Smothered Pork Chops

Juicy, succulent, gravy covered and flavor infused Smothered Pork Chops is a darn good biscuit friendly hearty meal that will satisfy any hunger. Pat the pork chops until dry.

In a shallow bowl/platter: add flour, onion powder, garlic powder, paprika, salt, pepper, cayenne and mix. Coat both sides of the pork chops with the flour mixture, then gently shake off the excess.

Reserve 2 tbsp of the flour mixture.

Heat s skillet or pan to medium-high. Add olive oil and 2 tbsp butter. Wait until butter has melted and is hot. Add pork chops (about 2) and cook 3 minutes per-side or until golden brown. Remove pork chops and set aside. Continue with the rest of the pork chops (may need to add more oil & butter in between).

In the same pan, add 1 tbsp butter. Add onions and sauté for 8-10 minutes or until caramelized. Add garlic and cook for 1 minute or until fragrant. Add the 2 tbsp flour mixture and mix well.

Add ¼ cup of chicken broth and mix. Pour in the rest of the chicken broth and mix. Add heavy whipping cream and whisk.

Return pork chops to the pan and bring to a simmer. Cook for 5 minutes or until the sauce thickens. Make sure to coat the pork chops with gravy sauce and rotate while cooking. If the sauce is too thick add a bit more water or cream.

Season with salt and pepper to taste.

Serve with mashed potatoes, salad, rice, noodles or vegetables. Enjoy!

Ingredients
  

  • 4 pork chops with bone
  • 1 cup low- sodium chicken broth
  • ½ cup heavy whipping cream
  • ½ cup flour
  • 2 tbsp olive oil
  • 3 tbsp (divided) butter
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp ground cayenne pepper
  • 1 onion sliced
  • 3 garlic cloves minced

Instructions

    Chicken Wings with Homemade Buffalo Sauce (Oven & Air Fryer)

    This recipe captures the most important features of a good Buffalo Sauce, the flavor, heat and balance to the acidity.     Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown. 

    Air Fry:  cook for 22-24 minutes (make sure to flip half way , 11-12 minutes per-side) or until the skin is crispy and golden brown .

    In a non-stick pan: combine cayenne sauce, oil, garlic, onion, sugar and whisk. Cook on low-medium for 5-7 minutes. Remove the pan from heat source and let rest for 10 minutes.

    1 large egg yolk

    In a small bowl: whisk egg yolk. In a separate small bowl: combine cornstarch, water and whisk until dissolved.

    Slowly add yolk mixture to the pan and whisk until smooth.

     I recommend whisking at the same time to prevent clumping. 

    Pour sauce over chicken wings.

    Serve immediately & enjoy!

    Chicken Wings with Homemade Buffalo Sauce

    Ingredients
      

    • 2 lbs chicken wings
    • 2 tbsp olive oil
    • ½ tsp salt

    Buffalo Sauce

    • 1 cup cayenne pepper sauce
    • â…“ cup canola oil
    • 2 tsp cornstarch
    • 2 tsp water
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp granulated sugar
    • 1 large egg yolk

    Instructions
     

    • Preheat the oven or air fryer to 400°F.
    • Clean & pat the chicken wings dry with paper towel. Transfer the chicken to a bowl. Add orange juice and mix. Then coat the wings with salt & oil. Mix well. Transfer the wings to a baking sheet with a rack or air fryer basket. Coat both sides of the wings with cooking spray.
    • Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown.

      Southwestern Braised Pork Steak

      Heat the dutch oven or pot to medium-high. Add oil and wait until hot. Place 2 pork steaks in the dutch oven or pot and sear for 2-3 minutes or until golden brown. Remove the pork and and set aside. Repeat this step with the other 2 porks.

      Add sliced onions and sauté for 8-10 minutes or until caramelized.

      Add garlic and cook for 2 minute or until fragrant. Add brown sugar, tomato paste, and mix.

      Add stout ale and deglaze the bottom of the pot.

      Add chicken broth, cumin, chipotle and mix.

      Return seared pork then add the thyme to the pot. Cover for with a lid and cook for 1 hour on the middle rack.

      Remove dutch oven from the oven. Place the dutch oven on the stove top. Remove pork and place on a plate (cover). Bring the liquid to a simmer. In a small bowl: combine butter (melted or softened) and flour. Add 1 tbsp of mixture to the liquid and whisk. Continue this step until the mixture has is gone. Continue whisking while adding mixture to prevent clumps/lumps. Simmer for 10-15 minutes or until to your desire gravy consistency. Return pork chop to the pot. Season with salt & pepper to taste.

