Roasted Cherry Tomatoes

Sweet Roasted Cherry Tomatoes are a delightful treat that every one will enjoy. Fresh Cherry tomatoes roasted until soft and juicy over a nice piece of toasted bread is a wonderful snack durning a light lunch or as an appetizer with a main entree. Delicious tasty and good to the last bite. This affordable and easy to make selection is perfect for beginners or as a personal treat to enhance a meals presentation.  Full of natural flavor and sweetness this is a budget friendly recipe. I will sometimes serve this as a side with my morning eggs and dip the toast in the sunny side up yolk. We enjoy this simple recipe pretty often and recommend you try it at least once to see for yourself how delicious it really is.

Preheat the oven to 400°F. In a baking dish: add cherry tomatoes, red onions, garlic, salt, pepper & olive oil.

Mix everything together.

Cook for 25-30 minutes or until the tomatoes are soft and beginning to burst. 

Optional: slice baguette or French bread. Coat both sides with olive oil. Broil in the oven for 1-2 minutes per/side.

Add roasted tomatoes on the toast. Drizzle with more olive oil. Season with salt & black pepper. 

Garnish with basil leaves. Serve with toast, as a side dish or appetizer. Enjoy!

Ingredients
  

  • 1 pint cherry tomatoes

      In a bowl: whisk eggs. Add flour, milk and a pinch of salt. Mix everything together. 

      Use a sifter or strainer (this will create a lump free batter). Pour the mixture through to a measuring cup.

      Then, place in the refrigerator for 20 minutes. 

      Preheat the oven to 425℉.  Add 1 tsp beef dripping (or lard, shortening, vegetable oil) to each Yorkshire pudding tray or muffin tin. Place them in the hot oven for 10 minutes (important: the fat should be smoking).

      Whisk the batter one more time. Then, divide the batter into 12 tins. Place the tin in the oven immediately.

      Bake for 20 minutes or until golden brown, puffed and crisp. 

      Do not open the oven door until the end or they will collapse.

      Best served immediately. Enjoy!

      Ingredients

        Clean, peel & grate the potatoes. Then place them in a bowl.

        Add salt, pepper, onion, garlic and combine everything together.

        Scoop ¼ cup grated potatoes and place them in the muffin tins.

        Gently press the potato hash on the bottom and work to form up sides making cups. Optional: Squeeze the potatoes to remove excess liquid.Preheat the oven to 400°F (218°C). Coat the muffin tin with olive oil cooking spray. Place muffin tins in the oven and bake for 15 minutes. 

        Remove the muffin pan (tin) and turn down the heat to 375°F (190°C). Highly recommended: Open the oven to let out the heat out. Add 1 egg to each muffin tin cup.

        Then bake for 10 minutes for runny yolk, 12 minutes for jammy or 14 minutes for a slightly hardened yolk.

        When ready, use a butter knife or fork to gently remove the muffins from the pans cups.

        Season with salt, black pepper, Parmesan cheese or fresh parsley.

        • 1 lb sweet potatoes peeled & shredded
        • 12 large eggs cold
        • ½ tsp salt
        • ½ tsp onion powder
        • ½ tsp black pepper
        • ½ tsp fresh thyme

        Instructions
         

        • Preheat the oven to 400°F (218°C). Coat the muffin tin with olive oil cooking spray.

          Clean, peel & cut sweet potatoes into cubes. Place potatoes in a pot. Add enough water to cover the potatoes (above 1″). Optional: add a pinch of salt to the pot.

          Bring the pot to a boil (uncovered). Then turn down the heat to medium and cook for 20-30 minutes or until the potatoes are fork tender.

          Drain potatoes. Place in a bowl. Add butter, salt & garlic then smash with a potato masher.

          Add milk & sour cream.

          Smash until smooth.

          Season with salt, cinnamon or black pepper if you prefer.

          Garnish with butter or sour cream. Enjoy!

            Rinse, drain and discard bruised cranberries. Fresh cranberries, crushed pineapples, sugar and water in a sauce pan or small pot.

            Mix well.

            Turn up the heat to medium-high and bring to a boil. Then, turn down the heat to medium. Cook for 10-12 minutes or until most of the cranberries have burst. Be sure to stir frequently. 

            Remove from heat source. Let cool completely to room temperature. The sauce will thicken as it cools. Then transfer to an airtight container to store for later use. 

            Refrigerate up to a week.

            Serve & enjoy when ready!
