Homemade Condensed Milk

Deliciously simple homemade condensed milk is fun to make and goes great in your morning coffee. Slowly simmer the milk to combine it with the sugar for a rich additive that will sweeten any dish you can imagine. Homemade Condensed Milk

Ingredients
  

  • 2 cups whole milk
  • ¾ cup granulated sugar

Instructions
 

  • Add milk and sugar to a non-stick sauce pan then whisk.
  • Heat the sauce pan to medium. Bring to a simmer, then turn down the heat to low (not medium-low) and leave uncovered. Cook for 40-50 minutes or until thickens. Remove the pan from the heat and let cool. Then transfer the contents to an airtight container for storage until ready to use.
    Important note: Make sure to stir the milk frequently, this will prevent the condensed milk from turning brown or scorching.

Refrigerate up to 2 weeks. Enjoy!

The sweet strawberry laced pastry is a decadent treat that can be made with the simplest of ingredients and enjoyed in a boundless variety of ways. My standard go to is a nice pastry with a hot espresso or good cup of coffee.

    In a non stick pan: add diced strawberries.

    Cornstarch, sugar, lemon juice and mix.

    Turn up the heat to medium and cook for 5 minutes or until thickens. Stir occasionally.

    Remove the pan from heat source and transfer the strawberries to a bowl. Reserve about 1 tsp of strawberry sauce for the glaze. Let cool for 15-20 minutes.

    Egg wash: In a small bowl: combine egg, water and whisk. Brush the egg wash on top of the pastries.

    Place parchment paper on a working surface (this will help prevent the puff sheets from sticking to the working surface).

    Unfold the puff sheet. Cut the dough into 3 long pieces. Add 2 Tbsp of strawberries filling to the dough. Fold and seal the dough edges together. Repeat with the other sheet. Brush egg wash.

    Preheat the oven to 400°F. Transfer the pastries to a baking sheet (make sure to use parchment paper).

    Bake for 15 minutes or until golden. Remove from the oven.

    Strawberry Glaze: In a small bowl: combine powdered sugar, milk, 1 tsp strawberry sauce and whisk until smooth.

    Drizzle the strawberry glaze on top of the pastries.

    Serve

    • 2 pastry sheets brand preferred: pepperidge farm
    • 1 lb fresh strawberries cleaned & diced
    • ¼ cup sugar
    • 2 tbsp cornstarch
    • 1 tbsp lemon juice

    Egg Wash

    • 1 egg
    • 1 tbsp water

    Strawberry Glaze

    • ½ cup powdered sugar
    • 1 tbsp milk
    • 1 tsp strawberry syrup from the pan

    Instructions
     

    • Preheat the oven to 400°F.

      Strawberry Muffins

      Warm finger sized rich moist muffins that are filled with juicy bites of sweet strawberries are subtly elegant and absolutely intoxicating.       In a large bowl add wet ingredients then mix until smooth. Place a hand sifter over the bowl.

      Add flour baking powder and salt then sift. Remove the hand sifter from the bowl. Mix everything together with the mixer.

      Add diced strawberries

      Then gently fold the batter until well combined (do not over mix or use a mixer).

      Use an ice cream scooper to evenly place batter into the muffin tin (should be exactly 12 scoops).

      Bake for 18-20 minutes or until golden brown. Let the muffins cool in the tin for about 15 minutes and then transfer them to a baking rack until completely cooled.

      • Muffin Tin

      Ingredients
        

      • 8 oz Strawberries rinsed, remove stem & diced

      Wet

      • 1 cup granulated sugar
      • ½ cup milk
      • ½ cup canola or vegetable oil
      • 1 tsp vanilla extract
      • 2 large eggs room temperature

      Dry

      • 2 cups all-purpose flour
      • 2 ½ tsp baking powder
      • ½ tsp salt

      Instructions
       

      • Preheat the oven to 375°F.
      • In a large bowl add wet ingredients then mix until smooth. Place a hand sifter over the bowl. Add flour, baking powder and salt then sift. Remove the hand sifter from the bowl. Mix everything together with the mixer. Add diced strawberries then gently fold the batter until well combined (do not over mix or use a mixer).
      • Coat the muffin tins with cooking spray or butter (optional: muffin paper liner)
      • Use an ice cream scooper to evenly place batter into the muffin tin (should be exactly 12 scoops).
      • Bake for 18-20 minutes or until golden brown. Let the muffins cool in the tin for about 10 minutes and then transfer them to a baking rack until completely cooled.

