Chicken Satay Skewers with Peanut Sauce

Skewered marinated Thai Flavored deliciously tender and mouthwatering Chicken Satay is a nice addition to any home cooking menu. Change up  the normal rotation with a simple to create healthy meal that is full of flavor and features a luscious peanut dip. Enjoy these gorgeous coconut milk soaked little beauties with rice, lettuce or just the way they are. Delicious Chicken Satay with Peanut Sauce

Marinate Ingredients

Trim the fat off the chicken thighs. Cut into cubes (¾” x ¾”).

Place the chicken cubes in a large bowl. Add the rest of the marinade ingredients and mix well until everything is evenly coated.

Cover and refrigerate for at least 3 hours but preferably overnight.

Soak the 6″ skewers in water for 1 hour.

Thread the chicken into the skewers. Recommended: brush chicken with oil.

Preheat the grill to medium-high.

Place chicken skewers on the grill and cook for 12-16 mintues. Turn the skewers occasionally, until they are fully cooked (internal should be about 165°F). T

ransfer to a plate and tent with aluminum foil until ready to serve.

Peanut Sauce Ingredients

In a bowl: combine soy sauce, sugar, chili, lime, ginger, peanut butter & hot water (make sure to add the hot water last).

Mix until the sauce is smooth. Add more hot to achieve your desired consistency. Set aside.

Add crushed roasted peanuts & red peppers to the sauce. Garnish with cilantro.

Serve & Enjoy!

Ingredients
  

Marinate

  • 2 lbs boneless skinless chicken thighs cut into cubes
  • cup coconut milk
  • 2 tbsp minced lemongrass
  • 1 tbsp brown sugar
  • 1 tbsp fish sauce
  • 1 tsp ground turmeric
  • 1 tsp ground coriander
  • 3 garlic cloves minced
  • 2 small shallots minced

Peanut Sauce

  • ½ cup creamy peanut butter
  • cup hot water
  • 2 tbsp low-sodium soy sauce
  • 2 tbsp lime juice about 1
  • 1 tbsp brown sugar
  • 2 tsp chili sauce (Sambal Oelek, Gochujang or Sriracha) adjust to your liking
  • 1 tsp ginger grated

Instructions
 

Marinate

      Preheat the air fryer to 400°F for 3 minutes. Transfer the seasoned potatoes to the air fryer basket. 

      Air fryer for 22-25 mintues or until tender (make sure to flip or shake the potatoes in the basket mid way through cooktime).

      Serve with your favorite sauce.

        Instant Pot Loaded Baked Potato Bites

        Soft warm creamy fully loaded baked potato bites are a simple and delicious side that is extremely filling and rewarding to eat. I crafted this dish the way we prefer our sides with our BBQ Ribs. This recipe is one of our preferred sides for our BBQ ribs. My husband loves his covered in extra bacon but you can tailor this recipe to settle your hunger and your cravings this cooking season. Potatoes like this are great covered in a nice chili (bean-less) or as a side for your next eatfoodlicious meal.

        Baby potatoes

        Bacon & cheese

        Cut the bacon into 1″ pieces (the thicker the bacon the better).

        Clean, scrub & rinse the baby potatoes.

        Slice the potatoes in half.

        Set to sauté high. Add cut bacon and cook for 7-10 minutes or until crispy. Transfer the bacon bits and place them on a paper towel (to remove excess oil). Set aside until ready to cook. Drain the bacon grease from the IP.

        Add baby potatoes, salt, pepper, paprika, onion & garlic to the cooker. Mix everything together. Place the lid on. Pressure cook on high for 8 minutes and do a quick release (exercise caution when releasing pressure from the cooker). Follow the manufacture instructions for releasing the pressure. Remove the lid. 

        Add 1 cup of shredded cheese and gently fold/mix until the cheese has melted (recommend using a wooden spoon).

        Repeat with the remaining cup of cheese.

        Mix

        Add sour cream & cooked bacon.

        Gently fold/mix until everything is well coated (until sauce has become uniform and consistent).

        Transfer to a plate/bowl. Top with chopped green onions.

        Serve & Enjoy!

