In a large bowl: add whole San Marzano tomatoes with juice. Use hands to crush the tomatoes. Add water to the tomato can, stir and set aside.

Heat a sauce pan to medium heat. Add olive oil and wait for 30-35 seconds or until hot. Add minced garlic and sauté for 1-2 minutes or until fragrant.

Add crushed tomatoes & water from the can

Add salt, sugar, red pepper flakes and mix everything together.

Add basil leaves and mix (submerge the leaves in the sauce).

Simmer for 25 minutes or until the sauce has thicken.

Sauce should be enough for 1 lb of spaghetti noodles. Serve & Enjoy!

Ingredients
  

  • 28 oz Whole San Marzano Tomatoes
  • 1 cup water
  • ¼ cup extra virgin olive oil
  • 1 tsp salt
  • 1 tsp sugar
  • ¼ – ½ tsp red pepper flakes
  • ½ – ¾ cup fresh basil leaves
  • 6 garlic cloves minced

Instructions
 

  • In a large bowl: add whole San Marzano tomatoes with juice. Use hands to crush the tomatoes. Add water to the tomato can, stir and set aside.

    Air Fryer Pickle Brined Chicken Tenders are juicy with dill flavors.     Clean and pat the chicken breast dry using paper towel(s). Slice the breasts into strips or buy pre-cut tenders. Place chicken in a bowl.

    Then pour in the pickle juice. Be sure to submerge the chicken in the juice.

    Cover & marinate for 8 hours. 

    Discard the pickle juice and pat dry the chicken with paper towels. 

    Preheat the air fryer to 400°F.  In a shallow dish: combine breadcrumbs, panko, salt, pepper and mix. In a separate shallow dish: whisk the 2 eggs. 

    Dip the chicken tenders in the eggs. Then coat the chicken in the breadcrumbs mixture. Transfer the chicken to a baking rack. Coat both sides of the chicken with cooking spray.

    Place chicken in the air fryer basket. (Optional: coat the basket with cooking spray just right before placing the chicken).

    Air fry for 10 minutes (flip half way) or until the internal reaches 165°F . (Depending on the size of your air fryer: repeat this step as necessary).

    Serve with your favorite dip.

    • ½ cup seasoned breadcrumbs

      In a medium bowl: add halves cherries, cornstarch, and lemon juice.

      Mix everything together and set aside until ready to use.

      In a another bowl: combine flour, sugar, baking powder, baking soda, salt and mix.

      Add melted butter

      Mix everything together until you form a crumble mixture. Reserve ¼ of the mixture & set aside. 

      Add the rest of the mixture to the pan and press to the bottom to form the crust (use a measuring cup to press down). 

      Spread and level out the cherries filling on top of the crust.

      Sprinkle the reserved mixture on top filling.

      Bake for 20-25 minutes or until the crumble is lightly golden brown. 

      Remove the pan from the oven and let cool completely for at least 2 hours in the pan.

      Cut into 9 pieces.

      Refrigerate the leftovers in an airtight container.

      • 2 cups cherries (fresh or frozen) pitted & cut in half
      • 1 tbsp cornstarch
      • 1 tbsp lemon juice

      Flour Mixture

      • 1 ½ cups all-purpose flour
      • ½ cup unsalted butter melted & cooled
      • ½ cup granulated sugar
      • ½ tsp baking soda
      • ½ tsp baking powder
      • ¼ tsp salt

      Instructions
       

      • Preheat the oven to 375°F. Place parchment paper with overhanging edges on the bottom of the 8"x 8" pan (this will help when removing the crumble bar from the pan later). Grease the sides with cooking flour spray or butter.

        Shrimp Tacos with Garlic Cilantro Sauce

        Fresh delicious Shrimp Tacos with Garlic Cilantro Sauce is full of tender shrimp and covered with a creamy garlic flavored cilantro sauce.         Blend until smooth. If it’s thick add more water. Season with salt & pepper if needed

        In a bowl: add sliced cabbage. Add half of the garlic cilantro sauce and mix everything together.

        Clean, peel, devein the shrimps. Dry with paper towel.

        In a bowl: add shrimp, salt, chili, cumin, onion, garlic, cayenne and mix well.

        Heat the pan/skillet to medium-high. Add oil and wait for 30-45 seconds. Cooking in batches: add shrimp to the pan. Cook for 45-60 seconds on each side until opaque (be careful to not over cook the shrimp).

        Remove & place on a serving tray. Continue with the rest. 

        Cook the tortillas. Then, add shrimp

        Add cabbage slaw & drizzle garlic cilantro sauce.

        Serve with Cotija or Mexican cheese

        Shrimp Tacos

        • 1 lb large or x-large shrimps
        • 1 tsp salt
        • 1 tsp chili powder

        Garlic Cilantro Sauce

        • ½ cup chopped cilantros

        • ¼ cup lime about 2-3 limes

        Instructions

          Smash the ripe bananas using a fork or potato masher.

          Add brown sugar, eggs, vanilla extract and mix. Add melted butter and mix. 

          In a bowl: add flour, salt, baking powder & baking soda while mixing everything together. (I highly recommend sifting the dry ingredients before adding to the wet ingredients, this will make the batter fluffy and not lumpy). Combine wet and dry ingredients together. Mix until well combined. 

          Add 1 cup of blueberries (if using frozen blueberries: do not let thaw, mix in while still frozen) then gently fold the batter with spatula until evenly distributed throughout the batter (do not over mix or use a mixer on this step, be gentle). 

          Use an ice cream scooper or spoon to measure even portions. As you carefully place each scoop of batter in the muffin tin (should be exactly 12 scoops)

          Sprinkle ½ cup of blueberries on top of the batter. 

          Bake for 25-28 minutes or until lightly golden brown. Let the muffins cool in the tin for about 5 minutes and then transfer them to a baking rack to finish cooling completely.

          Can be kept up to a week. Serve & Enjoy!
