Chocolate Pie

Classic approach to an elegant Chocolate Pie that is smooth rich and delicious. Quick and tasty this recipe is easy to follow and anyone that appreciates a nice slice of delicious pie will enjoy it. This pie is perfect as a dessert or as a stand alone reward with a nice cup of coffee or a cold glass of milk. My family never leaves a good dessert alone until it is all gone. This pie was gobbled up down to the last crumb and left the ones that missed the last slice with long faces asking for more. In a 9″ pie pan: roll out the crust, place it in the pan and shape the edges with your fingers. Place parchment paper on top.

Then, add pie weights or dried beans (2 lbs) atop of the parchment paper. Bake the crust for 15 minutes. Remove the parchment paper and the pie weight/beans. Let cool for 15 minutes.

In a large bowl: add sugar, eggs, evaporated milk, vanilla extract, salt and mix well. Add melted butter and continue to mix.

Use a sifter to sift the cocoa powder (this will prevent lumps and will give you a smooth filling). 

Stir everything together until well combined.

Pour the chocolate mixture into the pie shell.

Bake the pie for 40 – 45 minutes or until the filling edges look set and the center is slightly jiggly. Cover the crust with aluminum foil if it begins to brown too quickly.

Cool for at least 4 hours before serving.

Serve with whipped cream and ENJOY!

  • 9" pie pan

Ingredients
  

  • 1 pie crust
  • 1 ½ cups granulated sugar
  • ¾ cup evaporated milk
  • ¼ cup unsweetened cocoa powder
  • ¼ cup unsalted butter melted
  • 1 tsp vanilla extract
  • ¼ tsp salt
  • 2 large eggs room temperature

Instructions
 

  • Preheat the oven to 325°F.

    Rub olive oil all over the chicken. Then rub the seasoning mixture all over the chicken.

    Optional: tie the legs together & tuck the wings behind the chicken’s back.

    Set the air fryer (8 QT) cook time for 1 hour. Coat the air fryer basket with cooking spray. Place the chicken “breast side down” in the basket. Cook for 45 minutes.

    Then flip the chicken and cook for another 15 minutes. 

    Remove and let cool for 15 minutes before serving.

    Serve

    Ingredients
      

    • 5 lbs whole chicken
    • 2 tbsp olive oil
    • 2 tsp salt
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tsp black pepper
    • 1 tsp paprika
    • ½ tsp dried oregano

    Instructions
     

    • Preheat the air fryer to 350°F.
    • In a small bowl: combine all the seasoning ingredients together (except for the olive oil) and set aside. Remove the neck, giblets and the package. Clean and rinse then pat the chicken dry with paper towels.
    • Rub olive oil all over the chicken. Then rub the seasoning mixture all over the chicken. Optional: tie the legs together & tuck the wings behind the chicken's back.
    • Set the air fryer (8 QT) cook time for 1 hour. Coat the air fryer basket with cooking spray.

      Heat the pan to medium-high. Add 2 tbsp oil. Add sliced sausages and cook for 5-6 minutes or until seared on both sides. Remove sausages and set aside. Drain the grease.

      Turn down the heat to medium. Add onions and sauté for 2-3 minutes or until fragrant. Add garlic and cook for 30-45 seconds or until fragrant. Add 1 cup of pasta water and deglaze the bottom of the pan. Add tomato paste & cajun seasoning.

      Heavy whipping cream and mix everything together. Add grated Parmesan cheese and mix.

      Then mix in the cooked noodles until the are well coated with sauce.

      Add the seared sausages to the noodles.

      Mix.

      Season with salt & pepper as needed. Then remove from heat source.

      Serve & Enjoy!

      Ingredients
        

      • 8 oz Fettuccine noodles
      • 1 lb cajun sausage sliced
      • 2 tbsp olive oil
      • 1 ½ cups heavy whipping cream
      • ½ cup freshly grated Parmesan cheese
      • 2 tbsp tomato paste
      • 1 tbsp cajun seasoning
      • ½ onion chopped
      • 3 garlic cloves minced

      Instructions
       

      • Follow the instructions on the package for pasta cook time (al dente). Then reserve about 1 cup of the pasta water.

          Overnight Brioche French Toast

          Gently fold and layer two rows of brioche bread slices in you baking pan. You should have 6 slices in each row. Then, firmly press/tuck the bread down in the form of the pan.

          In a large separate bowl: Beat the eggs then continue to whisk while adding brown sugar, sugar, cinnamon, nutmeg and vanilla extract (if using).

          Mix until well combined.

          Add milk & heavy whipping cream.

          Pour the egg batter over the bread in the pan and use a spoon to submerge the bread to allow for full saturation. Cover and refrigerate overnight.

          Remove the baking dish from the refrigerator. Preheat the oven to 350°F.

          Bake for 50-60 minutes or until a toothpick placed in the center comes out clean. Remove from the oven. Cool for 30 minutes or to room temperature prior to serving.

          Garnish with powdered sugar.

          Serve & enjoy!

          • 1 loaf Brioche bread thick slice
          • 2 cups milk
          • ½ cup heavy whipping cream
          • ½ cup granulated sugar

          • 1 tsp ground nutmeg
          • ½ tsp salt
          • 8 large eggs

            Then layer with pepperoni.

            Then, top with the upper halves of the sliders. Then brush or spread the butter mixture over the top of the rolls.

            Ingredients
              

            • 12 Hawaiian rolls
            • 1 ½ cups shredded mozzarella cheese divided
            • 1 cup pizza or marinara sauce divided
            • ½ cup grated Parmesan cheese
            • 6 oz pepperoni slices
            • ½ tsp dried oregano

            Butter Topping

            • 2 tbsp melted butter
            • 1 tsp dried parsley

            • Don’t pull the rolls apart. Cut them in half horizontally. Place the top halves aside and bottom halves in the baking pan (coat the bottom of the pan with cooking spray).
            • Spread ½ cup of the pizza sauce over the bottom halves of the sliders. Sprinkle ¾ cup mozzarella cheese next. Then layer with pepperoni. Sprinkle the rest of the mozzarella for the next layer. Then add grated Parmesan cheese and oregano. Finally drizzle the rest of the pizza sauce over the cheese layers. Then, top with the upper halves of the sliders.