        Ingredients
          

        • 3 lbs baby potatoes
        • 1 ½ cups shredded cheddar cheese
        • ½ cup water
        • ½ cup sour cream
        • ½ tsp paprika
        • ¼ tsp salt
        • ¼ tsp black pepper
        • ¼ tsp onion powder

        • 7 bacon cut into 1" pieces
        • 2 green onions chopped

          Cheeseburger Sliders

          Cheese covered beef patties dripping delicious juices and packaged in little sweet buns of toasted joy. Cheeseburger sliders are user friendly and the kids will love them. Plate these up with some fresh made tater wedges and call it time to eat. These are almost as much fun to eat as they are to make. You can create miniature burgers with different toppings and have different experiences with each. Feel free to throw on a couple of slices of bacon if you want to take it to the next level.

          Combine ground chuck/beef, salt, pepper, Worcestershire, garlic in a baking dish/pan (13″x 9″) and mix evenly.

          Press the meat into a flat and even layer.

          Place the dish/pan in the oven and bake for 25 minutes.

          Slice the hawaiian/dinner rolls in half (lengthwise). Set aside until ready to cook.

          Remove the dish/pan from the oven. Transfer the cooked meat to a cutting board/plate and drain the grease. Spread 1 tsp melted butter in the dish/pan.

          Place the bottom half of the rolls in the dish/pan.

          Then build the slider in this order; cooked meat.

          Sliced cheese

          Chopped onions & chopped pickles.

          Top half of the roll. Brush melted butter and sprinkle sesame seeds over the top of the rolls.

          Bake for 20 minutes or until the bread is golden brown.

          Slice the sliders. Optional condiments: mayonnaise, ketchup, mustard & hot sauce.

          • 2 lbs ground chuck or beef
          • 2 tsp Worcestershire
          • 2 tsp garlic powder
          • 1 tsp salt
          • 1 tsp pepper
          • ½ cup onions diced
          • cups pickles diced
          • 2 tbsp + 1 tsp unsalted butter melted
          • 1 tbsp sesame seeds
          • 12 cheddar cheese sliced
          • 12 hawaiian or dinner rolls

            Chinese Coca Cola Chicken Wings

            Fry them in 2 batches and careful not to overcrowd as they may stick to each other.

            Cook for 2-3 minutes (per-side) or until slighly golden per batch. Set aside on a plate/bowl and continue with the rest of the chicken wings.

            Return the first batch of chicken wings to the pan.

            Add thinly sliced ginger, shaoxing cooking wine, soy sauce, salt & coca cola.

            If you prefer the wings to be slightly dark brown, add ½ tsp dark soy sauce to the pan. Mix the sauce.

            Bring the sauce to a simmer then turn down the heat to medium and cook for 35-45 minutes.

            Or until the sauce has thickened (until the excess water has evaporated to your liking). Make sure to stir and flip the chicken wings frequently.

            Garnish with red pepper, chopped green onion & white sesame seeds.

            Coca Cola Chicken Wings

            Ingredients
              

            • 2 lbs chicken wings
            • 2 tbsp vegetable or canola oil 
            • 2 tbsp shaoxing cooking wine or dry sherry
            • 2 tbsp soy sauce
            • ½ tsp salt
            • 12 oz coca cola
            • 0.50 oz fresh ginger peel and thinly sliced
            • ½ tsp dark soy sauce optional

            Toppings

            • chopped thai peppers
            • chopped green onions
            • white sesame seeds

            Instructions
             

            • Clean and pat the chicken wings dry with paper towels.
            • Heat a pan up to medium-high. Add oil and wait for 30-45 seconds.
            • Fry them in 2 batches and careful not to overcrowd as they may stick to each other. Cook for 2-3 minutes (per-side) or until slighly golden per batch. Set aside on a plate/bowl and continue with the rest of the chicken wings.
            • Return the first batch of chicken wings to the pan.

                Chicken Fritters with Garlic Aioli Dip

                Cheese filled fritters full of tender juicy chicken dipped in zesty Garlic Aioli is a pleasant snack and nice meal.                 Ingredients

                Depending on the size of your pan, use a ice cream scooper or a big spoon and scoop chicken fritters (about 4) place them in the pan. Space them out.

                Cook for 4-5 minutes on the first side or until the edges begin to brown.

                Then flip and gently press down on the fritters, cook for 2-3 minutes or until golden brown.

                Remove the fritters and place them on a paper towel to drain the extra oil; set aside. Repeat with the rest and add more oil if needed. You should have 12 fritters.

                In a small bowl: combine mayonnaise, lemon juice, salt & pepper.

                Mix well.

                Serve & Enjoy!

                • 2 tbsp canola, vegetable or peanut oil