      Serve & enjoy!

      • 4 pork steak

      • 12 oz Stout Ale Beer
      • 2 tbsp oil
      • 2 tbsp brown sugar

      • 1 tbsp ground chipotle or ancho
      • 1 tsp salt
      • ½ tsp black pepper
      • 6-8 thyme stems or 1 tsp dried thyme
      • 3 garlic cloves minced
      • 2 onions sliced

      Instructions
       

      • Preheat the oven to 325°F.
      • Pat the pork steak until dry. Season both sides with salt & pepper.
      • Heat the dutch oven or pot to medium-high. Add oil and wait until hot. Place 2 pork steaks in the dutch oven or pot and sear for 2-3 minutes or until golden brown. Remove the pork and and set aside. Repeat this step with the other 2 porks.

        Spanish Rice

        Add rice and sauté for 3-4 minutes or until lightly toasted.

        Add garlic and cook for 1 minute or until fragrant. 

        Add chicken broth, salt, pepper, cumin, paprika, chili, & oregano.

        Add tomato sauce and stir. Then, bring to a simmer.

        Reduce the heat to low and cover with a lid.

        Cook for 15 minutes (rice should be tender, not soggy and liquid should be fully absorbed).

        Remove the pan from the heat source. Let rest with lid on for another 10 minutes. Remove lid and mix.

        Season with salt to taste.

        Garnish with chopped cilantro.

          Old Fashion Beef Stew

          Old fashion Beef Stew features is a cornucopia of vegetables with filling tender melt in your mouth hunks of beef. The broth is very savory and is biscuit sopping good. The carrots take a more prominent role in this recipe but strike a harmonic medley with the potatoes and beef. Delicious tasty and good to the last bite. This affordable and easy to make selection is perfect on any occasion.  Full of flavor, textures and at a budget price, this is perfect belly filler meal planning. Quick and tasty this recipe will call everyone to the table. Serve with homemade cornbread (my husbands favorite), biscuits (my daughters favorite) or my personal favorite fresh baguette.           In a large bowl: place beef, salt, pepper and mix. Coat beef with flour, then gently shake off the excess.

          Heat the dutch oven or pot to medium-high. Add oil and wait until hot. Place half of the beef in the dutch oven or pot and sear all sides for 3-5 minutes or until brown.

          Repeat this step with the other half of beef. Remove the beef and set aside.

          Add onion and sauté for 2-3 minutes or until translucent. Add garlic and cook for 1 minute or until fragrant. Pour red wine vinegar and deglaze the bottom of the pot. Add tomato paste, seared beef and mix. Add red wine, beef broth, bay leaves and thyme to the pot. Bring to a simmer. Cover the pot with a lid. Reduce the heat to low and cook for 1 ½ hours (keep covered throughout – repeat do not remove lid during this step unless adding ingredients). 

          Remove lid: add potatoes and cover for another 15 minutes.

          Remove lid: add carrots and cover for another 15 minutes.

          Remove lid and discard bay leaves & thyme. Gently stir the stew with a ladle. Bring to a simmer for 10-15 minutes or until the liquid reduces to your liking. Season with salt & pepper to taste. 

          Serve & enjoy!

          Serve with bread.

          Old Fashion Beef Stew

          Ingredients
            

          • 1 lb chuck roast or beef stew cut into cubes
          • 1 ½ lb yukon gold potatoes (about 6) peel & cut into cubes
          • 6 carrots peeled & cut into 1.5"
          • 1 onion chopped
          • 4 garlic cloves minced
          • 5-6 thyme stems
          • 2 bay leaves
          • 4 cups low- sodium beef broth
          • 1 cup red wine Merlot, Pinot noir, Cabernet sauvignon or etc.
          • ¼ cup all-purpose flour
          • 3 tbsp red wine vinegar
          • 2-3 tbsp oil
          • 1 tbsp tomato paste
          • 2 tsp salt
          • 1 tsp black pepper

          Instructions

            • Place the skillet in the oven. Bake for 20 minutes.
            • Place provolone cheese on the Italian hoagies or subs. Toast to your liking. Place sausage and peppers on the hoagies. Serve with hot marinara sauce.
