhere near the cooking area as an enhancement to the food experience. No better way to experience what flour can do than having a delicious warm biscuit with some eggs and bacon to fill the eat. My favorite way to enjoy a fresh made biscuit is to cover it with some local honey and butter, it goes great with morning coffee or as a standalone snack.           Preheat the oven to 425°F. Place parchment paper on a baking sheet. In a large bowl: combine flour, salt, sugar, baking powder and cold butter. Use a pastry cutter or your hand to mix until it begins to form coarse crumbs. Add milk and knead the dough in the bowl for a few minutes. The dough will be sticky at first but once you knead everything it will be fine. If the dough is still sticky add 1 tbsp of flour and knead until it is no longer sticky. Food Processor: add flour, salt, sugar and mix everything together. Add cold butter and mix until it forms into crumbs. Add cold milk and mix. It’s going to be a little sticky.

          Transfer the dough to a floured surface. Pat the dough out to ¾” to 1″ thick. Use a biscuit cutter or glass to shape 6 biscuits.

          Then transfer to the baking sheet.

          Bake for 12-14 minutes or until golden brown on top. Remove biscuits from the oven. Brush melted butter over the top of the biscuits immediately. 2-3 tbsp melted butter

          • 255g (2 cups) all-purpose flour recommend weighing your flour
          • 8 tbsp unsalted butter place in the freezer for 15 minutes
          • 1 tbsp baking powder
          • 1 tbsp sugar
          • ¾ cup cold whole milk
          • 2-3 tbsp melted butter for brushing

          Instructions
           

          • Preheat the oven to 425°F. Place parchment paper on a baking sheet.
          • In a large bowl: combine flour, salt, sugar, baking powder and cold butter. Use a pastry cutter or your hand to mix until it begins to form coarse crumbs.             Blueberry Scones

            Blueberry Scones are a seasonal treat and are wimple and easy to make. Simply delicious, these scones are good to the last crumb. This affordable and easy to make selection is perfect on any occasion.             In a large bowl: combine flour, salt, baking powder, sugar and mix. Add butter pieces into the bowl. Use a pastry cutter, your fingers or a fork to blend the flour mixture and butter together until pea size crumbs. 

            In a separate bowl: pour heavy cream, egg, vanilla extract & mix. Then, pour cream mixture into flour bowl and mix. Knead for several minutes until everything comes together. Add blueberries (if using frozen do not thaw), and gently fold & shape into a round ball. It’s going to be very sticky.

            Coat the cutting board with 2-3 tsp of flour. Place the dough on the board. Use a dough roller or palm of your hand to flatten to about 1″ thick and about 8″ disc. Use a knife or bench scraper to cut them into 8 triangles and place in the refrigerator for 20 minutes. Watch the video for reference. 

            Preheat the oven to 400℉. Remove scones from the refrigerator. Place scones on a baking sheet (with parchment paper).

            Blueberry Scones

            Ingredients
              

            • 2 cups all-purpose flour
            • 1 cup fresh blueberries or frozen (do not thaw)
            • ¾ cup heavy cream
            • ½ cup cold unsalted butter
            • ¼ cup granulated sugar
            • 2 ½ tsp baking powder
            • 1 tsp vanilla extract
            • ¼ tsp salt
            • 1 large egg room temperature

            Topping

            • 2 tbsp heavy cream for brushing
            • 2 tbsp granulated sugar sprinkle

            Instructions
             

            • In a large bowl: combine flour, salt, baking powder, sugar and mix. Add butter pieces into the bowl. Use a pastry cutter, your fingers or a fork to blend the flour mixture and butter together until pea size crumbs.
            • In a separate bowl: pour heavy cream, egg, vanilla extract & mix. Then, pour cream mixture into flour bowl and mix. Knead for several minutes until everything comes together. Add blueberries (if using frozen do not thaw), and gently fold & shape into a round ball. It's going to be very sticky.
            • Coat the cutting board with 2-3 tsp of flour. Place the dough on the board. Use a dough roller or palm of your hand to flatten to about 1" thick and about 8" disc. Use a knife or bench scraper to cut them into 8 triangles and place in the refrigerator for 20 minutes. Watch the video for reference. 
            • Preheat the oven to 400℉.
            • Remove scones from the refrigerator. Place scones on a baking sheet (with parchment paper). Brush the scones with 2 tbsp heavy cream. Then sprinkle with sugar on top.
            • Bake for 20-25 minutes or until golden brown. Let rest for 5 minutes before transferring to a baking rack.
