Cuban Mojo Pork (Lechon Asado)

In a bowl: add garlic, onion, orange juice, lime juice, cumin, pepper, salt, oil, oregano and mix. In a separate extra large bowl: add Boston butt. Pour the marinade over the meat. Lift both sides of the pork up (use a tong, wooden spoon or hands); this will allow the juice to go underneath the meat. Then cover the bowl with saran wrap and refrigerate for 10-12 hours.

Remove the meat from the refrigerator.

Wrap the meat with aluminum foil.

Do not throw away the liquid, save it for later.

Place the meat on the baking rack. Place the baking sheet in the middle of the oven. Cook covered with foil for 4 hours.

Remove the baking sheet from the oven and place on a flat surface. Then carefully remove and discard the aluminum foil that is covering the meat. Center the meat on the baking rack.

Pour the reserved liquid over the meat.

Cook uncovered for 3-4 hours or until fork tender.

Remove meat from the oven. Let rest for 30 minutes. Either shred or chop the meat.

Cuban Mojo Pork with Mojo Sauce and Black Beans

Serve with white rice, cuban black beans, mojo sauce & lettuce.

Ingredients
  

  • 8-10 lbs Boston butt or pork shoulder
  • ¼ cup extra virgin olive oil cooking oil
  • 1 tbsp salt
  • 1 tbsp dried oregano
  • 1 tbsp ground cumin
  • 2 tsp black pepper
  • 2 orange juice only
  • 4 lime juice only
  • 1 onion finely chopped
  • 8 garlic cloves finely minced

Mojo Sauce

  • 1 cup fresh orange juice
  • ¼ – ⅓ cup fresh lime juice
  • ½ cup chopped cilantros
  • 1 ½ tsp salt
  • 1 garlic
  • 1 jalapeno
  • 2 tbsp extra virgin olive oil optional

Instructions
 

Marinate

  • In a bowl: add garlic, onion, orange juice, lime juice, cumin, pepper, salt, oil, oregano and mix.
  • In a separate extra large bowl: add Boston butt. Pour the marinade over the meat. Lift both sides of the pork up (use a tong, wooden spoon or hands); this will allow the juice to go underneath the meat. Then cover the bowl with saran wrap and refrigerate for 10-12 hours.

Cook

  • Preheat the oven to 325°F. Wrap the baking sheet in aluminum foil for easy cleaning later. Place a baking rack on the baking sheet.
  • Remove the meat from the refrigerator. Wrap the meat with aluminum foil. Do not throw away the liquid, save it for later. Place the meat on the baking rack. Place the baking sheet in the middle of the oven. Cook covered with foil for 4 hours.

Mojo Sauce

  • Place all the ingredients in a food processor or chopper. Then blend until smooth.

Serve with white rice, cuban black beans, mojo sauce & lettuce. Enjoy!

    In a large bowl: combine meat, salt, thyme, sage, fennel, nutmeg, pepper, Worcestershire, garlic and mix everything together.

    Add panko breadcrumbs, onions, egg and mix everything together until well combined.

    Let the meat marinate for at least 30 minutes, preferably a 2 hours (the longer the better taste).

    Dust flour on a working surface (this will help prevent the puff sheets from sticking to the working surface). Unfold the puff sheet. Cut the dough into 2 long pieces. You should have 4 total from the 2 sheets. Add ¼ of the meat on the top of the pastry sheet (not in the middle).

    Form the meat into a long log. Gently roll the sheet until the bottom the pastry is underneath. 

    Egg wash: In a small bowl: combine egg, water and whisk. Brush the egg wash on top of the pastries. 

    Cut each long into 8 pieces. 

    There should be 32 pieces total.

    Bake for 25-30 minutes or until golden. Remove from the oven. 

    Best to serve immediately.

    Enjoy with your favorite dip.

    Ingredients
      

    • 1 package pastry sheets 2 sheets

    Meat Filler

    • 1 lb ground pork
    • ½ cup plain panko breadcrumbs
    • 1 tbsp Worcestershire sauce
    • 1 tsp salt
    • 1 tsp dried thyme
    • 1 tsp fennel seeds
    • ½ tsp dried sage
    • ½ tsp pepper
    • tsp ground nutmeg
    • ½ onion finely minced
    • 2 garlic cloves finely minced
    • 1 large egg

    Egg Wash

    • 1 egg
    • 1 tbsp water

    Instructions
     

    • In a large bowl: combine meat, salt, thyme, sage, fennel, nutmeg, pepper, Worcestershire, garlic and mix everything together.       Slow Cooker Pork Carnitas

      Clean and pat the pork dry with a paper towel. Place pork in the slow cooker. Add salt, pepper, cumin, oregano to the cooker. Then rub all over the pork.

      Add orange juice, lime, garlic, onions to the cooker. 

      Boneless butt: cook on low for 8-10 hours or until fork tender. Bone-in butt: 10-12 hours or until fork tender.

      Shred the pork with tongs or forks while in the cooker. Discard the bone.

      Optional: remove the whole pork and place on a bowl/plate. Then use tongs or 2 forks to shred the meat. Set aside. Save the liquid for frying.

      Frying: Use an iron skillet or nonstick-pan. Add 1 tbsp oil and heat to medium-high. Add ⅓ of the shredded meat and ⅓ of the liquid to the pan. Cook for 5-8 minutes or until the liquid has evaporated and the meat begins to crisp. Set crisped meat aside.

      Repeat previous steps at least two more times to crisp the remaining pork. Make sure to flip/turn the meat as you cook to crisp all sides. 

      Serve on corn tortillas.

          Instant Pot Honey Spiral Ham

          • 7-8 lbs spiral ham
          • 1 cup honey
          • 1 cup brown sugar
          • 20 oz pineapple chunks with juice

          Instructions
           

          • Place ham in the cooker. Top with the brown sugar, pineapple chunks (with juice), and honey.
          • Place the lid on. Pressure cook on high for 5 minutes, followed by a natural release (approx. 10 minutes). Follow the manufacture instructions for releasing the pressure. Then remove the lid. 
          • Remove the ham from the cooker and place on a serving tray.

            Pour the orange juice and garlic down the side (careful not to wash off the rub).

            Then top with the chipotle peppers and adobo sauce.

            Pressure cook on high for 90 minutes with a natural release (approx. 25-30 min). Transfer the cooked meat to a bowl/plate.

            Use tongs or 2 forks to shred the meat.

            Return the meat to the pot. Season with salt & pepper. Optionalremove/discard the grease that is floating on top of the liquid before returning the meat to the cooker.
