In a small bowl: combine all the seasonings together.

Place the roast on a dish, cover and refrigerate for at least 12 hours or up to 24 hours (recommend for 24 hours for best result).

Remove the roast from the refrigerator and let sit at room temperature for 1 hour prior to cooking. Preheat the oven to 275°F. Bake in the oven for 1 hour for medium-rare (internal temp.130°-135°F) (highly recommended) or 1 ½ hours for medium (internal temp. 140°-145°F). 

Remove the roast from the oven and let cool (uncovered) to room temperature for 30 minutes. Transfer the roast to a dish. Cover and refrigerate.

At least 4 hours or overnight (preferred). 

Use a meat slicer or a very sharp knife to thinly slice the meat just prior to eating.

Serve with hoagie

Serve with sliced bread.

Ingredients
  

  • 3 lbs round eye roast
  • 2 tbsp olive oil
  • 1 tbsp paprika
  • 2 tsp salt
  • 2 tsp garlic powder
  • 2 tsp onion powder
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp celery seeds
  • ½ tsp ground cayenne pepper

Remoulade Sauce

Instructions
 

  • In a small bowl: combine all the seasonings together.
  • Pat the roast dry with a paper towel. Pour and rub olive oil all over the roast. Then coat the roast with the seasoning mixture. Place the roast on a dish, cover and refrigerate for at least 12 hours or up to 24 hours (recommend for 24 hours for best result).
  • Remove the roast from the refrigerator and let sit at room temperature for 1 hour prior to cooking. Preheat the oven to 275°F.
  • Bake in the oven for 1 hour for medium-rare (internal temp.130°-135°F) (highly recommended) or 1 ½ hours for medium (internal temp. 140°-145°F). Open the door and confirm the anticipated Internal temperature using a meat thermometer.
  • Remove the roast from the oven and let cool (uncovered) to room temperature for 30 minutes. Transfer the roast to a dish. Cover and refrigerate for at least 4 hours or overnight (preferred). 
  • Use a meat slicer or a very sharp knife to thinly slice the meat just prior to eating. Toast bread. Spread remoulade sauce on the bread. Add roast, tomatoes, lettuce & onions.

    In a sauce pan: add. butter.

    Combine all the ingredients together and whisk.

    Turn the heat to medium. Simmer the sauce for 5-6 minutes or until thickens. Add more water if too thick.

    Clean & pat the chicken wings dry with paper towel. Transfer the chicken to a bowl. Then coat the wings with salt, pepper & oil.

    Mix well. Transfer the wings to a baking sheet with a rack or air fryer basket. Coat both sides of the wings with cooking spray.

    • Oven: cook for 30 minutes then, flip/turn the wings & finish cooking for 20-22 minutes or until golden brown. 

    Air Fry:  cook for 22-24 minutes 

    (make sure to flip half way , 11-12 minutes per-side) or until the skin is crispy and golden brown

    Transfer to a bowl

    Add sauce

    Mix

    Best served with rice or noodles. Enjoy!

    • 2 lbs chicken wings
    • 2 tbsp oil
    • ½ tsp salt
    • ½ tsp black pepper

    Sauce

    • ½ cup Sriracha
    • ¼ cup water
    • 2 tbsp unsalted butter
    • 3 tbsp ketchup
    • 2 tbsp soy sauce
    • 1 tsp garlic powder
    • salt to taste

    Instructions
     

    • Preheat the oven or air fryer to 400°F.
    • Clean & pat the chicken wings dry with paper towel. Transfer the chicken to a bowl. Then coat the wings with salt, pepper & oil. Mix well. Transfer the wings to a baking sheet with a rack or air fryer basket. Coat both sides of the wings with cooking spray.

      In a bowl: combine mayonnaise, honey, lemon juice and whisk until smooth. Set aside until ready to eat.

      In a large bowl: combine shrimp and cornstarch. Mix well until the shrimp is coated with cornstarch.

      In separate bowl: combine flour, salt, carbonated water then whisk until smooth. Dip the shrimp into the wet batter.

      Cook the shrimp in the oil for 2-3 minutes per-side. Transfer the cooked shrimp to a cooling rack. Repeat steps for rest of the shrimp.

      Heat a non-stick pan to medium heat. Add brown sugar, water, butter and walnuts. Mix everything together and cook for 3-4 minutes or until the liquid has absorbed into the walnuts. Set aside.

      Serve with rice, noodles or salad. Enjoy!

      Honey Walnut Shrimp

      Ingredients
        

      • 1 lb jumbo shrimp peeled & deveined
      • ½ cup cornstarch
      • 2 cups canola or vegetable oil

      Batter

      • 1 cup Carbonated water
      • 1 cup all-purpose flour
      • ½ tsp salt

      Caramelize Walnuts

      • ½ cup walnuts
      • 2 tbsp unsalted butter
      • 2 tbsp brown sugar
      • 2 tbsp water

      Sauce

      • 3 tbsp mayonnaise
      • 3 tbsp honey
      • 2 tsp lemon juice

      Instructions
       

      • Heat the oil up to 350°-360°F.
      • In a bowl: combine mayonnaise, honey, lemon juice and whisk until smooth. Set aside until ready to eat.
      • In a large bowl: combine shrimp and cornstarch. Mix well until the shrimp is coated with cornstarch.

      Caramelize Walnuts

        Carrots peeled & chopped

        Yukon gold potatoes peeled & chopped

        In a small bowl, combine all seasonings together.

        Rub the seasoning mixture all over the chicken drumsticks.

        Heat the pan up to medium-high and add 2 tbsp oil. Sear the drumsticks for 3-5 minutes.

        Add chicken broth and chopped potatoes. Cover with a lid. Turn down the heat to medium and cook for 15 minutes.

        Remove the lid; add chopped carrots. Cover again and cook for another 15 minutes.

        Remove lid; add heavy whipping cream. Let the chicken simmer in the heavy whipping cream for ~5-8 minutes or until the sauce thickens a little. Remove from the heat source.

          Asian Honey Chicken Breast

          Sweet moist tender chicken that is smothered in honey infused sweetness. Healthy, easy to make Asian Honey Chicken Breast is a quick meal for a busy day.           Clean and slice the chicken in half – lengthwise (4 filets). Optional: Use a meat pounder to tenderize the each chicken to an even â…“” thick.

          Season both sides of the breasts with salt & pepper. Place the flour in a shallow bowl. Coat both sides of the chicken with flour.

          Then gently shake off the excess.

          Heat the pan up to medium-high. Add 2 tbsp butter (wait until it melts). Add chicken breasts and cook for 3-4 minutes per-side or until lightly golden brown. Depending on the size of the pan, you may need to do this is 2 batches. Remove breast and set aside. 

          Add butter and wait for 30 seconds. Add garlic, soy sauce, honey, vinegar and mix.

          Return chicken to the pan. Cook for 2-3 minutes or until the sauce has reduced by about half.

          Flip the chicken every minute or so to get a good coat of sauce.

          Serve with rice, noodles or salad.

            Place the salmon (skin side down) in the basket. Cook for 9 minutes. Remove the salmon from the basket then transfer to a plate.

            Spread the rest of the glaze on the salmon.

            Sprinkle with salt and black pepper to taste.

            • 2 tbsp extra virgin olive oil