        Brown Sugar Syrup

        This delicious Brown Sugar Syrup is a wonderful on hand sweetener that goes great in oatmeal, coffee, on toast, with tea or as a darkened simple syrup for those jigger measurements we all enjoy from time to time. I recently have been on a oat milk and brown sugar coffee kick for my afternoon treat when I ned to get motivated. My husband absolutely loves adding just a teaspoon to his morning espresso for what he calls a deliciously sweet last sip of caffeinated delight.

        Remove the sauce pan from the heat. As it cools the syrup will thicken. Transfer the contents to a jar or sealable container for storage until ready to use.

          Ingredients

          In a small bowl: combine salt, black pepper, onion, garlic, rosemary and mix.

          Pat the roast dry with a paper towel. Pour and rub olive oil all over the roast.

          Then coat the roast with the seasoning mixture. Place the roast on a baking rack on a baking sheet. Bake in the oven for 1 ½ hours for medium-rare (internal temp.130°-135°F) (highly recommended) or 2 hours for medium (internal temp. 140°-145°F). Open the door and confirm the anticipated Internal temperature using a meat thermometer.

          Remove the roast from the oven and let cool (uncovered) to room temperature for 30 minutes.

          Transfer the roast to a dish. Cover and refrigerate for at least 4 hours.

          Or overnight (preferred).

          Use a meat slicer or a very sharp knife to thinly slice the meat just prior to eating.

          Slice the hoagie bread or sandwich bun in half. Spread mayonnaise on the bread. Add roast, tomatoes, lettuce & onions.

          Highly recommend seasoning with salt, black pepper, dried oregano & red wine vinegar.

          • 4 lbs round eye roast
          • 3 tbsp extra virgin olive oil
          • 3 tsp salt
          • 2 tsp black pepper
          • 2 tsp onion powder
          • 2 tsp garlic powder
          • 2 tsp dried rosemary

          Sandwich

          • Hoagie buns, sandwich buns or French bread
          • chopped lettuce
          • sliced tomatoes
          • sliced sweet onions
          • mayonnaise
          • salt, pepper & dried oregano
          • red wine vinegar

          Instructions
           

          • Remove the roast from the refrigerator and let sit at room temperature for 1 hour prior to cooking.
          • Preheat the oven to 275°F.

            Air Fryer Buttermilk Fried Chicken

            Air Fried Buttermilk Chicken is filled with sweet marination that explodes with juicy flavors as you bite through the outer crunchy layer of tasty battered skin. The key to this recipe that gives best results is the length of time the chicken spends in the buttermilk marinade. I prefer to let the chicken set overnight but if you are pressed for time and same day preparation, a minimum of 4 hours marination still makes for some really juicy chunks of chicken. The Air Fryer does a great gob of convecting the cooking spray to sizzle the batter and skin to near perfection. It took me a few tries to get to this recipe and I am happy to share with you some solid tips to make a great Air Fried Chicken for you next food adventure. The flavor profiles I created for this recipe are very close to my traditional down-home recipe but have been tweaked slightly to give you the best possible results using the Air Fryer. We love our fried chicken around here and I am sure you will love this recipe once you try it.

            Air fried buttermilk chicken takes a down home traditional style recipe and uses a less grease centric cooking method.             Preheat the air fryer to 360°F.  Generously coat all sides of the chicken with PAM’s original cooking spray (do not use olive oil because the flour mixture will stick to the bottom of the air fryer basket). Coat the air fryer basket with cooking spray before placing the chicken in.

            Thighs: cook for 24-26 minutes ((flip after 15 minutes and make sure to coat both sides of the chicken with cooking spray ~ this will make it crispy) or until golden brown and crispy.

            Drumsticks: cook for 20-22 minutes (flip after 15 minutes and make sure to coat both sides of the chicken with cooking spray ~ this will make it crispy) or until golden brown and crispy.

            Air Fryer Buttermilk Fried Chicken

            • 1 tsp salt

            Flour Mixture
